Quick Tips Cabbage SELECTION: Choose a head with firmly packed leaves that are shiny and vibrant in color. It should also feel heavy for its size. Avoid heads that have cracked leaves. When possible, choose a whole head of cabbage vs. a precut one as once the cabbage is cut, some of the nutrients begin to lower the longer it sits unused. STORAGE: Store the head of cabbage in a plastic bag in the refrigerator for up to two weeks. Cut cabbage should be stored tightly wrapped in the refrigerator and used within 1-2 days. Ingredients: 4 servings 1 cup instant brown rice 1 lb. lean ground beef, turkey, or pork 1 large white onion, finely chopped Dash of salt 1 tbsp. and 1 tsp. finely minced garlic, or 2 tsp. garlic powder 1 tbsp. Italian seasoning Directions: Meat Case Easy Unrolled Stuffed Cabbage Skillet Dinner 1. Begin cooking the instant brown rice according to package directions. 2. Meanwhile, in a large skillet, heat olive oil over medium-high heat and add the diced onions with a dash of salt. Continue cooking. Stir occasionally until the onions are tender (about 3 minutes). 3. Add the ground meat to the skillet to brown, stirring occasionally. Cook until there is barely any pink color present in the meat. 4. Add the spices to the cooked meat and mix well. Add the diced tomatoes and sauce, along with ½ cup of water. Once the sauce begins to bubble, add the chopped cabbage and cook for 3-5 minutes covered until the cabbage begins to wilt and shrinks in bulk. Turn the heat down to medium add the rice. Stir gently and cover. Cook until the cabbage is very tender (12-15 more minutes), stirring every 3 to 5 minutes. Remove the cover and sprinkle the top with cheddar cheese. Do not stir. Keep the cover off and continue cooking on low until the cheese melts and the mixture begins to thicken. 5. Remove from the heat and let it rest for 5 minutes before serving. Tips: Mozzarella or Parmesan cheese is a tasty substitute for the cheddar. Produce Stand Cabbage and Sweet Cilantro Slaw Ingredients: 6 servings 6 cups raw cabbage, thinly sliced (green, red, or mixed) 6 oz. match stick carrots ½ cup chopped cilantro 3 green onions, chopped ⅔ cup shelled sunflower seeds 1 tbsp. freshly grated ginger or 1 tsp. ginger spice 3 tbsp. olive oil 2 tbsp. sesame oil ¼ cup balsamic vinegar 2 tbsp. sugar 1 minced garlic clove Pinch of red pepper flakes (optional) Salt and pepper to taste Directions: 1. In a large bowl combine the vegetables and sunflower seeds. Mix well. 2. In a medium-sized bowl combine the oils, sugar, spices, and vinegar. Whisk together and then pour over the vegetables. 3. Mix the slaw well to be sure that vegetables are lightly coated. 4. Cover and refrigerate for at least 2 hours so the flavors can blend.
