Besan is primarily prepared from grinding of Gram. This is a very important food as it contains large quantities of protein and vitamins. Product Gram dal milling is an important industry, supplying flour of gram dal to mankind. Flour milling has been known from a very early date. Besan is used for day to day food products in houses of rich and poor for variety of tastes and has several uses across the country and throughout the year. It is made from Gram dal and is very popular especially in Western part of the country. It is used in sweet as well as spicy food and snacks preparations. This project can be set up in many States of India as Gram Dal is cultivated almost throughout the country. Applications: In India it is popular as Besan flour and is used in various Indian recipes like besan ke laddu, Bhajia, pakode, paraths, Curry etc. Gram flour is also used in making sweat dishes as well as in preparing instant mixes available in market. Chickpea flour, chana or gram flour, besan flour is used commonly throughout India and in parts of the Mediterranean also. It is also perfect as a thickener in curries and coatings in different kinds of fries. It is a substitute of egg for vegetarian people and it has a high in proteins and can be used instead of egg coatings in various recipes. Apart from its capacity to make enhanced fried items and delicious recipes, it is also used as a facial mask mixing with milk or yogurt and turmeric and is popular among young women in Asia. This face mask has proven to be successful as a cleanser and whitening skin. Gram flour is a versatile product and used in many preparations throughout the year. Market As Indians love spicy and sweet recipes and besan is a very important ingredient in these items, thus it enjoys continuous use in Indian kitchens all through the year. Indians by nature are fond of sweet as well as spicy food and Gram flour is an important ingredient in such preparations. It is a versatile product used in many preparations round the year. Apart from individual households, there are some institutional bulk consumers like restaurants, other eateries, hostels and canteens, clubs, caterers, etc. It is a very commonly used item in the Indian kitchens and thus enjoys continuous market throughout the year. Market for this product is growing continuously due to more and more applications, increasing population and its easy availability. Manufacturing Process The process of manufacturing quality besan or gram flour involves four major processes, as explained below. Cleaning - Eliminate pebbles, broken grains and other impurities from Gram. Conditioning - Based on physical properties of gram dal, remove other coloured gram halves. Water content, if any, should be removed by sun-drying to maintain minimum 12 to 14% moisture. Milling - The gradual milling system should be adopted for milling and operation consists of breaking, scalping and purification, reduction and dressing. Raw materials Requirement The major raw material required is Gram splits (Dal)/ Bengal Gram. Maharashtra grows substantial quantity of Gram. Even at 100% capacity utilization, the requirement will not be more than 1500 tonnes and with proper prior arrangements it is possible to ensure smooth supplies. Packing materials like 40 or 50 kg gunny bags with polythene lining for bulk supplies and printed polythene bags of 500 Gms or 1 Kg for consumer supplies shall be required.
