GINGER PEACH CHUTNEY Chutney makes for a wonderful addition to many meats and dishes. Just as cranberry adds the right touch of sweetness to Thanksgiving turkey, this ginger peach chutney puts a twist on many of your favorite dishes. Excellent on roast duck, pork chops, and Indian food. INGREDIENTS: 4 cups diced fresh peaches ½ cup raisins 1 Tbsp. garlic paste ½ cup chopped onions 1 Tbsp. ginger paste 1 Tbsp. fresh ground ginger ½ tsp. cayenne pepper more ingredients...

GINGER PEACH CHUTNEY INGREDIENTS: (continued) ½ tsp. ground mustard 1 tsp. ground ginger powder ½ tsp. paprika ½ tsp. curry powder 1 cup packed brown sugar 1 cup apricot syrup ½ tsp. crushed red pepper ½ tsp. allspice ½ tsp. cinnamon ½ tsp. ground coriander DIRECTIONS: Mix all ingredients together. Cook in the CoolCooker for 8 hours at 200. Yield: 1 jar 30 calories per 1 Tbsp. serving ginger peach

SOUS-VIDE EGGS Sous-vide and eggs make for a perfect combination. Protein-packed breakfasts are a great way to get going in the morning, and sous-vide allows you to enjoy perfectly-cooked eggs with a smooth, velvety texture. Get it ready the night before, and enjoy a hot breakfast, ready when you wake up. INGREDIENTS: 2 eggs 2 Tbsp. milk 2 Tbsp. diced bell pepper 2 Tbsp. diced turkey breast Salt & pepper to taste

SOUS-VIDE EGGS DIRECTIONS: Mix all ingredients together and pour into a glass container, one with a tight lid. A glass jar with a lid, or a glass bowl with a tightfitting plastic top also works. Place into CookPot, and fill with water until close to the top of the glass container. The container does not have to be submerged. Cook in the CoolCooker for 4 hours at 200. Serves: 1 276 calories per serving protein-packed

BRIE & CRABMEAT TORTE Hosting a dinner party? What better way to start the evening than with a decadent brie and crabmeat torte. This dish takes only a few minutes to prepare, and it s perfect to set ahead of time so that it s ready to serve when your guests arrive. Easy to dress up with an artisan loaf of bread. INGREDIENTS: 3 8-oz. blocks of cream cheese, softened ½ cup heavy cream 3 eggs 7-oz. brie cheese, cut into small pieces 6-oz. crabmeat 1 cup cracker crumbs ¼ cup melted butter Crackers or toast points for serving

BRIE & CRABMEAT TORTE DIRECTIONS: Mix together the softened cream cheese, brie, cream, eggs, and crabmeat with an electric mixer. Spray the inside of the cook pot with nonstick spray, and line with a circle of parchment paper. Mix together the cracker crumbs and melted butter, and pack into the bottom of the cook pot. Pour the batter on top of this layer, and place into the CoolCooker. Cook for 6 hours at 200 and allow to cool. Shake cook pot to loosen the torte. Place a serving platter upside down over the cook pot and turn the whole thing over so it settles onto the platter. Serve as an appetizer with crackers or toast points. Serves 10 431 calories per serving brie and crabmeat

GINGER CHICKEN PAPAYA SOUP The Pohole Fern is entirely edible and may be eaten fresh or cooked. Snap off the bottom end as you would asparagus, then blanch to preserve color. Pohole Ferns pair extremely well with tomato and onion. Try adding to a stir fry at the last minute or add raw fern tops to a salad tossed with a light vinaigrette. Pohole Ferns are delicious served atop a pizza or flat bread, and make a great addition to omelets and frittatas. To clean, rinse lightly in water to remove any fine hairs on the ferns. They will keep refrigerated for a week.

GINGER CHICKEN PAPAYA SOUP INGREDIENTS: ½ lb. boneless chicken, cubed 1 cup shredded green papaya 1 cup Pohole Fern, also called Warabi. Alternatively, try spinach or collard greens 3 Tbsp. fish sauce, mushroomoyster sauce or oyster sauce 2 Tbsp. minced garlic 2 Tbsp. grated ginger 1 small sliced onion 4 cups chicken stock 1 Tbsp. salt 1 tsp. black pepper 1 tsp. honey Lime slices for garnish DIRECTIONS: Mix together all ingredients, except for the lime slices, in the cook pot. Cook in the CoolCooker for 4 hours at 200. Garnish with lime slices, squeeze over the soup when ready to eat. Serves 4 221 calories per serving chicken papya

TANGY BEEF BRISKET INGREDIENTS: 2 lbs. beef brisket 1 cup diced onion 1 Tbsp. garlic paste 1/2 tsp. paprika (regular or smoked) 1 tsp. kosher salt 1 tsp. garlic powder 1/2 tsp. black pepper 1/8 tsp. cayenne pepper 1 tsp. onion powder 1 Tbsp. Italian seasoning 1 cup beef broth 1/2 cup ketchup 1/2 cup chili sauce 1/2 cup brown sugar 1 Tbsp. yellow mustard (prepared) 4 Tbsp. cornstarch DIRECTIONS: Place beef brisket in the cook pot. Mix together the rest of the ingredients and pour over the brisket. Cook in the CoolCooker for 12 hours at 200. Using a knife and fork, pull apart the tender brisket and stir with the sauce. Serve on fresh rolls with coleslaw. Serves 6 398 calories per serving beef brisket

ROAST TURKEY WITH BACON & ROSEMARY This is the easiest turkey dinner you will ever make, and the rosemary and bacon add the flavor that turns this from your ordinary meat and potatoes fare into something exceptional. The potatoes will have roasted in turkey juices and bacon drippings tender and flavorful. The turkey breast remains tender and moist with the bacon fat and steaming inside the cook pot. INGREDIENTS: 2 lbs. turkey breast 4 slices uncooked bacon 2 sprigs fresh rosemary 1 lb. baby potatoes 2 Tbsp. melted butter

ROAST TURKEY WITH BACON & ROSEMARY DIRECTIONS: Pour the melted butter into the cook pot to coat the bottom, then place potatoes in. Wrap the bacon around the turkey breast and set inside the cook pot on top of the potatoes. Top with the rosemary sprigs. Serves 4 529 calories per serving Cook in the CoolCooker for 6 hours at 200. CREAMY CRAB-STUFFED PEPPERS The individual portions and color varieties of stuffed bell peppers make for an elegant presentation at any dinner. Filled with creamy crab and garnished with a mustard mayonnaise dressing, these are a fabulous main course that is sure to impress. INGREDIENTS: 3 bell peppers (different colors) 2 cans crab meat 4 oz. crackers, crushed (save 3 Tbsp. for garnish) 8 oz. softened cream cheese 1 packet Lipton onion soup mix 1 Tbsp. Old Bay Seasoning 1/2 tsp. black pepper 1/2 tsp. garlic flakes more ingredients...

CREAMY CRAB-STUFFED PEPPERS INGREDIENTS: (continued) 1/2 tsp. garlic powder 1/4 cup finely diced Vidalia onion 1/4 cup finely diced celery 2 Tbsp. chopped fresh parsley 1 Tbsp. chopped fresh dill 1 egg 2 Tbsp. mayonnaise 1 Tbsp. dijon mustard 1/2 tsp. tabasco sauce 1 Tbsp. Worcestershire sauce 1 Tbsp. melted butter Garnish: equal parts dijon mustard + mayonnaise DIRECTIONS: Cut the tops off the bell peppers and scoop out seeds and ribs. Mix together all ingredients and stuff each pepper. Place into cook pot and cook in CoolCooker for 6 hours at 200. Garnish each finished pepper with dijon mayonnaise and crushed crackers. Serves 3 723 calories per serving stuffed peppers

CHAI BANANA CAKE This cake is a delightful combination of flavors. The bananas keep it soft and moist, while the chai tea adds just a touch of spice. Macadamia nuts add crunch and a sophisticated edge to this crowd pleaser. Forego frosting, and top with either warm mango jam or whipped cream. INGREDIENTS: ¼ cup water 3 chai tea bags ¼ cup chopped Macadamia nuts or walnut pieces 1 1/2 cups all-purpose flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 tsp. ground cinnamon more ingredients...

CHAI BANANA CAKE INGREDIENTS: (continued) 3/4 cup granulated sugar 2 Tbsp. melted butter 2 large eggs 1 cup banana puree (2 medium bananas) 1/2 cup low-fat sour cream 1/2 tsp. vanilla extract Mango jam for topping DIRECTIONS: Steep 3 chai tea bags in ¼ cup of water for half an hour. Discard tea bags. Spray the inside of the cook pot with nonstick cooking spray, and line with a circle of parchment paper. Sprinkle the chopped nuts on the parchment paper. Mix the ingredients (except for the jam) together and pour batter into the cook pot on top of the chopped nuts. for about 15-20 minutes. Loosen the edges of the cake, and turn upside-down onto serving platter. Slice and serve as is, optional with melted mango jam, or with whipped cream and cinnamon. Serves 8 288 calories per serving Cook in the CoolCooker for 4 hours at 200. Remove cook pot from the CoolCooker and let cool chai banana
