To watch them show you how to make these recipes, visit our YouTube Cooking Class channel: youtube.com/downtoearthhawaii For more holiday recipes, check out the recipe page on our website: downtoearth.org Pumpkin Cauliflower Gratin This simple vegan casserole uses hemp milk and herbs for a comforting, warming dish. 4 cups cubed kabocha pumpkin 2 cups chopped cauliflower ¼ cup thinly sliced red onions 4 cloves garlic, chopped 1 Tablespoon olive oil 1 teaspoon tamari or soy sauce 1 cup unsweetened hemp milk ½ teaspoon each: dried thyme and black pepper 1 Tablespoon potato starch or cornstarch ½ cup chopped fresh basil 1. Preheat oven to 400º. Arrange kabocha, cauliflower, red onion and garlic in a 9"x13" baking dish. 2. Drizzle olive oil and tamari onto vegetables, and toss to coat. Bake for 30 minutes, or until pumpkin is fork-tender. 3. Meanwhile, mix hemp milk, thyme, pepper and starch in a small bowl. Stir to dissolve the starch. 4. When vegetables are finished cooking, pour hemp milk mixture over the vegetables and toss to coat. Add fresh basil. 5. Bake for another 10 minutes. Stir gently, and let stand a few minutes before serving. Enjoy! Yields 2-4 Servings Raw Black Forest Cake Cake 2½ cups raw almonds 2 cups raw cashews, soaked 1-4 hours 1 cup macadamia nuts, soaked 1-4 hours 1 lemon, juiced 1/3 cup raw cacao powder 2 Tablespoons chia seeds ¾ cup raw agave nectar ¾ cup fresh cherries, pitted 1 cup raw coconut oil 1 teaspoon vanilla extract or ½ teaspoon raw vanilla powder (optional) 1 teaspoon almond extract (optional) Chocolate Frosting 1 avocado, seeded and peeled 1/3 cup dates, pitted 1 Tablespoon vanilla extract or 1½ teaspoons raw vanilla powder (optional) ½ cup raw agave nectar ½ cup raw coconut butter ½ cup raw cacao powder Pinch sea salt Topping ¼ cup raw cacao powder 3 dates, pitted, soaked 1-2 hours and finely diced ½ cup grated raw chocolate Fresh cherries, to garnish 1. Prepare Cake: Place almonds in a food processor and pulse into a fine powder. Sprinkle a small amount into a spring form pan. 2. Divide almond meal. Set aside one half for later use. Combine remaining almond meal with remaining Cake ingredients in a food processor. Process until smooth and creamy. Pour evenly into spring form pan. Place cake in freezer until solid overnight is recommended. 3. About an hour before serving, remove Cake from freezer and let sit at room temperature. 4. Meanwhile, combine all Frosting ingredients in a food processor and process until smooth. Transfer to a small bowl and set aside. 5. Prepare Topping: Combine reserved almond meal, cacao powder, dates, and grated chocolate in a mixing bowl. Crush with your hands until crumbly. 6. Release cake from spring form pan and transfer to a large serving platter. Use a rubber spatula to frost cake with prepared Frosting. Sprinkle Topping all over and garnish with cherries. Enjoy! Yields 10-12 Servings Baked Butternut Squash Risotto We know you ve got a marathon of cooking ahead of you this season so why not try this mostly hands-off risotto that ll cook itself while you prepare all your other holiday dishes? 1 butternut squash, halved and de-seeded ¼ cup extra virgin olive oil + 3 Tablespoons Salt and pepper, to taste ½ cup diced onion 2 cloves garlic, minced ¾ cup Arborio rice ½ cup mirin 2½ cups vegetable broth ½ cup Parmesan cheese or nutritional yeast + more to garnish 1 Tablespoon Italian seasoning + more to garnish 1. Preheat oven to 400. 2. Crosshatch butternut squash with a paring knife into 1 wide scores. Drizzle olive oil over squash halves cut side up. Season with salt and pepper. Rub oil mixture into squash. Place squash cut side down into a baking pan. Bake for 30 minutes. Remove from heat and set aside until cool enough to touch. Carefully scoop out squash flesh into a bowl without breaking the squash shells. Set aside shells. 3. While squash is baking, heat 3 Tablespoons olive oil in a large skillet over medium heat. 4. Stir in onions and sauté for 3-5 minutes or until translucent. Add in garlic and season with salt and pepper. Cook for 1-2 minutes or until fragrant. 5. Add in Arborio rice and toss to coat rice with oil mixture. 6. Pour in mirin and stir until liquid is absorbed. 7. Add in vegetable broth and bring to a boil. Turn heat off. Stir in squash, Parmesan or nutritional yeast and Italian seasoning. Pour entire mixture into an 8 x8 baking dish. 8. Bake for 30-40 minutes or until rice is tender and most of the liquid is absorbed. 9. Scoop risotto into squash shells for a nice presentation and scoop the remaining risotto in a serving bowl. Sprinkle Parmesan or nutritional yeast and Italian seasonings before serving. Happy Holidays! Yields 4-6 Servings Raw Cranberry Relish 3½ cups fresh cranberries Zest of 1 orange Juice of 1 orange 1 green apple, cored and quartered ¼ cup raw agave nectar 1 cup dates, soaked for 20 minutes ½ teaspoon cinnamon Pinch of ground cloves Pinch of salt 1. Place all ingredients in a food processor and process until a chunky consistency is achieved. Serve as a side in place of your traditional holiday cranberry sauce. Enjoy! Yields 6-8 Servings
