DAY 1 SMALLER FAMILY- CHEESEBURGER WRAPS M A I N D I S H Serves: 4 Prep Time: 5 Minutes Cook Time: 15 Minutes 3/4 pound ground beef 2 Tablespoons ketchup 1 Tablespoon mustard 1 teaspoon dried minced onion 1 tablespoon Worcestershire sauce salt and pepper (to taste) 4 whole wheat tortillas (large burrito size) 1 cup cheddar cheese Optional Toppings 1 tomato sliced, optional topping Lettuce, optional topping Pickles, optional topping 1. In a large skillet, brown hamburger until no longer pink. Add ketchup, mustard, onion, Worcestershire sauce, and salt and pepper and cook for about 2 minutes, until all combined. 2. Take a tortilla and line the middle with a small amount of cheddar cheese. Add some cooked hamburger beef and then top with your favorite hamburger toppings. 3. Roll the tortilla up and tuck in the ends (like a burrito). 4. You can either eat as is or throw on a grill (or even an indoor grill- like a George Foreman grill) for 2-4 minutes (just until you see grill marks).
SMALLER FAMILY- CARAMEL APPLE JELLO SALAD S I D E D I S H Serves: 6 Prep Time: 10 Minutes Cook Time: 1/2 (6.4 ounce) box of instant Vanilla Jell-o pudding mix 1/2 cup buttermilk 1/2 (16 ounce) container Cool Whip 1 1/2 large Granny Smith Apples 1/2 (11.4) ounce bag of miniature Twix candy bars (about 10 miniature bars) 1/8 cup caramel syrup 1. In a bowl, combine the buttermilk and Instant vanilla pudding and beat for 2 minutes, or until fully combined and thickened. 2. Fold in the 8 ounces of Cool Whip, until fully combined. 3. Dice up the Twix bars and Granny Smith apples into bite size pieces. 4. Fold in the Twix pieces and apple bits into the mixture. 5. Refrigerate until ready to eat. 6. Drizzle with caramel sauce for garnish.
DAY 2 SMALLER FAMILY- CREAMY PESTO GNOCCHI M A I N D I S H Serves: 4 Prep Time: 10 Minutes Cook Time: 20 Minutes 1 (16 ounce) package gnocchi 1/3 cup onion, finely diced 1/2 Tablespoon olive oil 2 teaspoons minced garlic 1/4 cup butter 1 Tablespoons all-purpose flour 1 cup heavy cream salt and pepper (to taste) 1/2 cup shredded mozzarella cheese 1/4 cup shredded parmesan cheese 1/2 cup prepared basil pesto 1. Cook gnocchi according to package directions. Drain and set aside. 2. In a saucepan over medium heat, saute onion in olive oil until it becomes clear. 3. Stir in garlic and butter until the butter is melted and the garlic is fragrant (about 1-2 minutes). Whisk in flour and cream, then season with salt and pepper. Simmer for about 4 minutes, stirring the whole time. 4. Stir in cheese and pesto. Keep stirring (about 4 minutes) until completely combined. 5. Pour sauce over the gnocchi and toss until coated. Serve warm.
SMALLER FAMILY- PUMPKIN MUFFIN BITES D E S S E R T Serves: 24 mini muffins Prep Time: 18 Minutes Cook Time: 12 Minutes 2 cups sugar 1 cup oil 4 eggs 1 (15 ounce) can pumpkin puree 2 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1 tsp nutmeg 1/2 tsp cloves 1/2 tsp salt 2 cups flour Cream Cheese Frosting: 4 ounces cream cheese (room temperature) 1/4 cup butter (room temperature) 3-4 cups powdered sugar 2-3 Tablespoons milk 1 tsp vanilla extract 1. Preheat oven to 350 degrees F. 2. Spray mini-muffin tin with non-stick cooking spray. 3. In a large mixing bowl, combine sugar and oil on medium speed. Add eggs one at a time and add pumpkin until well combined. 4. With mixer on low speed, add dry ingredients and blend for 1 minute. 5. Fill each muffin cup with 2 tsp of batter. 6. Bake for 10-12 minutes or until a toothpick inserted in pumpkin bite comes out clean. 7. Cool bites in pan for 8 minutes, turn onto wire rack to cool completely. Frost with cream cheese frosting. Cream Cheese Frosting: 8. Mix cream cheese and butter until light and fluffy. Add powdered sugar to butter mix and pour in milk to create desired consistency. Add in vanilla and beat frosting at medium speed until light and fluffy. Spread or pipe onto pumpkin muffins.
DAY 3 SMALLER FAMILY- EASY CLUB CHICKEN M A I N D I S H Serves: 3-4 Prep Time: 15 Minutes Cook Time: 1 Hour 3/4 cup crushed Townhouse or Club crackers 1/2 package Italian salad dressing mix 2 Tablespoons butter Pepper (to taste) 4 chicken breasts 1. Preheat Oven to 375 degrees F. 2. Spray a 9x9 inch pan with non-stick cooking spray. 3. In a bowl, add the cracker crumbs and and Italian dressing mix, and stir until well-combined. 4. Melt the butter in a separate bowl. 5. Dip the chicken breast in the butter, and roll in the cracker crumbs. 6. Place on prepared baking pan. 7. Sprinkle with pepper to cook. 8. Bake for 1 hours at 375 degrees, or until the chicken is fully cooked and has no pink.
SMALLER FAMILY- CHEESY RANCH POTATOES RECIPE S I D E D I S H Serves: 4 Prep Time: 15 Minutes Cook Time: 45 Minutes 2 large baking potatoes 2 ounces cream cheese (softened) 1/8 cup sour cream 1/8 cup yellow onion (finely chopped) 1/2 cup shredded Colby Jack cheese (divided) 3 slices cooked bacon (crumbled and divided) 1/8 teaspoon salt 1/4 cup milk 1/2 (1 ounce) package dry ranch dressing mix 2 green onions (finely chopped) 1. Wash and pierce potatoes in several places with a fork. Microwave on high 10 minutes until tender. Set aside to cool slightly. 2. Preheat oven to 350 degrees F. 3. Grease an 8x8 inch baking pan. 4. Combine cream cheese and sour cream in a large bowl; beat until smooth. 5. Add yellow onion, half of the cheese, half of the bacon bits and salt. Mix well. 6. When potatoes are cool enough to handle, cut in half. Scoop out pulp and mash potatoes. 7. Then add to the cream cheese mixture. Beat with a mixer. Stir in milk, dry ranch dressing mix, and mix well. 8. Spread potato mixture in prepared pan. 9. Bake uncovered 30 minutes. 10. Remove from oven, sprinkle with remaining cheese, bacon pieces, and green onions. Bake 5 minutes longer, or until cheese melts.
DAY 4 SMALLER FAMILY- SHEET PAN MEATLOAF AND GREEN BEANS M A I N D I S H Serves: 3-4 Prep Time: 15 Minutes Cook Time: 22 Minutes 3/4 pounds lean ground beef 1 egg 1/2 onion (diced) 1/8 cup ketchup Salt and pepper (to taste) 1/2 cup quick whole grain oats 1/4 cup Italian bread crumbs 1/2 (10.75 ounce) can condensed tomato soup 1 Tablespoons Worcestershire sauce 1 Tablespoons brown sugar 1/2 Tablespoon olive oil 1/2 pound fresh green beans 1. Preheat oven to 400 degrees F. 2. In a large mixing bowl, combine ground beef, egg, onion, ketchup, salt and pepper, oats, bread crumbs, and 1/4 can of soup. 3. Spray a baking sheet with nonstick cooking spray. 4. Form meatloaf mixture into 6 patties and place on baking sheet. 5. In a small mixing bowl, whisk together 1/4 cup soup, Worcestershire sauce and brown sugar. 6. Spoon some of the soup mixture on top of each meatloaf patty. 7. Toss green beans in olive oil until evenly coated and spread out on baking sheet between meatloaf. 8. Bake for 25-30 minutes, or until meatloaf is cooked through and green beans are soft.
DAY 5 SMALLER FAMILY- MALIBU CHICKEN CRESCENTS M A I N D I S H Serves: 4 Prep Time: 10 Minutes Cook Time: 15 Minutes Roll Ups: 1 can refrigerated crescent roll dough 8 slices of swiss cheese 8 small slices of ham (you could use deli meat or leftovers) 8 chicken strips Sauce: 1 tablespoons mustard 1 1/2 tablespoons mayonnaise 1/2 teaspoon Worcestershire sauce 1/4 teaspoon garlic powder 1/2 teaspoon honey Roll Ups: 1. Preheat oven to 350 degrees F. 2. Separate dough into 8 equal pieces. 3. Place one slice of cheese (folded in half), one slice of ham, and one chicken strip on the larger end of the triangle. 4. Roll the crescent up with the chicken, ham and cheese inside, and place it tip side down on a baking sheet 5. Bake for 15 minutes, or until tops are golden brown. Serve warm with sauce on the side. Sauce: 6. In a small bowl, mix together all ingredients and serve.
SMALLER FAMILY- ROLO COOKIES D E S S E R T Serves: 36 Prep Time: 15 Minutes Cook Time: 8 Minutes 1 (15.25 ounce) box Devils Food Cake mix 1/3 cup vegetable oil 2 eggs 12 ounces Rolo's caramels (individually wrapped) 1. Mix cake mix, oil, and eggs. 2. Take a small ball of dough and form a ball around the rolo. (Only use enough dough to cover the Rolo and spread evenly around the cookie dough ball) 3. Place on greased cookie sheet and bake at 350 degrees F for 7-8 minutes. 4. Sprinkle with powdered sugar.
DAY 7 SMALLER FAMILY- SLOW COOKER BEEF SIRLOIN TIPS AND GRAVY M A I N D I S H Serves: 3-4 Prep Time: 10 Minutes Cook Time: 8 Hours 1/4 cup all-purpose flour 1/2 teaspoon seasoned salt 1/8 teaspoon ground pepper 1/8 teaspoon garlic powder 2 pounds sirloin roast tips 1 tablespoons olive oil 1/2 onion (diced) 1/2 cup fresh mushrooms 1/2 (10.5 oz) can condensed beef broth 1 tablespoon Worcestershire sauce 1 tablespoon ketchup 1 tablespoon red wine vinegar 1 tablespoon water 1/4 teaspoon Italian seasoning 1 tablespoon cornstarch 1 tablespoon cold water mashed potatoes, optional 1. Spray slow cooker with non-stick cooking spray. 2. In a medium bowl, mix together flour, salt, garlic powder, and pepper. Dredge meat tips in the flour mixture. 3. Heat olive oil in large skillet over medium-high heat, then brown tips for a couple of minutes (you aren't cooking them all the way through, just browning the edges). Place beef tips in slow cooker. 4. Dump onions and mushrooms on top of meat in slow cooker. 5. Mix broth, Worcestershire, ketchup, red wine vinegar, water in a bowl. Pour on top of meat in slow cooker. 6. Sprinkle Italian seasoning on top of everything and cook on low for 7-8 hours. 7. After meat is finished cooking, mix cornstarch together with water in a separate bowl. Using a strainer, remove beef tips from slow cooker and place in a separate bowl. Pour cornstarch mixture into remaining liquid in the crock pot and mix well. Add the beef tips back into the slow cooker and cook on high for about 10 minutes or until the liquid starts to thicken and turns into a gravy. 8. Serve over hot mashed potatoes.
