CHICKEN FRICASSEE 1 large chicken breast ¼ teaspoon kosher salt ¼ teaspoon black pepper 1 tablespoon butter ½ tablespoon olive oil ½ cup finely chopped onions 1 garlic clove, minced 1 cup chicken broth 1 bay leaf ½ cup cream ½ teaspoon dried tarragon ½ cup frozen, thawed peas 1. Rinse and pat chicken breast dry with paper towels. Cut the chicken breast into 1-inch cubes. Sprinkle the chicken pieces with the salt and pepper. Mix so that the salt and pepper are evenly distributed. 2. Heat the butter in a skillet over moderately high heat, add the chicken to the pan and saute until brown, about 5-6 minutes. 3. Transfer the chicken to a plate. 4. Add the oil to the pan and cook the onions and garlic, stirring occasionally until onions are translucent, about 2 minutes. 5. Add the chicken broth and the bay leaf to the pan and bring to a boil. 6. Stir in the chicken, cream, tarragon and peas and reduce heat to low. Simmer for 10 minutes. 7. Serve over cooked rice. Braised chicken with a rich, creamy sauce served over rice. Hearty and delicious single- serving comfort food. 3

SHRIMP AND PROSCIUTTO PASTA 1½ cups bowtie pasta (or use your favorite pasta) ½ tablespoon olive oil 1 clove of garlic, minced ¼ cup chopped prosciutto ½ cup shrimp (about 10 medium-sized) ¼ cup white wine (or chicken broth) ¼ cup heavy cream ¼ cup shredded parmesan A handful of chopped cherry tomatoes, optional 1. Cook pasta according to package directions; drain and set aside. 2. Heat the olive oil in a large skillet. Add the garlic, shrimp, and prosciutto and saute over medium heat for about 3-4 minutes, until shrimp are pink. 3. Add the wine (or chicken broth) and simmer for 1 minute. 4. Stir in the cream and the cheese and heat stirring until the cheese is melted. 5. Gently fold in the cooked pasta. 6. Garnish with tomatoes. CHICKPEA CURRY 1 cup Basmati Rice 1 tablespoon Canola Oil ½ onion, finely diced ½ teaspoon finely minced fresh ginger 1 clove garlic, minced 1 teaspoon curry powder ¼ teaspoon dried chili flakes ½ cup vegetable broth ¾ cup Coconut Milk ½ tablespoon honey 1 can Chickpeas, drained and rinsed 1. Cook the basmati rice according to the package instructions. 2. Heat the oil in a small to medium sized skillet over medium heat. Add the onions and ginger and cook for 3 to 4 minutes, until the onions soften. 3. Add in the garlic, curry powder and chili flakes and stir, cooking for another 2 minutes. 4. Pour in the vegetable broth, coconut milk and honey and bring to a boil. 5. Add the chickpeas and reduce the heat to low. Simmer for 10 minutes. 6. Taste and add salt, if necessary. 7. Serve over rice. Quick and easy Chickpea Curry For One served with basma[ rice. Healthy, flavorful and ready in under 30 minutes! 5

BANANA BREAD ¼ cup all-purpose flour ¼ teaspoon baking soda ¼ teaspoon ground cinnamon ⅛ teaspoon salt 1 banana, mashed 2 tablespoons granulated sugar 1 tablespoon butter, melted (plus more for greasing the ramekin) 3 tablespoons of egg (crack an egg into a cup, lightly beat and take 3 tablespoons out to use) ½ teaspoon vanilla extract 1. Preheat oven to 350 degrees F. 2. In a bowl, whisk together the flour, baking soda, cinnamon and salt together. Set aside. 3. Mash the banana with a fork in a medium sized bowl. Add the sugar and whip the banana and sugar together. 4. Add the melted butter, 3 tablespoons of the egg and the vanilla; mix well. 5. Mix in the dry ingredients just until incorporated. 6. Pour the batter into the prepared ramekin. 7. Bake for 30 minutes, until golden brown. 8. Remove from the oven and cool completely before eating. Moist and flavorful Banana Bread for One is the perfect size to sa[sfy a sweet craving. It s easy to make and can be made in a toaster oven! 6

PANCAKES 1 cup all-purpose flour 1 teaspoon baking powder ½ tablespoon sugar ¼ teaspoon salt 1 egg ¾ to 1 cup milk 1 tablespoon melted butter 1 teaspoon butter for the pan Light and fluffy Pancakes for one! This single serving recipe is perfect for making a small batch of pancakes. 1. In a large bowl, whisk together the flour, baking powder, sugar and salt. 2. In another bowl, beat the egg and then whisk in the milk and melted butter. 3. Pour the wet ingredients into the dry ingredients and stir well. If the batter seems too thick, add more of the milk, a little at a time. 4. Melt the butter in a large skillet or griddle over medium heat. 5. Ladle about ¾ cup of the batter onto the skillet to make a pancake. 6. Cook until bubbles break the surface of the pancake, and the underside is golden brown, about 3 minutes. 7. Flip with a spatula and cook about 1 minute more on the second side. Remove from the pan and place on a plate. 8. Repeat until all the batter is used up. 9. Serve with your favorite toppings: butter, syrup, fruit or any other topping you desire. 7

FISH TACOS 1 tablespoon olive oil ¼ teaspoon chili powder ¼ teaspoon curry powder ¼ teaspoon garlic powder ¼ teaspoon salt 4 thin pieces of tilapia (4 ounces each) 1 12-ounce bag Broccoli Slaw 2 tablespoons lime juice 1 tablespoon white wine vinegar ½ teaspoon curry powder 2 tablespoons honey ⅛ teaspoon salt ⅛ teaspoon black pepper 4 flour tortillas Optional garnishes - cilantro, cheese These Fish Tacos are topped with a sweet curried Broccoli Slaw. The fish can be cooked quickly in a toaster oven for a quick and easy meal that s healthy and delicious! This recipe is perfect when cooking for one or two people. 1. Preheat oven to 375 degrees F. 2. Stir the olive oil, chili powder, curry powder, garlic powder and salt in a small bowl until blended. Brush mixture on both sides of fish. 3. Place fish on a foil lined baking tray and bake for 12-15 minutes or until fish flakes easily with a fork. 4. Open the bag of broccoli slaw and pour into a large bowl. 5. In a small bowl, combine the lime juice, white wine vinegar, curry powder, honey, salt, and pepper. 6. Pour over the broccoli salad and toss to coat. 7. Warm the tortillas by either placing them in the microwave for 20 seconds or by heating a medium frying pan over mediumhigh heat. Add 1 tortilla at a time, flipping to warm both sides, about 5 minutes total. 8. To construct a taco, break up some of the cooked fish, place it in a warm tortilla, and top it with the broccoli slaw. 9. Top with chopped cilantro and cheese, if desired. 8

BROWNIES ⅔ cup granulated sugar 6 tablespoons butter, melted 1 tablespoon water 1 teaspoon vanilla 1 large egg, lightly beaten ⅔ cup all-purpose flour 6 tablespoons cocoa powder ¼ teaspoon baking powder ⅛ teaspoon salt ¼ cup chopped nuts (optional) 1. Preheat oven to 350 degrees F. Grease an 8 x 5 baking pan. 2. Combine sugar and butter in a large bowl. 3. Stir in water, vanilla and egg. 4. Combine flour, cocoa powder, baking powder and salt in a small bowl and stir into butter/sugar mixture. 5. Stir in nuts. 6. Pour batter into prepared baking dish and bake for 20-25 minutes. Remove from oven, cool and slice. Rich, chewy and prevy close to perfect. This small batch recipe is great for one or two people. It s the ideal recipe when you re looking for a livle something sweet. Be sure to check out the video and recipe to see just how easy these are to make! 9

CHICKEN SOUP 2 boneless, skinless chicken breasts ¼ teaspoon salt 1 tablespoon olive oil 1 small onion, chopped 1 carrot, chopped 1 celery stalk, chopped 3 cloves garlic, minced 4 cups chicken broth 1 cup dried pasta (bowtie, shells or any other type) No need to make a huge pot, this wonderful recipe will serve one or two people. 1. Arrange the chicken in a single layer on the bottom of a pot. Scatter salt over the top. 2. Pour enough cool water to cover the chicken by an inch or so. 3. Place the pot of chicken on the stovetop over medium-high heat. Bring the water to a boil. As soon as the water comes to a boil, reduce the heat to low, cover the pot and let the chicken simmer. Remove any foam with a spoon that accumulates at the top during cooking. 4. Check the chicken after 10 minutes. It is done when no longer pink and an instant read thermometer inserted in the thickest part of the meat registers 170 F. (typically 10-12 minutes). 5. Remove chicken from the liquid and place on a cutting board to cool. When cooled, cut the chicken into bite-sized pieces. 6. Heat medium sized pot on medium-high heat. Add the olive oil. 7. Add the chopped onions, carrot and celery to the pot and cook for 8 minutes, stirring occasionally. 8. Add the garlic and cook for a minute more. 9. Pour in the chicken broth and bring to a boil. Reduce the heat to low, add in the chicken pieces and simmer for 10 minutes. 10. Add the pasta to the pot, stir and cook until pasta is tender, about 5 minutes. 11. Add salt and pepper to taste. 10

NO- BAKE CHEESECAKE 2 large sheets of graham crackers 1 tablespoon butter, melted 2 ounces cream cheese, softened 2 tablespoons sugar ½ teaspoon vanilla 4 ounces heavy cream 1. Place the 2 sheets of graham crackers in a Ziploc bag and roll with a rolling pin or heavy can to crush. 2. Pour crumbs into a small bowl and stir in melted butter. 3. Spoon crumbs into your dessert dish and set aside. 4. In a separate bowl, mix together the cream cheese, sugar and vanilla and set aside. 5. Pour the heavy cream into the bowl of a stand mixer or mixing bowl and whisk until stiff peaks form, about 4 to 5 minutes. 6. Pour the whipped cream into the cream cheese mixture and stir well. 7. Spoon over the graham cracker crust and refrigerate for at least 20 minutes. Creamy and delicious, this single serving dessert can be made in under 10 minutes! 11

SIZZLING STEAK SALAD 2 garlic cloves 1 medium red pepper, sliced ½ tablespoon olive oil ¼ teaspoon creole seasoning mix (I use Tony Chachere's) 1 Top Sirloin Steak, ¾-inch thick 2 teaspoons neutral oil like canola or vegetable oil 2-3 cups torn salad greens ½ cup cherry tomatoes, cut in half FOR THE DRESSING 3 tablespoons Olive Oil 2 ounces Gorgonzola Cheese, crumbled 1 tablespoon red wine vinegar ½ tablespoon whole grain mustard 1 garlic clove minced ½ teaspoon dried basil salt and pepper to taste A sizzling steak straight off the skillet, sliced and placed on a bed of assorted salad greens with roasted red peppers and garlic then topped with a creamy Gorgonzola Dressing 1. Mix the garlic cloves with the red pepper slices and the olive oil on a baking sheet. 2. Bake at 400 degrees for 15 minutes or until garlic and red peppers are soft. Remove from the oven and let cool. 3. Heat a cast iron skillet over high heat for 10 minutes. Rub the seasoning mix on each side of the steak. Add canola oil to the skillet and swirl to cover bottom of skillet. 4. Place the steak on the skillet and cook for 3 minutes per side (for medium-rare). 5. Remove steak to a cutting board and let stand for 5 minutes, covered. 6. Place the greens on a large plate. Cut the steak diagonally into thin slices and arrange on the greens. Top with roasted peppers, sliced garlic and tomatoes. Spoon gorgonzola dressing over the salad. 7. TO MAKE THE GORGONZOLA DRESSING - Combine the oil, cheese, vinegar, mustard, garlic and basil in a small food processor or blender (add additional olive oil if smoother consistency is desired). Season with salt and pepper. Blend until well mixed. Cover and chill. 12
