1 st Annual Christmas on the River Gumbo Cookoff Sponsored by 5701 Highway 90 Milton, Florida 32570 RULES & REGISTRATION FORM Santa Rosa County Chamber of Commerce Relay for Life Fund Raiser December 1, 2007 Riverwalk Milton BOOTHS: Booth location is on a first come, first served basis. The Gumbo Cookoff Chairperson will be on the festival grounds beginning Saturday beginning at 6:00 a.m. in the morning. The area size will be 10 x 10 if tent or framed booth is used, it must be free standing but anchored, i.e. weighted. (Stakes are not allowed to be driven into the ground.) Teams are encouraged to decorate their area with a Sea or Cajun theme. Teams must furnish ALL their cooking equipment including tables, chairs, including water, butane cookers, etc. Electricity is NOT available. GUMBO: The ingredients may be (meats may be cut in advance) seafood, Andouille sausage (only), chicken or duck (must have proof of store purchase for duck). Gumbo and roux MUST be prepared on the festival grounds and not prepared in advance vegetables may be chopped in advance. A bell or an announcement will be made to start your roux at 7:00 a.m. COOKING MAY NOT BEGIN BEFORE 7:00 A.M. Meat, roux, spices, and other needed ingredients, knives, etc. must be provided by participant. Gumbo must be prepared from scratch in a sanitary manner. Ingredients must be displayed at 7:30 a.m. The Gumbo Police will be checking for ingredients between 7:30 a.m. and 8:00 a.m. The Gumbo Police will continue to inspect each booth until all judging is
complete. All pots must be kept covered except when stirring or serving. Participant must keep area clean. Water for cooking and cleaning will be needed. All gumbo must be sold to the public and may not be given away. SALE: Gumbo may be sold Saturday from 11 a.m. 5 p.m. or until you run out. (Gates will open at 10 a.m. on Saturday. The minimum amount of gumbo that may be sold is five (5) gallons; the maximum amount of gumbo that may be sold is unlimited. Remember that your judging cup must be out of your main pot and not cooked separately. Relay for Life SUPPORT: Southern Seafood will provide all cups, spoons, and napkins for the gumbo. Teams will need to provide their own rice. Gumbo will sell for $2.00 per 8-oz cup (two tickets). Entrants may donate all of their proceeds to the Chamber Relay for Life or keep up to 50%. At least 50% is a required donation to the Santa Rosa County Chamber of Commerce Relay for Life, a nonprofit organization. Entrants will not have to worry about handling cash, since tickets will be used. When your sales are complete you will be required to count your tickets accurately. You will then be required to take your tickets to your gumbo chairperson or a designated person who will verify the count. The chairperson will then go to the cash office to get your amount due. CHECK-IN: Check-in begins at 6:00 a.m. Saturday morning. Please check in with the Gumbo Cook-off Chairperson at the gumbo check in area. Please have your area ready to go by 10 a.m. Saturday morning and your gumbo ready to serve by 11 a.m. Your area may be decorated early Saturday morning. We ask that all vehicles be outside the area by 9 a.m. Saturday. JUDGES: Numbered containers, for judging your gumbo, will be provided by the Gumbo Chairperson between 11 a.m. and 12 Noon. Explanation on judging will be given to you upon check in. A designated person will pick up the numbered sample between 12 Noon and 12:30 p.m. and take it to the judging area. The winners will be announced at 3 p.m. at the Pavilion. AWARDS: There will be four (4) trophies awarded for Professional and Amateur: 1 st, 2 nd and 3 rd place, and Showmanship award. The Showmanship trophy will be awarded to the booth that shows the most creativity, flair and fun in the design of their booth. ADMISSIONS: Each team will be allowed four (4) free admissions (members of your cooking team). The ID badges will be mailed to you upon receipt of your entry form and fee or at check in Saturday morning. You must have these with you, as new ones cannot be issued.
SAFETY NOTE AND REQUIREMENTS: 1. For the safety of your team and of the general public, and because of insurance and state regulations, bottles and/or glass containers will NOT be allowed on the grounds. 2. Please leave all food and drink at home; there will be ample food and drink available on the premises for all. 3. Please clean your booth before your team leaves the area All garbage bags must be dumped in the large dumpster located on the festival grounds. 4. The Santa Rosa County Chamber of Commerce has the right to accept or refuse any application. 5. The GFWC Milton Woman s Club, Inc, its officers and agents, and other representatives shall not be held liable for, and they are hereby released from liability for any damages, loss, harm or injury to the person or property of the vendor or any of its officers, agents, or other representatives, resulting from theft, fire, water, weather, accident or other cause. The vendor shall indemnify, defend or protect the GFWC Milton Woman s Club, Inc against and hold and save the GFWC Milton Woman s Club, Inc harmless from any and all claims, demands, suits, liability, damages, loss costs, attorney fees and expenses of whatever kind or nature, which might result from or arise out of any action or failure to act on the part of the vendor or any of its officers, agents, employees or other representatives.
