DAY 1 SMALLER FAMILY- EASY HOMEMADE LASAGNA M A I N D I S H Serves: 4 Prep Time: 30 Minutes Cook Time: 1 Hour 1/2 pound ground Italian sausage 1/2 onion (chopped) 1/2 (4.5 ounce) can sliced mushrooms 1/2 (28 ounce) jar spaghetti sauce 1/2 (16 ounce) container cottage cheese 1/2 pint ricotta cheese 1/8 cup grated parmesan cheese 1 egg 1/2 (16 ounce) package lasagna noodles 1 cup shredded mozzarella cheese 1. Preheat oven to 350 degrees F. 2. In a large skillet, cook and stir Italian sausage until brown. 3. Add mushrooms and onions; saute until onions are clear. 4. Stir in spaghetti sauce, and heat through. 5. In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and egg. 6. Spread a thin layer of the meat sauce in the bottom of a 9x9 inch pan. 7. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. 8. Cover pan with aluminum foil. 9. Bake in preheated oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese. 10. Bake for an additional 15 minutes. 11. Remove from oven, and let stand 10 to 15 minutes before serving.
SMALLER FAMILY- PIZOOKIE D E S S E R T Serves: 4 Prep Time: 10 Minutes Cook Time: 10 Minutes 1/2 cup unsalted butter (softened) 1/3 cup granulated sugar 1/3 cup packed brown sugar 1/2 Tablespoon vanilla extract 1 large egg 1 2/3 cups all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup milk chocolate chips 3-4 scoops chocolate chip ice cream chocolate sauce (for topping) 1. Preheat oven to 350 degrees F. 2. In a medium bowl, mix together butter and sugars until combined. Add in vanilla and egg. Slowly stir in the flour, baking soda and salt, then fold in chocolate chips. 3. Press the cookie dough mixture into the bottom of an 8 inch cast iron skillet. 4. Bake for 8-10 minutes (it will be gooey and under done). 5. Pull out of the oven and top with ice cream, then drizzle with chocolate sauce. Serve while still warm.
DAY 2 SMALLER FAMILY- SESAME ASIAN STEAK SKEWERS M A I N D I S H Serves: 4 Prep Time: 1 Hour 10 Minutes Cook Time: 7 Minutes 3 pounds steak 3/4 cup soy sauce 1/4 cup apple cider vinegar 1/4 cup honey 1/4 cup canola oil 1 teaspoon minced garlic 1/4 cup water 1 bunch green onion (thinly sliced) 1 large red bell pepper (sliced into bite-size pieces) 1 red onion (sliced into bite-size pieces) 1 teaspoon sesame seeds (for garnish, optional) 1. Cut the steak into bite size pieces and set aside. 2. In a bowl combine the soy sauce, apple cider vinegar, honey, canola oil, minced garlic, water and 3/4 of the sliced green onions. 3. Whisk until all the ingredients are combined, then add the steak pieces. 4. Let the steak marinate for at least an hour. We prefer to let it marinate over night. 5. If using wooden skewers, before sliding on your steak and vegetables, be sure the skewers soak in cold water for 20-30 minutes to avoid burning or breaking. 6. Slide your steak pieces, red onion and red pepper slices onto the skewers, leaving about and inch and a half on each end for rotating on the grill. 7. Place your skewers on the grill (pre-heated to about 300 degrees F) and rotate them every one to two minutes until they have reached your desired meat preference. 8. Remove from grill and garnish with the 1/4 of preserved green onions and the sesame seeds. 9. Serve warm.
DAY 3 SMALLER FAMILY BLACKENED SALMON TACOS M A I N D I S H Serves: 4 Prep Time: 25 Minutes Cook Time: 10 Minutes Salmon: 2 Tablespoons canola oil 2 Tablespoons flour 2 teaspoons chili powder 2 teaspoons brown sugar 1/2 teaspoon onion powder 1/2 teaspoon garlic powder 1/2 teaspoon cumin 1/2 teaspoon salt 1/2 teaspoon black pepper 1 pound salmon Avocado Salsa: 1 ripe avocado (diced) 1 ear of corn (cut off kernels to use) 1 tomato (diced) 1/4 cup red onion, diced 2 Tablespoons cilantro (chopped) 1/2 lime (for Juice) salt and pepper (to taste) Cilantro Ranch Dressing: 1/4 cup Greek yogurt 2 Tablespoons mayonnaise 2 Tablespoons buttermilk 1/2 lime (for Juice) 1 teaspoon minced garlic 2 Tablespoons green onions (sliced) 1/4 cup cilantro (chopped) salt and pepper (to taste) Tortillas (for serving) Salmon: 1. Heat the oil in a skillet over medium-high heat. 2. In a bowl, stir together the flour, chili powder, brown sugar, onion powder, garlic powder, cumin, salt and pepper. Combine remaining salmon ingredients and rub on the outside of the salmon. 3. Place salmon in hot skillet. 4. Cook about 5 minutes per side, or until coating is blackened and forms a nice crust and salmon is cooked through. 5. Flake with fork after it is cooked;set aside. Avocado Salsa: 6. In a bowl, mix together the avocado, corn, tomato, red onion, cilantro, lime, salt and pepper. Refrigerate until ready to serve. Cilantro Ranch Dressing: 7. Add yogurt, mayo, buttermilk, lime, garlic, green onions, cilantro, salt and pepper to a food processor. Blend until smooth. Add more buttermilk as needed until desired consistency is reached. 8. Refrigerate until ready to serve. 9. Serve blackened salmon on a warm tortilla and top with salsa and dressing.
DAY 4 SMALLER FAMILY- THE BEST HAMBURGERS AND FAMOUS SECRET SAUCE M A I N D I S H Serves: 5 Prep Time: 10 Minutes Cook Time: 12 Minutes Burger: 1 pound ground beef 1/2 cup Monterrey jack cheese (grated) 1/4 cup BBQ sauce Seasoned salt (to taste) Black pepper (to taste) Onion powder (to taste) 5 sesame seed buns Secret Sauce: 3/4 cup mayo 1/4 cup ketchup 1/4 cup relish 2 Tablespoons Worcestershire sauce Seasoned salt (to taste) 1. In a large bowl, combine the ground beef, grated cheese, bbq sauce, and seasonings. 2. Shape patties that are about 1 inch thick (about 5 patties). 3. Turn grill up to high and let it get hot. 4. Reduce heat to medium-high and place the burgers on the grill. Allow this side of the patty to cook for about 4-6 minutes, but make sure it does not burn. Then flip the burger over and cook until done. For the sauce: 5. Combine all sauce ingredients and whisk until well mixed. Taste and adjust ingredients to your liking. 6. Assemble the burgers and serve with the special sauce and other hamburger toppings of choice.
SMALLER FAMILY- RED POTATO SALAD S I D E D I S H Serves: 4-6 Prep Time: 3 Hours 10 Minutes Cook Time: 15 Minutes 1/2 cup mayonnaise 1/4 cup plain yogurt 1 tablespoon dijon mustard 1 teaspoon garlic salt 1 tablespoon olive oil 1 tablespoon apple cider vinegar Pinch of pepper 2 1/2 lbs red potatoes (cut into small wedges) 1/2 sweet onion (chopped very finely) 2 tablespoons fresh dill 1. In a large bowl, mix together mayonnaise, yogurt, dijon mustard, garlic salt, olive oil, vinegar, and pepper until completely combined to make a dressing. 2. In a large pot, place potato wedges and cover with water. Cook over medium-high heat until tender (about 10-15 minutes depending on the size of the chunks). 3. Once potatoes are tender, drain and add to the large bowl of dressing. Toss to coat. 4. Mix in sweet onion and dill. You can serve it warm, or refrigerate for 2-3 hours and serve cold.
DAY 5 SMALLER FAMILY CHICKEN CORDON BLEU GRILLED SANDWICH M A I N D I S H Serves: 3 Prep Time: 5 Minutes Cook Time: 6 Minutes 6 slices of French Bread 4 Tablespoons butter 6 slices swiss cheese 12 ounces cooked chicken breast strips 6 slices deli ham Honey Mustard Sauce: 1 tablespoon yellow mustard 1 tablespoon dijon mustard 1/4 cup honey 1/2 tablespoon lemon juice 1/8 teaspoon onion powder 1/3 cup mayonnaise Sandwich: 1. Spread desired amount of honey mustard sauce on one slice of bread. 2. Then add cooked chicken strips, 2 ham slices, and 2 slices of swiss cheese. 3. Top with the other slice of bread. 4. Butter the top of the sandwich and place buttered side down on a heated skillet or griddle. 5. While cooking, butter the slice of bread that is facing up. 6. Cook about 3 minutes on each side or until bread is golden brown and the cheese starts to melt. Honey Mustard Sauce: 7. Mix all the honey mustard sauce ingredients together until well blended.
SMALLER FAMILY- HOMEMADE LEMON BARS D E S S E R T Serves: 12 Prep Time: 15 Minutes Cook Time: 40 Minutes Crust: 1/2 cup butter, softened 1/4 cup sugar 1 cup flour 1/8 teaspoon salt Filling: 1 1/2 cups sugar 3 large eggs (beaten) 1 lemon (for zest) 1/2 cup lemon juice, (fresh or bottled) 1/2 cup flour Topping: 1/4 cup powdered sugar 1. Heat oven to 350 degrees F. 2. Spray a 9x9 -inch baking pan with nonstick cooking spray. 3. Cream together softened butter and sugar in a large mixing bowl. Add flour and salt and mix until blended. Press into the bottom of prepared pan and bake for 15 minutes. 4. While crust is cooking, make filling by mixing together sugar, eggs, lemon zest, lemon juice, and flour. Pour filling over hot crust and bake for about 25-30 minutes or until set. 5. Remove from oven and dust with powdered sugar. 6. Cool completely and cut into squares.
DAY 7 SMALLER FAMILY- EASY GROUND TURKEY MEATLOAF M A I N D I S H Serves: 3-4 Prep Time: 10 Minutes Cook Time: 1 Hour 30 Minutes 1/2 pound ground turkey 1 egg 1/2 bunch green onions 1/2 cup oatmeal 1/8 cup ketchup 1/4 teaspoon salt 1/4 teaspoon pepper 1/2 (10.75 ounce) can tomato soup (divided) 1 Tablespoon Worcestershire sauce (divided) 1 Tablespoon brown sugar 1. Preheat oven to 350 degrees F. 2. In a large mixing bowl, combine ground turkey, egg, onion, oatmeal, ketchup, salt and pepper, 1/4 can of soup, and 1/2 Tablespoon of Worcestershire sauce. 3. Press mixture into a small bread pan sprayed with nonstick cooking spray. 4. In a separate bowl, combine brown sugar, 1/2 Tablespoon Worcestershire sauce, and a 1/4 can tomato soup and pour over top of loaf. 5. Bake for 90 minutes.
SMALLER FAMILY- SLOW COOKER MUSHROOMS S I D E D I S H Serves: 4-6 Prep Time: 5 Minutes Cook Time: 1 Hour 30 Minutes 1 (16 ounce) container baby bella mushrooms (rinsed) 2 teaspoons minced garlic 2 Tablespoons thyme 1 bay leaf 1/2 cup beef broth chopped fresh parsley (for garnish) 1. Place mushrooms, garlic, thyme, bay leaf, and beef broth in a slow cooker. Gently stir to distribute all ingredients evenly. 2. Cook on low for 3 hours, or on high for 1 1/2. 3. Top with fresh parsley and serve warm.
