Life Skills Recovery Menu Plan At the Double Dollar Ranch
We strive to make everything from scratch and not use anything but fresh ingredients. Our milk is straight from the dairy, eggs raised here on the ranch, fresh garden vegetables and an orchard of fruit trees. All meals are served with fresh vegetables and fresh fruit, and also an offer of home bottled fruit (light syrup). Most meals have homemade breads or rolls and fresh made or organic butter. Water is served at every meal for the beverage, but the men can also choose from punch, milk or fruit juice. We don t serve soda pop. Breakfast We put a balanced wholesome breakfast on the table each morning. Sundays is the only day they have cold cereal as a choice. We believe in a hearty hot breakfast. The men will be out working hard for 5 or 6 hours before they can come in for the next meal, so we strive to make breakfast as nourishing as possible. Each morning meal is served with water, milk or fruit juice as an option. Homemade bottled fruit in light syrup is available at the morning meal also. We rotate the following meals for breakfast: A. Homemade hashbrown potatoes, scrambled farm raised eggs or scrambled omelets and either bacon or sausage. Scrambled omelets are sautéed onions, peppers, jalapeño s, mushrooms, bacon bits, eggs and topped with a little shredded cheese. B. Omelets Choice of the following in a 2 or 3 egg omelet ham or sausage, cheese, sautéed onions, peppers, mushrooms, olives, tomatoes, green onions, avocado Served with homemade whole wheat toast and butter (homemade jams are available) C. Cinnamon Oatmeal with apple bits and wheat toast We also offer a variety of dried and fresh fruits and nuts to add to the oatmeal. Our sweeteners are Raw Honey or brown sugar
D. French Toast - whole wheat bread or homemade sour dough French bread with bacon or sausage E. Egg McMuffins - Whole wheat sourdough English muffins, farm raised eggs, cheese, turkey sausage or whole ham slices. F. Waffles a variety include sourdough, buttermilk, oatmeal or whole wheat waffle recipes... With bacon or sausage. G. Potato and Bacon Breakfast casserole - 4 cups country- style hash browns (cubes) 1 12 oz. pkg. bacon, chopped; 1 ½ c. pepper jack cheese; 1 ½ c. cheddar cheese; 1 bunch green onions, chopped; 3-4 eggs, 1 c. whole milk, ½ tsp kosher salt; about 10 turns freshly ground black pepper. Cook bacon, place ingred. In dip dish pie pan, and refrigerate over night. Cook at 350 for 40 to 45 min. Let stand 15 min. before serving. Serve with fresh fruit and whole grain toast. H. Homemade sourdough or buttermilk biscuits and country gravy with crumbed up sausage and a side of scrambled eggs. I. German pancakes topped with fresh sliced fruit and whip cream or light homemade syrup. Side of ham, bacon or sausage. J. Buttermilk wheat pancakes with bacon, ham or sausage side of fruit Lunch choices Lunch is usually our large meal of the day. So I will list the main dishes we typically have in a month. Our dinner is the lighter meal or often the leftovers from lunch, but I will list the choices there too.similar to what most folks have for lunch. We strive to have a balanced meal and to fill the men up as they will have another 6 hours or more of work before they eat again. Each meal is served with water, juice, punch or milk to drink. Fresh wheat bread or rolls, muffins are often an option.
I serve nearly all of the following meals with a green (peas, broccoli, cabbage, green beans or Brussels sprouts) and another colored vegetable like carrots, beets, or corn. Fresh and homemade bottle fruit is also set out as an option. All our beef is raised here on the farm.range and grass fed. We do 90% fat free, no hormones or additives. I am careful to buy hormone free chicken also, and usually remove all skin and visible fat. Choices: A. Chicken Cacciatore Fry together onion, chicken, thyme, marjoram, garlic, oregano, salt, pepper. Then lay chicken in deep dish pan, cover in chicken broth, and 1 large can of mushroom, Simmer in oven for 1 hour, at 350. Serve over brown rice or Quinoa. Serve with 2 vegetables. B. Shrimp Creole melted butter, onion, green pepper and garlic. Simmer till onion is transparent then add stewed and diced tomatoes, and right before serving, large deveined shrimp. Salt, pepper and bay leaf. Serve over brown rice or Quinoa. Serve with 2 vegetables. C. Chili- made with shredded homemade bottled beef, white beans, kidney beans, chili beans, stewed tomatoes, tomatoes sauce, spices, sautéed onion and celery. Serve with a dapple of sour cream and served with homemade corn bread. D. Chicken burritos cooked and shredded chicken, sour cream, cheese, green chilies, cream of mushroom soup and a can of mushrooms. Place mixture in center of whole wheat tortillas and wrap. Top with a little cheese and cook 350 for 30 minutes. Serve with Spanish rice, pinto beans or refried beans (all homemade) E. Sweet and Sour Chicken over Brown Rice Cook diced chicken, then sauté onions, green peppers and carrots. Make homemade sauce and add together. Serve over brown rice or Quinoa. F. Chili Verde Burritos Cook pork 6 hours in crock pot. Shred. Then add green chili sauce and one can dice green chilies salt and pepper. Serve in wheat tortillas. Cover with more green sauce and a little cheese. Bake till melted. Serve with brown or lime rice, and refried beans.
G. Pulled Pork or Chicken Café Rio salads or burritos- make a bowl of each of the following and then they put what they want on their salad or in their burrito: Tortillas, grated cheese, black beans, shredded beef, pork or chicken, shredded lettuce, Café Rio dressing, guacamole, Cilantro, fresh Pico sauce, and lime rice. H. Chicken Enchilada s- ground beef, minced onion, minced olives, green onion, red enchilada sauce, shredded cheese. Mix all of this and place 2 Tb. In center of dipped corn tortilla. Roll and place in deep dish cover with more sauce and cheese. Cook at 350 for 1 hour. Serve with brown rice, lime rice or Quinoa. I. Chicken and Broccoli casserole steam fresh broccoli till nearly done, mix with cooked diced or shredded chicken, Place in a casserole dish, put sauce over top and sprinkle with bread crumbs. Bake 30 min at 350. Sauce: 1 can cream of chicken, ½ mayonnaise, 1 tsp. lemon juice, and ¼ tsp curry powder. Serve with one yellow or orange vegetable. J. Taco s cook tortillas, fill with cooked ground beef, onion and garlic salt. Cheese, shredded lettuce, and diced tomatoes or Pico Sauce. Serve with lime rice or Spanish rice and beans. K. Spaghetti homemade with ground beef, mushrooms, onions, herbs and spices, diced tomatoes, tomato sauce, and tomato paste. Serve over spaghetti noodles. Serve with a fresh salad and vegetable. I usually make homemade French bread too. L. Pot Roast with baked or mashed Potatoes and 2 vegetables. Often served with homemade wheat rolls. M. Baked Turkey with baked or mashed Potatoes and 2 vegetable. Served with salad. N. Chicken Fajitas cut chicken in small strips and cook. Add thinly sliced onions, green peppers, red, yellow, and orange peppers, green whole chilies and Fajitas seasoning. Serve on salad, brown rice or in a tortilla. Dappled with guacamole and sour cream. O. Carne Asada - slice steak very thin and barbeque, season with Carne Asada seasoning. Then grill onions, green chilies and red peppers together and serve in
tortilla as a taco size or burrito. Serve with brown or lime rice and refried beans. Dapple with sour cream. P. Sticky Coconut Chicken marinate chicken 8 hours in the fridge in coconut milk and grated fresh ginger. Then drain and grill on barbeque. Glaze while grilling with sauce. And the serve with sauce: ¾ c rice vinegar, ½ c sugar, 3 Tb. Soy sauce, 1 tsp. hot chili flakes bring to boil and cook till reduced. I serve with pasta or rice and 2 vegetables or salad. Q. Balsamic Glazed Grilled Salmon balsamic vinegar, garlic, olive oil and fresh squeezed oranges cook till reduces. Grill the salmon, brush with sauce after turning, and then drizzle over the top as you serve. Serve with vegetables and rice pilaf or mash potatoes. R. BBQ Pork Sandwiches I cook the cubed pork about 6 hours in the crock pot, then shred. Add homemade barbeque sauce and pile on hamburger buns or homemade wheat bread. I serve with a homemade baked beans and salad sometimes with corn chips. S. Beef Stroganoff cut steak and fry in a little olive oil, then add onion and sauté. Then add 1 cup sour cream, 1 can cream of mushroom soup and 1 can mushroom. Serve over large pasta noodles, and 2 vegetables and maybe a salad. T. White Chili Dice chicken into small pieces, onion, garlic, chopped celery, green chilies, chicken broth, great northern beans, oregano, cumin, cayenne pepper, and jalapeno is optional. Top with cheese and serve. Serve with homemade cornbread or warm wheat bread. U. Meat loaf 2 lb. ground beef, onion flakes, parsley, bread crumbs, eggs, garlic salt, pepper, red chili flakes, sage mix well, put in 2 pans. Top with barbeque sauce and bacon. Bake 1 hour at 350. V. Stuffed Cabbage boil water and drop in cabbage remove one leaf at a time to make into rolls. In other bowl mix hamburger, diced onion, rice, garlic salt, tomato sauce, diced mushrooms. Spoon into cabbage leaves, roll and secure with tooth pics. Then put in to pan and cover with tomato sauce. Bake at 350 about 1 hour. Serve with vegetables.
W. Lemon Salmon Marinate salmon in lemon dressing or lemon juice and salt and pepper. Grill on barbeque and serve with wedge of lemon. Serve with roll, 2 vegetables and salad. X. Hamburgers with choice of bacon or cheese Mix 2 lb. hamburgers with sautéed onion and peppers. Then add an egg, and mix. Make into patties then grill. Serve with buns, bacon and homemade sweet potatoes fries. Condiments. Y. Vegetable Frittata I select basically any vegetables from the fridge that are fresh and good in this.like asparagus, onion, peppers and mushrooms. I sauté them then dump into a casserole dish. I sprinkle with cheese, and then add a milk and egg mixture. Sprinkle with salt and black pepper. Bake 30 or so minutes at 350. Then let rest before cutting. Z. Baked Chicken shake chicken in a bag of my spices and flour.after dipping in buttermilk. Then bake for 1 hour at 350. Serve with mash potatoes and vegetables. AA. Tilapia I dip the fish in buttermilk, and then dip in a mixture of lemon salt, parsley, bread crumbs, and pepper. I grill in butter and serve with a rice pilaf or mash potatoes. 2 vegetables and maybe homemade rolls. BB. Shepherd s Pie When I have left over meat, like roast, turkey, hamburger or barbeque pull pork, I make this. I just cover the bottom of a casserole dish with the meat mixed with some barbeque sauce, then green beans, carrots, corn, and sometimes peas.then the leftover mash potatoes, top with cheese, bake at 350 for 30 minutes.till bubbling. Serve with warm homemade bread and salad. CC. Chicken Cordon Blue I usually buy these not many things come from the store, but I do also make these homemade. I make a creamy cheese sauce to top over it and serve with potatoes, rice and vegetables. DD. Steak Stir Fry with Fried Rice- I slice steak.lots for these guys, and then add it to my wok. Once it gets going I add onion, celery or Chinese cabbage, green peppers, carrots, broccoli, cauliflower, snap peas and bean sprouts. Then top with
soy sauce. I make fried rice to serve with it. It is made with bacon and or ham, then green onion and eggs, fry till eggs are nearly set. Then add cold brown rice, mix and fry. Add soy sauce. Dinner Choices Sandwiches - We buy large hams, turkey or chicken and slice with our slicer for lunch meats healthier and cheaper. I have large hoagie buns or bread. Lettuce sprouts, sliced tomato, sliced cucumber, 2 choices of cheese and condiments. Men love it. I serve with homemade sweet potato fries, or chips and salsa. We usually have the sandwiches the day I make fresh bread. We also make the sandwiches hot buy grilling them in broiler Hay stacks rice with a chicken gravy then you can top it with any of the following...diced celery, diced peppers, mushrooms, coconut, pineapple, green onion, shredded carrots, etc. Omelets - same choices as listed in breakfast menu. Or we make any breakfast item for dinner. Large Kosher all meat hot do - sometimes served in buns, or just cooked and topped with left over chili and topped with cheese. Macho Nachos fry together hamburger, onion and garlic salt add black beans. Fill a plate with baked corn chips, then top with cheese melt in microwave, then top with the meat mixture, then put lettuce, tomato, olives, sour cream and salsa. Potato Bar I make this when I have left over chili or hay stacks gravy. Also have cheese, broccoli, bacon bits, sour cream, etc. to top on it. Chicken Alfredo cook diced chicken, and then add Alfredo sauce simmers while pasta is cooking. Mix together with a pkg. of frozen spinach or diced steamed broccoli florets.
As stated before, we strive to make each meal balanced but over the course of the day I also try to vary the choices so that the whole day is a balance of all food groups.
