Add 1/2 tsp. of salt. When the water is boiling, add the angel hair noodles, cooking for 8-10 minutes stirring occasionally until al dente. Dice the Onion: Finely chop 1/4 red onion. 3 5 7 Prep the Pork: While the noodles are cooking, remove any fat from the pork tenderloin and cut into 1 1/2 inch thick medallions. Using the palm of your hand, flatten them thinner, to about 3/4 inch. Season with salt and pepper. Coat the Pork: Coat the pork tenderloin cuts first with egg, then set them in the bowl of flour, then back into the egg, and then into the bowl of bread crumbs. Repeat this for all cuts of pork. Make Caper Sauce: To the same pan that you cooked the pork, add 2 Tbsp. butter and finely chopped onions. Sauté until onions are cooked. Add capers and heat through. Combine cooked and drained pasta to frying pan working the sauce into the pasta. 4 Prepare Pork Breading: Add flour and bread crumbs to separate bowls. Crack egg into a bowl and whisk until beaten. 6 Cook the Schnitzel: Over medium high heat add 2 Tbsp. butter to a frying pan. Once melted, add pork cuts. Cook for 3-4 min., browning one side. Once browned, reduce heat to medium and brown other side. Remove pork from pan. 8 Slice the Fruit & Serve Meal: Prepare the fresh peaches to your liking. We recommend washing, pealing and serving sliced. Serve pork schnitzel over the pasta with the fruit on the side. Enjoy!
