Spread the pancetta on a parchment-lined baking sheet. bake until slightly crisp & browned, 5-7 minutes. Let cool & break into large pieces. Reduce oven to 350 F Toss the walnut bread with 2 tablespoons of the olive oil & place on baking sheet. Bake until crisp, 5-10 minutes. Do not turn the slices over during baking. Heat the remaining olive oil in a medium saucepan over medium-high heat. Add the onion and cook, stirring, until golden brown, 4-6 minutes. Reduce heat to low and add the dates & vinegars. Cook until the dates are softened & the liquid is syrupy, 3-4 minutes. Transfer to a bowl & allow to cool 10-15 minutes. Stir in the chèvre, pepper & lemon zest. Spread a slightly rounded tablespoon of the chèvre mixture onto each slice of bread. Press the pancetta onto the top of the cheese. Good thing we re constantly surrounded by amazing cheese to keep our spirits high, and we are excited to share one of our new favorites that we can t stop smiling about: Bleu 1924 from Terre des Volcans. Produced on a small cooperative in the Auvergne region, this mixed-milk blue is made in the tradition of Roquefort, but outside of the PDO that was established in 1925. In old times, farmers raised both sheep and cows in the region and produced cheese by blending the two milks to create rich, buttery, and complex blues. Bleu 1924 is produced in this way; the cheesemaker sources only the finest milk and blends each batch based on the individual characteristics exhibited by the milk from batch to batch and season to season. These carefully crafted wheels are then transported to the Caves de la Collogne and aged under the masterful supervision of Herve Mons. The result is a dense blue with bright fruit notes on the front of the palate from the sheep s milk, followed by a mellow richness from the cow s milk over a gentle finish. Bleu 1924 26713 2 / 5 lb Case 1924 is robust but approachable, and lends itself to a variety of pairings on the cheese board, or a sophisticated layer of flavor in the kitchen. Grab some figs (while you still can!) and pair Bleu 1924 with a dab of local honey and a crusty baguette. For something truly decadent, finish a grilled steak with a healthy slab of 1924, or crumble it over a classic roasted beet and frisee salad.
