Heart Shaped Almond Butter Cookies FEBRUARY
PREP: 20 Minutes COOK: 8 Minutes SERVES: 12 cookies 1 cup Grassfed Unsalted Butter, at room temperature 3/4 cup Nuts to You Almond Butter 1 tbsp Stevia 3/4 cup Coconut Sugar, packed 2 tsp Ambrosia s Own Vanilla Extract 2 Free Run Eggs 3 cups All-Purpose Flour 2 tsp Ambrosia s Own Ground Cinnamon 1 tsp Baking Powder 1 tsp Kosher Salt 8 oz Dark Chocolate Chips 1. 2. 3. 4. 5. 6. 7. 8. 9. 10. Preheat oven to 350 degrees. Using a mixer beat the butter, Nuts to You Almond Butter, and sugars until light and fluffy. Add the vanilla and eggs and beat to combine. In a separate bowl, mix the flour, cinnamon, baking powder and salt until thoroughly combined. Set the mixer on low and half-cup at a time, add in the flour mixture. Continue this until the dough is fully integrated. Form a round disk with the dough and roll it out onto a lightly-floured piece of parchment paper to about a 1/8 thickness. Use a 3 heart shaped cookie-cutter to cut out the cookies. Bake for 6-8 minutes until the cookies are just beginning to brown. Transfer the cookies to a baking rack and let cool completely. Melt the dark chocolate and drizzle over the almond butter cookies. Serve! Cookie N Ice Cream JUNE
PREP: 10 Minutes COOK: 15 Minutes SERVES: 4 2 frozen Organic Bananas, peeled and cut into 1/2-inch pieces Whipped Coconut Cream Made Good Soft Cookies 1. 2. 3. Add frozen banana pieces and Made Good Cookies to blender, and blend until the pieces start to blend together. Add half the whipped coconut cream, and blend until incorporated. Add the remaining coconut cream, and continue to blend until the mixture reaches the consistency of soft serve. Divide ice cream into four small bowls or cups. Garlic Lime Chicken Drumsticks JULY
PREP: 3 Hours COOK: 45minutes SERVES: 10 Drumsticks 60 ml Olive Oil 1 large Organic Lime, juiced, or more to taste 1.5 tsp Ambrosia s Own Garlic Powder ½ tsp Ambrosia s Own Onion Powder 1/8 tsp Chili Powder 1/8 tsp Dried Oregano Dash of Dried Parsley Flakes Ground Black Pepper (to taste) 10 skinless Yorkshire Valley Chicken Drumsticks 1. 2. 3. 4. 5. 6. Combine olive oil, lime juice, garlic powder, onion powder, chili powder, oregano, parsley, and pepper in a gallon-size resealable plastic bag. Add chicken drumsticks; turn to coat evenly. Seal bag, squeezing out all the air. Let chicken marinate in the refrigerator, at least 2 hours and preferably overnight. Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil. Let chicken come to room temperature, about 25 minutes. Arrange on the baking sheet. Roast in the preheated oven until browned, about 25 minutes. Flip chicken and baste with juices; continue cooking until browned on the second side, 10 to 15 minutes more. Cover chicken with aluminum foil. Let stand before serving, about 5 minutes. Hot Apple Cider SEPTEMBER
PREP: 5 Minutes COOK: 25 Minutes SERVES: 4 2 litres Black River Organic Apple Juice ¾ cup of Coconut Sugar, packed 4 Ambrosia s Own Cinnamon Sticks 2 Star Anise 1. 2. 3. 4. Pour the Black River Organic Apple Juice into a medium saucepan and place it over medium heat. Stir in the Ambrosia s Own Cinnamon Sticks, packed coconut sugar and star anise. Stir until the sugar dissolves. Bring the cider to the point where it is almost at a boil before lowering the heat and allowing it to simmer for 15 minutes. Ladle the cider through a fine-mesh sieve into a slow cooker and serve! PREP: 15 Minutes COOK: 5 Minutes SERVES: 10-12 Pancakes 2 cups Oat Flour 2 tsp. Baking Powder 1/4 tsp. Sea Salt 1 1/2 tsp. Pumpkin Spice 1/4 cup Organic Manitoba Harvest Hemp Hearts 3/4 cup Pumpkin Puree 1 cup Unsweetened Almond Milk (or your other favourite non-dairy beverage) 1 Egg 1 tsp. Vanilla extract 1 tbsp. Maple syrup Sun Mon Tue Wed Thu Fri Sat Rosh Hashana 29 30 1. 2. 3. 4. 5. 6. Combine oat flour, baking powder, sea salt, pumpkin spice and Organic Manitoba Harvest Hemp Hearts in a large bowl. In a separate bowl add the pumpkin puree, almond milk, egg, vanilla and maple syrup and stir until it is well combined. Pour the wet mixture into the dry ingredients and mix. Fold in the chocolate chips. In a large pan, melt the coconut oil over medium heat. If you have a really good non-stick pan then you don t have to use the coconut oil. Scoop about 1/3 cup of the batter into the pan. You can do this two or three times depending on how big your pan is. Cook the pancakes until the tops start to bubble and then flip and cook them for another minute or so. Drizzle with maple syrup and serve. Apple, Walnut and Brown Rice Stuffing DECEMBER
PREP: 20 Minutes COOK: 1 HOUR SERVES: 6 1 1/2 cups Lundberg Short Grain Brown Rice 2 1/4 cups Vegetable Broth 2 Organic Apples 1 Organic Stalk Celery 1 Organic White Onion 1 handful Walnuts, chopped 1 Tbsp Olive Oil 2 tsp Organic Sage 2 tsp Dried or Fresh Rosemary 1 handful Fresh Parsley 1. 2. 3. 4. 5. 6. Rinse Lundberg Short Grain Brown Rice in a fine colander and let drain for 15 minutes. Peel and chop the apples. Slice the celery thin and mince the onion. Lightly toast the walnuts in a dry frying pan on medium low heat (be careful not to burn!) then crush. Melt butter in a heavy sauce pan or pot. Saute the onions until soft (about 5 minutes), then add the celery, apples, sage, rosemary and bit of salt & pepper. Saute until the apples are tender. Pour the rice in the pot and mix it with the other ingredients. Add the broth and bring to a boil. Cover and turn to low heat. Let cook for 45 minutes or until broth is absorbed. Stop the heat and let it sit with the lid on for 15 minutes. Remove lid and lightly stir to fluff everything up. Garnish with some fresh parsley. Enjoy along side roast chicken, turkey, or pork! Warm Winter Salad JANUARY 2020
PREP: 15 Minutes COOK: 28 Minutes SERVES: 4 1 Organic Butternut Squash Extra Virgin Olive Oil 1 tbsp Pure Maple Syrup 3 tbsp Dried Cranberries 3/4 cup Apple Juice 2 tbsp Bragg s Apple Cider Vinegar 2 tbsp Minced Organic Onions 2 tsp Dijon Mustard 4 ounces Organic Arugula 1/2 cup Walnuts Halves, toasted 1. 2. 3. 4. 5. 6. 7. 8. Preheat oven to 400 degrees F. Add 2 tablespoons olive oil, the maple syrup, 1 teaspoon salt and 1/2 teaspoon pepper into a bowl and whisk together. Place the diced butternut squash onto a pan, and pour the olive oil and maple syrup mixture evenly over the pan. Ensure that it is well coated. Place the pan into the oven, and roast for 15 to 20 minutes. Turn occasionally. Once there are 5 minutes left on the timer, add dried cranberries to the pan. Bring a small saucepan to boil over medium-high heat. Add Bragg s Apple Cider Vinegar and minced onions to the saucepan. Cook for 6 to 8 minutes. Remove the mixture from the saucepan, once cooled whisk in the mustard, 1/2 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon of pepper. Place the organic arugula in a salad bowl and add the roasted squash mixture, and the walnuts. Serve!
