R280,00 per person Learn how to make 2 different Christmas Cake Pops as well as decorate 2 cupcakes and 2 biscuits Friday, 12th December Time R280,00 per person Learn how to cover a small cake with fondant, plus making figurines and how to make edible presents which you can give as a Christmas gift 200g dark chocolate chopped 300g brown sugar 250g butter, chopped 4 eggs, lightly beaten (200g) plain flour 1/4 teasp baking powder 35g cocoa 85g fruit mince 1 teasp mixed spice 100g walnuts chopped quick and easy recipe for Christmas : FRUIT MINCE BROWNIES Preheat the oven to 180 C. Grease a 22cm square cake or brownie pan and line the base with baking paper. Place chocolate, sugar and butter in a saucepan over low heat, stirring until melted and well combined. Remove from heat, cool slightly, then stir in eggs until well combined. Add flour, baking powder, cocoa, fruit mince, mixed spice and nuts, stirring to combine. Spread into the pan and bake for 25 minutes or until just set. Cool in pan, then dust with cocoa. Cut into 12 squares and serve. Brownies will keep in an airtight container for 2-3 days.

BAKING & COOKING hints and tips When boiling milk, first stir in a pinch of baking soda. This will help keep the milk from curdling. Add one teaspoon of lemon juice to each quart of water when cooking rice, this will keep rice fluffy. First rinse raisins, dates and figs in very cold water before putting them through the food chopper. They will not form such a gummy mass. When a recipe calls for butter the size of an egg, use four tablespoons. Cookie & Cake Decoration: Keep a small amount of sugar in small glass jars, add a few drops of food colouring and shake jar. Keep several colours on hand. You can also use this technique on shredded coconut. After crimping the edge of the pie crust, lift the edge of the crust gently all around with your fingers. This keeps the dough from sticking to the dish while baking and makes it easier to take out the pieces of pie. Toast oatmeal in the oven before adding to other ingredients when making oatmeal cookies- delicious! A wire cheese cutter is ideal for cutting chilled refrigerator cookie dough. Fill a large hole or sugar shaker with flour and use that when needing to dust surfaces with flour or just pour out a tablespoon as you need it, this is handy way to keep a bit of flour on hand instead of digging in the flour bin. Use pastry wheel to cut rolled cookie dough in squares or diamonds, much less rolling and very pretty. Rinse measuring cup in hot water before using syrup, oil, etc. Will pour out clean and not stick to cup. Canned fruit is much better if opened and removed from the can an hour or two before using to restore the oxygen. When making popcorn balls, slip plastic bags on your hands when shaping them, won t stick or burn your hands. Add one teaspoon baking powder to mashed potatoes to make them fluffy Dip the blades of shears in hot water before cutting marshmallows, they won t stick. Add two teaspoons of vinegar to jello and it will keep the jello from melting when you serve it. Add a few sprigs of fresh peppermint to leftover tea while it is still warm, then refrigerate. Serve over ice.
Featured Recipe : P R E ACHERS CAK E Rumour has it that this recipe got it s name because a housewife discovered, at the last minute that this could be made in a hurry when she heard that the preacher was coming over for tea. 2 cups normal white sugar 2 cups sifted self raising flour 2 teasp. baking soda 2 teasp. vanilla 4 eggs 1/2 cup chopped nuts 1 small tin crushed pineapple with juice Mix all the ingredients together, and pour into a 20cm x 30cm dish and bake in a preheated oven on 350º oven for 30 minutes. CREAM CHEESE FROSTING FOR PREACHER'S CAKE: 1 small tub of plain and smooth cream cheese 100 grams butter (softened) 2 cups icing sugar 2 teassp. Vanilla extract Mix together cream cheese and butter. Beat in sugar, salt and vanilla, and spread lavishly over the cake. You can also sprinkle chopped nuts or chocolate over the top if you wish. (as seen in the photograph) This is an extremely moist and very delicious cake. Enjoy!
