OUR PRODUCTS REFLECT THE SCENTS OF THE CORSICAN SEA, THE MOUNTAINS AND THE MAQUIS... HISTORY 1979 marks the return of Charles Antona to his native island, Corsica, which he had left years before. Once in Corsica, Charles Antona happily rediscovers the gastronomic joys of his childhood and wanting to share the gustatory richness of his island, he uses his passion to help develop the agricultural richness of Corsica. In 1991 he creates Corsica Gastronomia, his very own production factory. At the beginning, the unit employs 5-6 people and produces about thirty specialities: at first pâtés based on traditional recipes and later on also jams... Charles Antona works hard, trains, develops and gradually surrounds himself with qualified staff members and efficient material, all at the service of a traditional know-how, the legacy of his grandmother s recipes. In 2009, Corsica Gastronomia realizes a new stage in its development and, thanks to the hard work of a team of 35 people, obtains the ISO 22000 label, which guarantees the quality, the regularity and the reliability and safety of every production. With 2011 comes a new challenge: concerned about using only high quality raw materials, Charles Antona uses 10 hectares of family land in the Coti-Chiavari region to plant hundreds of fig trees, all certified organic. It is the very beginning of the creation of an agricultural estate aiming at restoring ancestral orchards. The project which seemed crazy at its beginnings is now taking shape. From the raw materials up to the know-how, Charles Antona now masters the production chain from start to end, and is able to guarantee you the best of the best. Today he offers a complete range of typical and tasteful products for demanding customers who like to find the flavours they once knew and also discover new and unknown tastes. For Charles Antona, constantly reorienting his production is vital, combining tradition and gastronomy with technology. He wants his products to be the expression of a land, a perfume, and a flavour because before selling a product, there s its history... In 2015, in addition to the ISO 22000 standard, Corsica Gastronomia obtains the new FSSC 22000 standard, which is a management system for the security of foodstuffs, equal to IFS or BRC. This new standard requires a food Defence Program (with a vulnerability analysis accompanied by all necessary measures to protect the food chain from any malevolence), as well a an enlarged tracability of finished products. Les spécialités s Organic jams DE Our jams are prepared with love for the flavours of yesteryear There s nothing like a delicious jam to shut away the savours of fruits that have matured following the rythm of the seasons into a jar As our Minna (Corsican diminutive for grandmother) did before us, we carefully select our fruits. Matured in perfect conditions, ripened in the sun, the whole fruit is cooked to preserve its exceptional quality. We kept the traditional recipes with flavours from our childhood, but also created new original and surprising blends. Our jams contain no colouring agents, preservatives or artificial flavours and are ORGANIC. They are made of first choice fruit and cane sugar, stemming from organic farming, certified and regularly controlled by an official laboratory. OUR ASSETS Corsica is a French island located at the heart of the Mediterranean Sea. It is also named The Island of Beauty because of its magnificent landscapes, flora and amount of sunshine. 1) Corsica : It is diverse and varied, which conditions its gastronomic richness. It s at the same time: * an island with a double origin: - Mediterranean: an island in the middle of the Mediterranean Sea and close to Italy, which has benefited from all the historical and gastronomic influences of this region. With its beaches, its mountains and its magnificent forests, the Greek named it the Island of Beauty. - French: Corsica is a part of and represents perfectly the diversity and quality of French gastronomy, which is known all over the world. * a mountain in the sea: With the summit of the Monte Cinto at 2706m, and over 1000km of coast line, Corsica also benefits from a double gastronomic culture: - mountain and rural, with its products made of pork, chestnut and the scents of the maquis. - close to the sea, with its multiple influences and its products from the sea. 2) The raw materials: - raw materials typical for our region, such as the brocciu (a fresh cheese AOP made of ewe s milk), the figatellu (sausage made of pork liver and slightly smoked), thoroughbred Corsican veal, myrtle and arbutus berries (typical representatives of the Corsican maquis ), the citron (large citrus fruit, ancestor of the lemon), the chestnut (the chestnut tree in Corsica is also named the bread tree ), - raw materials mainly supplied by small producers assuring the quality and the typicality of the products. 3) The know-how : - Traditional recipes stemming from the best of Corsican cuisine, with a traditional quality. - Our own recipes (creations): terrine with brocciu and mint, terrine with figatellu, chestnut soup, Strawberry-Clementine jam, Peach-Apricot-Corsican honey jam, Chestnut beer jelly... Natural products, without colouring agents, preservatives or artificial flavours. 4) Food safety In addition to the ISO 22000 standard on food safety management which guarantees the quality, the regularity and the safety of each production, Corsica Gastronomia achieved in 2015 FSSC 22000 certification. FSSC 22000, a food safety management certification with global recognition, enables manufacturers to focus their food safety efforts on scientific and technical advances, and their audit resources on continuous improvement. 5) Our product range Corsica Gastronomia wants to be a summary of the diversity of Corsican specialities. From the starter (patés), up until the confectionary (candied fruits and nougats), over the main course (cooked dishes and chutneys), and without forgetting breakfast (jams), we offer a gastronomic trip through more than 300 references. Our youngest addition is our Fruits Creams, a range of delicious jams and jellies with smooth texture and intense fruit aromas.
