DAY 1 SMALLER FAMILY - OLIVE GARDEN GRILLED CHICKEN FLATBREAD PIZZA M A I N D I S H Serves: 4 Prep Time: 10 Minutes Cook Time: 17 Minutes 4 (6-8 inch) flat breads 1 cup Alfredo sauce 2 cups shredded mozzarella cheese 2 chicken breasts (grilled) 1 red pepper (sliced and roasted) 1 Roma tomato (diced) 3 green onions (thinly sliced) 1. Preheat oven to 350. Place the flat bread on a large baking sheet. 2. Spread Alfredo sauce on each flatbread, then top with cheese, chicken, roasted peppers, tomatoes, and green onions. 3. Place in the oven and cook for 5-7 minutes (or until cheese melts). To roast peppers: 4. Preheat the broiler on your oven to the high setting. 5. Slice your red pepper and lightly coat with olive oil. 6. Line a baking sheet with foil and lay your pepper slices in a single layer on the sheet. 7. Roast peppers under the broiler until the skin starts to turn dark (about 4-5 minutes- watch carefully so they don't totally burn!). 8. You can peel off the blackened skin if you want, but I like the flavor that it adds.
SMALLER FAMILY CAKE MIX CHRISTMAS COOKIES D E S S E R T Serves: 4 Prep Time: 15 Minutes Cook Time: 10 Minutes 1/2 (15.25 ounce) chocolate cake mix (you could also use Devil's Food) 2 Tablespoons vegetable oil 1/2 teaspoon vanilla 1 large egg 1/2 cup mini M&M's candies 1. Preheat oven to 350 degrees. 2. In a large bowl, mix together dry cake mix (don't prepare it as called for on the back of the box), vegetable oil, and eggs. The dough will be very thick. 3. Fold in the M and M candies. 4. Roll the dough into 1" balls and place on an ungreased cookie sheet. 5. Bake for 9-11 minutes and remove from oven. Let cookies cool for 2-3 minutes on the cookie sheet, then move them to a wire rack to finish cooling.
DAY 2 SMALLER FAMILY FIVE INGREDIENT RAVIOLI LASAGNA M A I N D I S H Serves: 4 Prep Time: 10 Minutes Cook Time: 40 Minutes 3/4 (24 ounce) jar pasta sauce 3/4 (25 ounce) package frozen ravioli 1 cup shredded mozzarella cheese 1/3 cup shredded parmesan cheese 1/2 Tablespoon chopped fresh basil (for topping) 1. Heat the oven to 375 degrees. 2. Spray a 9x9 baking pan with cooking spray. 3. Pour 1/3 of the pasta sauce in the bottom of the pan. 4. Top with half the ravioli, another third of the pasta sauce, and half the mozzarella cheese. 5. Repeat layers, then top with shredded parmesan cheese. 6. Cover the pan and bake for 30 minutes. 7. After 30 minutes, remove lasagna from the oven, remove the foil, and bake for an additional 10 minutes, or until cheese is melted. 8. Sprinkle with chopped fresh basil and serve warm.
SMALLER FAMILY CHEESY PULL APART BISCUITS S I D E D I S H Serves: 4 Prep Time: 5 Minutes Cook Time: 14 Minutes 1/2 (16 ounce) tube biscuit dough 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1 1/2 Tablespoons olive oil 3/4 cup shredded cheddar cheese 3/4 Tablespoons fresh parsley (chopped) 1/4 Tablespoon grated Parmesan cheese 1. Heat oven to 350 degrees. 2. Spray a 12 count muffin tin with non stick cooking spray. 3. Cut each circular biscuit into fourths and place them in a large mixing bowl. 4. Add in the garlic powder, onion powder, olive oil, cheese, and parsley. Mix together until combined. 5. Place 3-4 pieces of biscuit into each muffin cup. 6. Sprinkle with Parmesan cheese 7. Bake for 11-14 minutes or until biscuits are golden.
DAY 3 SMALLER FAMILY - GROUND BEEF TOSTADAS M A I N D I S H Serves: 3-4 Prep Time: 5 Minutes Cook Time: 10 Minutes 3/4 pound lean ground beef 3/4 (15 ounce) can pinto beans (drained and rinsed) 3/4 cup chunky salsa 1/4 teaspoon chili powder 1/4 teaspoon cumin 6-8 tostadas 1 1/2 cups shredded lettuce 1 Roma tomato (diced) 1/3 cup sour cream 1/2 cup shredded Mexican Cheese 1 Tablespoon cilantro 1. In a large skillet, brown ground beef. Drain any excess grease. 2. Add pinto beans, salsa, chili powder, and cumin to ground beef and stir until heated through. 3. Top each tostada with ground beef mixture, lettuce, tomatoes, sour cream, cheese, and cilantro and serve.
DAY 4 SMALLER FAMILY- CHEESY PARMESAN BACON CHICKEN M A I N D I S H Serves: 3-4 Prep Time: 15 Minutes Cook Time: 32 Minutes 1 egg (beaten) 1 Tablespoon water 3/4 cup grated Parmesan cheese 1/4 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon garlic powder 3 boneless skinless chicken breasts 1 cup shredded mozzarella cheese 3 slices bacon (cooked and crumbled) 1. Heat oven to 350 degrees F. 2. In a mixing bowl mix together the egg and water. Set aside. 3. In another mixing bowl combine the Parmesan cheese, salt, pepper, and garlic powder. 4. Dip each chicken breast into the egg mixture and then into the cheese mixture. 5. Place in a greased 9 x 13 inch baking dish. 6. Bake for 25-30 minutes or until juices run clear and chicken is cooked through. 7. Remove from oven and turn oven to broil. 8. Top each chicken breast with mozzarella cheese and bacon. 9. Broil for 1 to 1 1/2 minutes to melt cheese.
SMALLER FAMILY ITALIAN ROASTED VEGETABLE MEDLEY S I D E D I S H Serves: 4 Prep Time: 5 Minutes Cook Time: 20 Minutes 1 1/2 cups broccoli florets 1 1/2 cups cauliflower florets 1 1/2 cups baby carrots 1 Tablespoons olive oil 1/2 Tablespoon dry zesty Italian dressing mix 1 Tablespoon shredded parmesan cheese 1. Preheat oven to 425 degrees F. 2. Spread broccoli, cauliflower and carrots on a large baking sheet. 3. Drizzle olive oil over vegetables. 4. Sprinkle on Italian dressing mix and shredded parmesan. 5. Toss vegetables with hands until evenly coated in oil and seasoning. 6. Bake for 20 minutes, or until vegetables are soft.
DAY 5 SMALLER FAMILY - TURKEY EGG ROLL SKILLET M A I N D I S H Serves: 3-4 Prep Time: 10 Minutes Cook Time: 15 Minutes 3/4 lb Jennie-O Lean Ground Turkey 3 green onion (thinly sliced) 1 1/3 cups shredded cabbage 3/4 cup shredded carrots 1 1/2 Tablespoons soy sauce or soy sauce based asian dressing salt and pepper (to taste) 1. In a large skillet over medium heat, brown turkey for 7 minutes, it may still be a little pink. 2. Add chopped green onion and continue to cook until turkey has completely browned. 3. Add chopped cabbage and carrots to skillet and continue stirring until carrots become tender. 4. Add soy sauce or dressing and combine. 5. Top with salt and pepper and serve over rice, with soy sauce on the side.
SMALLER FAMILY HOMEMADE MICROWAVE CARAMELS D E S S E R T Serves: 4 Prep Time: 30 Minutes Cook Time: 6 Minutes 1/8 cup butter 1/4 cup granulated sugar 1/4 cup light brown sugar 1/4 cup light corn syrup 1/4 cup sweetened condensed milk 1. Combine all ingredients in a microwaveable safe bowl until smooth. 2. Cook for 6 minutes in your microwave, removing and stirring every two minutes. 3. When caramel is done cooking, pour into a 9x13-inch baking pan sprayed with nonstick cooking spray. 4. Let cool completely. 5. Cut into pieces and roll up in wax paper.
DAY 7 SMALLER FAMILY- SHEET PAN BAKED PORK CHOPS AND POTATOES M A I N D I S H Serves: 4 Prep Time: 10 Minutes Cook Time: 40 Minutes 1/4 cup shredded parmesan cheese 1/2 teaspoon Italian seasoning 6 Tablespoons Italian bread crumbs 1/4 cup butter 4 boneless pork chops 2 cups fingerling potatoes 1/2 Tablespoon olive oil salt and pepper, to taste 1. Preheat oven to 400 degrees F. 2. Cover a sheet pan in foil and spray with nonstick cooking spray. 3. In a medium bowl, combine Parmesan cheese, Italian seasoning and bread crumbs. 4. Melt butter in a separate bowl. 5. Dip each pork chop in butter then coat in crumb mixture and place on prepared baking sheet. Continue until all pork chops are coated and on the pan. 6. Cut potatoes into halves and toss in olive oil. 7. Place potatoes on pan around pork chops. 8. Season pork chops and potatoes with salt and pepper, to taste. 9. Bake for 35-40 minutes or until pork chops are cooked through and potatoes are slightly browned.
