All of our exciting recipes take every day classics and give them an on-trend, gourmet twist, resulting in sandwiches with exceptional flavour profiles. This is, perhaps, not unsurprising, especially considering the political, economic and social landscape in 207. PAN BAGNAT Makes 6 portions round white crusty loaf (400g) 2g baby spinach 00g Tartimalin small bunch fresh basil 4 ripe tomatoes, thinly sliced 6 slices Galbani Salami Milano 2 Galbani Mozzarella Balls, drained and thinly sliced. Cut one quarter from the top of the loaf. Scoop out the inside of the loaf and use the filling for breadcrumbs. 2. Spread the bottom of the loaf with Tartimalin, and layer with the remaining ingredients, pushing down and seasoning well between the layers. 3. Wrap tightly in cling film, and chill for at least hour, or overnight in the fridge. What is Pan Bagnat? Originating from the Provence region of France, Pan Bagnat means bathed bread. The bread will absorb some of the liquid released by the tomatoes and mozzarella, so can (and should!) be assembled ahead of time. 4. CUBAN PANINI WITH A KICK Makes portions SMOKED SALMON & GOAT S CHEESE ON RYE Makes portions 0g tbsp 0 slices 0g panini rolls Unsalted Butter American mustard ham, thinly sliced dill pickles, thinly sliced 200g 0g Emmental Slices red jalapeños, roughly chopped large red onion, peeled and thinly sliced Seeing red Red jalapeños are slightly spicier than green jalapeños, as they have been left to ripen for longer and consequently contain more capsaicin (the ingredient that provides the heat!). 2g 30ml caster sugar white malt vinegar cucumber, cut into very thin strips slices rye bread 00g 0g 37g Tartimalin Cricket St. Thomas Goat s Cheese.kg, cut into thin slices smoked salmon, sliced fresh dill to garnish. Cut the panini rolls in half, and spread with butter and mustard. 2. Top with the remaining ingredients, and cook in a hot panini grill until golden and the Emmental is melted. 3. Cut in half and serve immediately.. Place the sugar and vinegar in a small bowl and leave to dissolve for minutes. Add the cucumber and leave to pickle for 0 minutes. 2. Spread the bread with Tartimalin. Top with the smoked salmon and Goat s Cheese. 3. STEAK AND DOLCELATTE Makes portions 0g 0g 0g 0g large French stick, cut into Unsalted Butter sirloin steaks, trimmed (0g each) Galbani Dolcelatte, thinly sliced caramelised onions watercress. Cut the bread in half and spread with butter. 2. Cook the steak to taste. Top with onions and Dolcelatte, and grill until slightly melted. Great for margins This sandwich can provide great margin opportunities. Offer it with fries on your menu for a complete dish that a diner will pay more for. 3. Cut the ciabatta rolls in half and spread with butter. 2. Mix the celeriac with the lemon zest and juice, mustard and mayonnaise, and season well. 3. Top the ciabatta base with the watercress, celeriac mayonnaise and Brie. tbsp 20g 20g 0g mayonnaise cooked pulled chicken Brie, thinly sliced watercress 4. Heat the chicken and place on top of the Brie with the remaining bread. Serve immediately.
