Delicious red beans and rice with sausage with French bread were served. Wine and beer accompanied the dinner. It was fun to get together again for the first time since our last rally in Fredericksburg. On the first morning we enjoyed a great Cajun style breakfast casserole. The Board meeting was held after breakfast. Many of the ladies did a craft taught by Bonnie Miller. We made 1

Monaco wan-na-go S fashionable scarves from Tee shirt material. It was a very creative and fun craft. Happy hour was followed by Crawfish Etoufee with rice for dinner. After dinner, we had entertainment by Yvette Landry, vocalist, and Richard Comeaux on the pedal steel guitar. Yvette is an experienced singer, and Richard has mastered a difficult instrument. We all enjoyed listening and dancing to several types of music. Breakfast on Tuesday included southern eggs, biscuits and gravy and grits. The ladies luncheon was held in Breaux Bridge, LA, at Buck and Johnny s. They served a jumbo Cajun Cobb salad and a wonderful chocolate brownie for dessert. Dinner was fried catfish and all the trimmings. Everyone enjoyed the Louisiana style food and a nice visiting hour after dinner. Wednesday morning we had Cajun breakfast burritos with bacon. The golfers left early for their important day on the course. Dinner was delicious chicken alfredo, with grilled vegetables and salad. Our entertainment was the super funny Cajun comedian, Kent Gonsoulin. He kept the whole crowd laughing at his jokes. A fun time was had by all. Thursday morning we had French toast, and wonderful cinnamon rolls with fruit cups. The general business meeting followed at 9:00. Dinner was a Cajun delight of chicken and sausage gumbo with rice and potato salad. Our dessert was bread pudding with authentic bourbon sauce. Following dinner, we had a great time at an auction led by Phil Carrell, Master Auctioneer. All centerpieces and bar leftovers were sold to adoring new owners. It was a fun evening and a great way to end our rally. The good times were rolled at Cajun Palms!! 2
