30 Minute Meal Four-Cheese Pasta with Peas and Ham -Groundhog Day is a German superstition. It s celebrated on February 2nd (the Christian holiday of Candlemas). The Germans believed if a shadow appeared winter will continue for six weeks. Punxsutawney Phil did not see his shadow this year which means an early spring! No matter how long the winter, spring is sure to follow. -English Proverb -The month of February is Black History month which is celebrated in both the United States and Canada. -February 22nd is George Washington s birthday. February 12th is Abraham Lincoln s birthday. -Amethyst is the birthstone for February. -February 7th, 1964 the Beatles first arrived in the United States. Ingredients: -kosher salt -12 ounces Penne pasta -1 cup frozen peas -2 large eggs, plus 1 egg white -1 cup evaporated milk -4 tablespoons unsalted butter -3 ounces sharp cheddar cheese, grated -3 ounces part-skim mozzarella cheese, grated -3 ounces fontina cheese, grated -3 ounces deli ham, diced -1 ounce parmesan cheese, grated 1. First, boil a large pot of water. Add pasta to boiled water and cook until its al dente (about eight minutes). Add the peas during the last two minutes of cooking. 2. In a separate bowl, whisk the eggs and egg whites, then add evaporated milk, ½ teaspoon of salt and mix together. 3. Drain the peas and pasta then wipe the pot dry. Return peas and pasta to pot and mix in butter. 4. Add the cheddar, mozzarella, fontina, and egg mixture into the pot. 5. Place the pot on medium-low heat and stir constantly for about eight to ten minutes. 6. At around 4-5 minutes add ham to the pot. Be cautious to not let the mixture boil, or it will cause the eggs to scramble. 7. Turn off heat and add the parmesan to the pot. Enjoy! Recipe courtesy of Food Network

The ladies of Progressive took on NYC for Ladies Night on Friday, January 30th. The ladies enjoyed a delicious three-course meal overlooking Times Square and did some sight-seeing before seeing Wayne Brady In Kinky Boots. Super Bowl 2016 Denver Broncos Vs. Carolina Panthers Very funny and entertaining. I got a kick out of it. Cindy S. It was an awesome show. Diane M. Wayne Brady did a fabulous job. Alicia K. Super Bowl 50 was a match-up between two strong defenses. Denver s defense got the best of Cam Newton sacking him seven times and causing two fumbles. Denver s offense was able to capitalize on those two turn-overs turning them into points. In what might be his last game Peyton Manning didn t score any touch downs but came out on top. Denver won the game 24-10! Denver s Von Miller was named Super Bowl MVP with 2.5 sacks. Go Broncos!
