It s Week 15! If you are like me then some of these weeks you have made extra or ended up with leftovers that went back into the freezer. Always make sure if you refreeze leftovers you use them within a few weeks. The food will break down much quicker since it s been frozen before. When I refreeze leftovers I always make sure it is in single portions. That way someone can take it to work or just pull it out of the freezer quickly on days they don t care for what is being served for dinner. At the time of writing this I have 3 single servings of lasagna in my freezer so that hubby can take them to work on days we don t plan ahead for his meals at the station. Getting Started In order to make your once a week cooking routine the most effective, start by making sure you have all the ingredients available and that your kitchen and kitchen tools are clean and accessible. The more counter space you have available, the faster this process will go. As always, I keep a sink full of hot soapy water for quick clean ups between meal prep. While making beef recipe #1 you can brown the ground beef for recipe #2. Just make sure not to overcook the meat. This meal plan has two recipes for side dishes and you will find the recipes after the 6 main meal recipes. BBQ Meatballs 1 egg 1/3 cup milk ¼ cup BBQ sauce ¼ cup bread crumbs 1 Tbsp dried onion 1.25 lbs. ground beef or turkey Beef Recipe #1 1. Combine all ingredients together and shape into inch and a half sized meatballs. 2. Place on large cookie sheet and flash freeze. 3. After frozen solid place in Ziploc freezer bags in correct portions for your family. Take out of the freezer the morning you will cook and thaw in fridge. Bake in 350 degree oven for about 30 minutes. Test one and make sure it is brown all the way through the meatball. Beef Recipe #2 Spaghetti Pie 1 lb. Ground beef, browned 10 oz spaghetti noodles 2 Tbsp butter ½ cup grated Parmesan cheese 2 eggs, beaten 2 cups cottage cheese 1-28 oz jar spaghetti sauce 8 oz grated Mozzarella cheese 1. Cook spaghetti until half done. Do not cook fully. Drain and add back to pan. 2. Add butter, Parmesan cheese and egg. Stir gently and form into a pie plate. 3. Layer cottage cheese over noodles, then hamburger and pour spaghettis sauce over entire pie. Top with grated Mozzarella cheese. 4. Cover with aluminum foil and freeze. Take out of freezer the night before serving to thaw in fridge. Bake at 350 degrees for about 30 minutes. Heat uncovered for last 10 minutes to get top brown and bubbly. Beef Recipe #3 Moroccan Burgers 2 lbs ground beef 1 medium onion, diced 1/3 cup fresh parsley, finely chopped ¼ cup breadcrumbs ¼ cup fresh cilantro 1 egg 3 garlic cloves, chopped 2 tsp paprika 1 tsp ground cumin 1 tsp salt ½ tsp ground black pepper ¼ tsp ground red pepper 1. Put all ingredients into a large mixing bowl. Mix well with your hands, finely grinding all ingredients together. 2. Form into 8 patties about 4 inches wide. 3. Place on cookie sheet and flash freeze. 4. Put on aluminum foil to separate and freeze in Ziploc freezer baggie. Take out morning of heating and thaw in fridge. Also remember to thaw Kaiser rolls in the portion amount you will be serving. Grill for about 6-8 minutes on each side. Put a slice of your favorite cheese on top to melt in the last 2 minutes of cooking. Serve on Kaiser rolls with side salads. 2015 Elisa Prout - All Rights Reserved 10 http://onceaweekcooking.com

Pork Recipe #1 Grilled Italian Chops 1 envelope Italian dressing mix, prepared 1 Tbsp lemon juice ½ tsp garlic powder 6 pork chops 1. Mix all ingredients in a large Ziploc baggy. If you will be splitting this recipe into two servings or more then combine in a large bowl instead and separate. 2. Freeze in Ziploc baggy(s). Take out of freezer the night before cooking to thaw in fridge. Grill approximately 20 minutes flipping once. If baking, bake in 325 degree oven for about 35 minutes. Sweet and Sour Chicken Chicken Recipe #1 4 Chicken breasts, cut into cubes 1 16 oz can pineapple chunks, drained and juice set aside 1 clove garlic, minced 3 Tbsp soy sauce 1 tsp ground ginger 2 carrots cut into small pieces 1 green pepper, diced 1. Combine all ingredients in a large Ziploc freezer bag. Freeze. Take out of freezer and thaw in fridge 24 hours. Pour contents into a medium saucepan and simmer on medium low for about 30 minutes. Chicken Recipe #2 Chicken Cordon Bleu 6 chicken breasts 6 slices Swiss cheese 6 slices of thin cut ham 1 can cream of chicken soup (can use light version) 8 oz sour cream (can use light or non-fat version) 1. Lay chicken breasts between two pieces of plastic wrap. Pound flat with rolling pin. 2. Place ham and Swiss cheese slice on top of each chicken breast. Roll with ham and cheese inside the chicken. Place seam side down in a loaf pan. 3. Combine soup and sour cream in a small bowl. Pour over chicken. 4. Bake at 400 degrees for 20 minutes. Let cool completely. Cover with foil and freeze. Thaw casserole for 24 hours in fridge. Bake in 400 degree oven for 30-40 minutes, until the chicken is completely cooked. Sidedish #1 Parmesan Noodles 1-8 oz package medium egg noodles 3 Tbsp chopped green onions 2 Tbsp butter or margarine ½ cup grated parmesan cheese ¼ tsp garlic powder salt & pepper to taste 1. Cook noodles as directed on package EXCEPT undercook them slightly if not serving immediately. Leave them slightly firm if you will be freezing this recipe instead of making it fresh as they will continue to cook as your rehead them. 2. Drain noodles and melt butter in pan, stir in the garlic powder thoroughly in the butter. 3. Add the rest of the ingredients and toss. 4. If freezing, let cool and put into a ziplock bag or small freezer container. Take out of freezer the morning you will be serving and thaw in fridge. Pour into a microwave safe container. Sidedish #2 Pepperoni Potatoes 3 Tbsp butter 3 Tbsp flour 2 cups milk 1 tsp salt ½ tsp dried thyme ½ tsp dried parsley flakes or use some of the leftovers from fresh ¼ tsp dried basil 1/8 tsp ground pepper 1-28 oz package frozen O Brien potatoes ¼ cup chopped red pepper 1 cup frozen corn 1 cup shredded mozzarella cheese 27 slices pepperoni or turkey pepperoni, quartered 1. In a small saucepan, melt butter. 2. Whisk in butter until smooth. 3. Gradually stir in milk. Bring to a boil and keep stirring quickly until thickened. This takes only minutes. Remove from heat and stir in seasonings. 4. Grease a 13x9 inch baking dish or pan. Cover bottom with potatoes and then layer the green peppers and corn. 5. Pour sauce over layers. Top with cheese and pepperoni quarters. 6. Cover with aluminum foil and freeze. Take out night before serving to thaw in freezer.
