Page 2 Terlingua Trails March 2013 TERLINGUA TRAILS Editor & Publisher: Randy Duke PO Box 173 Valley Mills,TX 76689 Home (254) 932-6787, Cell (254) 405-4333 E-mail: randyduke37@yahoo.com Printer: Kerrville Daily Times - Kerrville, Texas From the President What is a team? A team is a group of people working together to win a contest or game. On the team, there can be differing assignments like a football team. On other teams, such as bowling, each player s assignment is the same - score high. The CASI Board is a team. We share traits of both the above types of teams. Each director has differing specific assignments and yet our primary assignment is the same to make CASI better. With the recent resignation, there is an opening to be filled. As of writing this article, already two well qualified candidates have entered the race. As with each election, whether at the Great Peppers Meeting or in a special election such as this one, each person that has the time, energy and experience to serve on the Board is a good candidate to run. Think about it and put your hat into the ring if you feel you can be a productive member of the team. Speaking of team, we need the entire CASI Team to participate in the scholarship fund raising program that is going on now the Casa Fiesta products purchase program. We all have to eat and choosing to buy some Casa Fiesta products will help support our very own National Scholarship Program. Please buy them at your local grocery and if not available, ask for them by name. It s a win-win program for CASI. I do know that the Pasadena Pod has named their bean contest the Casa Fiesta Bean Contest and will give a discount for entering when a receipt for Casa Fiesta beans is submitted. Get creative, let s win for the students. CASI INSURANCE To get a certificate (proof of insurance) for your cookoff, please contact Richard Knight Phone: 615-449-6676; Cell: 615-480-4024 Email: casichilied@gmail.com ED'S REFLECTIONS Information from CASI s Executive Director, Richard Knight www.casichilied.blogspot.com CASI members, please check your personal information in the CASI Information System. Corrections and additions should be sent to Richard Knight at casichilied@gmail.com UPCOMING COOKOFFS Lee Kroencke - CASI Upcomings P.O. Box 15239 Lenexa, KS 66285-5239 913-754-6074 lee.kroencke@gmail.com COOKOFF RESULTS Please send all CCO results along with entry sheets and money to: Jenny Windsor TallyMaster 390 South Drive Severna Park, MD 21146 Ed Blair Reflections from the ED Spring is in the Air...We start off March with the National Peanut Butter Lover s Day, somewhere in the middle we will drink some St. Patti s green beer, celebrate the first day of Spring, and end the month hunting for some Easter eggs. But March also starts a CASI event created by a vacancy on your Board of Directors. A special election process will occur through March and April to fill the vacant position on the Board. As the CASI Bylaws only allow 60 days for this election to be concluded, to the extent practical, electronic communications will be used. Should any Great Pepper need the information mailed, we will of course do so. Potential candidates should contact Richard Knight, Executive Director, to obtain the application; which will also be available on the www.casichili.net website in the Announcement tab. Applications must be submitted to arrive by March 3rd. Applications will be reviewed by the Nominations Committee and a package will be distributed (email) to each Great Pepper and Board Member. The Great Peppers will discuss the candidates with their respective Pod and the deadline to vote is April 5th. Given the current state of the snail mail system, while paper ballots will be accepted, email voting to the Executive Director, copy to the President, is preferred. The results of the vote are scheduled to be announced on April 9th. Late received ballots or no ballots from voting delegates will be considered abstentions. The election time table is scheduled as: 1) Monday, Feb 11: Announce vacant position and election process, 2) Monday, Mar 3: Deadline for applications for nomination, 3) Friday, Mar 8: Nomination committee announces candidates and package is emailed to GPs with ballots, 4) Deadline for ballots to be returned to Executive Director, with cc to President, 5) Announcements of results of vote and your new CASI director. Vince Lombardi said, The strength of the group is the strength of the leaders. With the election of a new team member, it is the opportunity for the CASI Board to pull together and meet the challenges of the future. The end of March also marks the halftime of the CASI chili cooking season. I hope everyone has at least half of the points that they are searching for, if not, then join us in the second half for some Chili.Charity.and..Fun!!! Richard Knight CASI Executive Dirctor

Page 14 Terlingua Trails March 2013 SHOWMANSHIP MATTERS! Howdy, y all We have a really good question this month, so I ll just get right to it. Q: I am concerned about fresh food being given out at show in Terlingua. Many years ago another team did something Gumbo...and I haven t kept tabs on others that have done it. My concern is if something is bad (nothing we want) but what would CASI do if a food poisoning happened? A: I didn t find anything in the official CASI Rules or Procedures that seemed to apply here, so I referred your question to Richard Knight, our CASI Executive Director, who then consulted with the Rules Committee. Here is his response: It is the consensus of the rules committee that there is nothing in the current rules to prohibit a show team from giving food samples as part of their show; except if was rum cake, then the alcohol rule might be brought into play. But I see no reason that we could not suggest that show teams must prepare any give away food items in the most sanitary way possible and must take steps to abide by the local health ordinances to protect the general public. CASI is covered under our current liability policies. Thanks so much to Mr. Knight and the members of the Rules Committee for their prompt and thoughtful reply. Giving away food is a time-honored tradition among Showmanship teams. After all, we are chasing after those audiences for their participation, and how much easier is it to get them to come to us with an enticing aroma and the promise of FREE FOOD! And a bunch of people standing around your show, eating chili or chicken drumsticks, or brownies, or whatever your specialty is definitely qualifies in my book as both action and audience appeal. And yes, it is vital that we try to be as clean and sanitary as possible when feeding the public. Well, we don t want to poison our family and friends, either, do we? Or do we? Well, that s probably another column. So, to recap: No lewdness, obscenity, or rum cake. And wash your hands! Thanks again for all your great questions, and keep em coming. And wear your funny hat. SCHOLARSHIP PROGRAM Gosh, this month I do not know if I am coming or going! What a busy time in all my activities! I now manage an H & R Block office and it is the middle of our heaviest season and it is Scholarship Time. I was impressed that twenty pods took the time to spread the word about our scholarship. We received 115 applications. I looked over each one, stapled them in some order and took them to the local printer. They are now on their way to my committee for their review. If you see someone on the committee thank them for their work. Reading 115 applications and ranking their top 10 could be difficult! I have also been very busy recording all the donations and memorials coming in daily. We have had quite a few in the last couple of months. I do want to send Kudos out to Ken Rodd and Candi Arevalo. Together they sent in 19 applications from the state of Florida. Ken attended a cookoff in Florida and visited with the local high school. Thanks again to all the Great Peppers who made the effort. Page 16 Terlingua Trails March 2013 The weatherman predicted cloudy in the morning and a sunny to partly cloudy afternoon. Wrong. It drizzled/misted most of the day but this did not deter 117 hard core cooks from cooking and turning in their prized entries to the judges at the 4TH ANNUAL U. S. NATIONAL OPEN CHILI CHAMPIONSHIP in Buda, Texas. Once again, Cabela s was our great host. Many spectators wandered through the RVs, popups, canopies and pickup truck cooking sites. Some knew about the cook-off and others were surprised at what was happening. Many stayed to help with the judging process which was completed in record time by head judge Janie Burruss and crew. The rest of the Board of Directors for this cook-off consists of Robert & Connie Schrade, Cindy & Roger Patteson, Butch & Kathie Cielencki and Larry Burruss. The winners were announced with the top 3 cooks and 1 st place show automatically qualifying. They were Ron Baker, 1st; Samuel Roberts, 2nd; Deborah Benefield, 3rd; and South Side Foggy Mountain, 1st Place Showmanship. Net proceeds from the event, over $2,500.00, will go to the Wounded Warriors Project. Many thanks to Cabela s, the cooks and all who helped monitor tables, run drinks and tally judging sheets, etc. The event would not be possible without your professional and expert assistance. We hope you will mark your calendar s to attend the 2014 U. S. National Open Chili Championship in February. Janie Burruss Capping off several days of rain the 4-Day St. Jude Auction encountered a run of beautiful, warm, sunny and partly cloudy weather which was the perfect environment for a key activity the 2013 LOUISIANA STATE CHAMPIONSHIP AND 22ND ANNUAL ST. JUDE CHILI COOK OFF. Ninety-one cooks (91) competed in Minden, LA! We had the largest crowds ever as over 1,200 folks milled around outside! We sold nearly 400 Tasting Cups and made $1,800 from that alone. We sold almost 250 bowls of chili inside the Civic Center during the Saturday Auction. Donations from our Platinum Sponsors Aaron s (thank you Tony Jones and Veronica Rios)and LR s Sweets and Treats(Luke Richie) ($1,000/ each), from our Gold Sponsors ($500/each) East Texas Chili Pod (David Trice) and Minden Medical Center, and rom our Bronze Sponsor Snap-On Tools ($200) (Big John Oswalt)helped swell our total contribution of $7,018 we raised for St. Jude Childrens Research Hospital a new record for our State Championship CCO. Our Goody Bags were better because of the contributions from Bruce Foods (Janice Routon) and Mild Bill s Spices (Kelly and Gary Brignon) We were a vital contributor in the world famous 2013 auction. In addition to the crowds, the Bayou Magic Band, Elvis Presley, (11) Show Teams and the festive and creative booths we welcomed our National president, Ed Blair, and several World Champions and it was out pleasure to welcome our current 2012 Champion, T. J. Cannon ably assisted by Tom Dozier. Randy Moore, Bo Prewitt and Jerry Hunt were some of the other chili royalty in attendance. Minden, LA (Population 13,000+) currently possesses the title of the # 1 fundraising community PER CAPITA in the W-O- R-L-D for St. Jude s and it happened again! Page 18 Terlingua Trails March 2013 Cooking With CASI Greetings! Once again I would like to personally thank all of you involved in organizing and conducting CASI sanctioned cookoffs. Your hard work and dedication is greatly appreciated and because of you CASI continues to bring on new promoters, judges, cooks, and members. We continue getting positive feedback regarding the www.casichili.net website and calendar. You can view scheduled cookoffs and even click on a map directing you to the location. If you have not yet been to the website go online and check it out. If you have a Cookoff you would like to schedule for May 2013 your cookoff must be submitted for approval no later than March 15th. Thanks to all of you for planning early and getting your cookoffs submitted. Also if you are emailing information regarding an upcoming cookoff, the email address is casicookoffs@gmail.com According to CASI Rules all CASI cookoffs must be advertised in the Terlingua Trails before the cookoff takes place in order to be sanctioned. You run a risk of not being sanctioned if you submit your cookoff for approval during the month before your cookoff. if it is after the 15th of the month... And as we discussed in last month s Trails, more and more Pods are printing their own forms which is a convenience for you and saves CASI postage. A majority of the Great Peppers took cup tickets for the year with them at the Great Peppers Meeting. Once again, thanks to all of you who already have your cup tickets. For those folks who do not have tickets and are expecting a packet the packets are mailed out the first week of the previous month. This is due to an increasing number of lost packets and duplicate requests. So do not be alarmed if you have submitted a cookoff but have not received a packet. March Packets will be mailed the first week of February, and so on. If you have an exception and need your tickets earlier feel free to email a special request and we will get your packet in the mail earlier. It is truly an honor and a privilege to serve as one of your Directors and best wishes for a successful cookoff! Lee Kroencke Mar 2, 2013-001 - Horn Lake MS CASI. To help you advertise your pod cookoff we allow each pod to place one quarter page ad in the Terlingua Trails, each year, free of charge. This ad should run the month before your cookoff occurs. Should you decide that you need an ad larger than a quarter page we will simply bill you for the difference in price. This ad should not be confused with the article advertising your cookoff in the "Cooking with CASI Calendar" section in the Terlingua Trails. That article will start to run as soon as you request your cookoff packet and will run until your cookoff occurs.
