Packaging Information Quality Cryovac packaging used for bag products. Standard pack for most soups at Pine State: One 5lb., 7 lb., or 8 lb. bag per case Each 8 lb. bag yields approximately 1 gallon of product. Bags are labeled with variety name, production code, and complete preparation instructions. Nutritional information and ingredient statements are on the case. Preparation Soups can be prepared from either a frozen or thawed state. Preparation time if frozen is approximately 60 minutes; 45 minutes if thawed ahead of time. Heat product to 170-180 F. while gently stirring. Check internal temperature with a thermometer. Reduce heat and hold at 150 F. for service.
Proper Way to Thaw Soups Preferred method of thawing is to remove products from the case, then transfer bags to a cooler at least 24 hours before needed. Rapid thawing can be achieved by placing frozen Bag under running COLD water for 15 20 minutes. Due to the danger of food spoilage, frozen products should never be set out at room temperature to thaw. If not used within 24 hours, products can continue to be held (in a thawed state under 41 F. refrigeration) for an additional three to four days. Proper Holding Maintain Appearance and Quality for 4 hours. Hold Soup at 140 F Holding soup above 160 F. may cause separation and deterioration in quality. Higher holding temperatures reduce yield due to greater evaporation loss. Cream soups thicken with holding; small amounts of water can be stirred in to restore desired consistency.
Handling Leftovers If an operator chooses to reuse leftovers, it is critical to follow safe food handling procedures. Do not store hot soup in kettle inserts or other deep steam table pans. Cooling leftover soup properly is critical. Cool completely before storing. To speed up the cooling process, place containers of hot soup in an ice bath and stir frequently. Shallow stainless steel pans or plastic tubs are best for storage of leftovers. At a refrigerated temperature of 41 F. or less, leftover soups can be held up to three days. Always handle leftovers separately and serve them first. Never combine leftovers with a fresh batch. Product that has curdled or broken down (become thinner in consistency) should be discarded.
