History THE INSTITUT In 1890 in Epernay, a chemist called Jacques Weinmann founded a wine analysis laboratory. A combination of manufacturing and conditioning of winemaking products was quickly added. This was the birth of the Institut Œnologique de Champagne. (IOC) At the beginning of the 20th century, IOC created a series of enological yeasts and products for fining and stabilisation, which became renowned world-wide. Situated in the heart of the Champagne region, IOC was enable to develop products ans services specially adapted for sparkling winemaking. After many years of development, IOC is now present in many new regions thanks to its subsidiaries in Burgundy, Cotes du Rhone and Languedoc Roussillon. Consequently, IOC is able to provide a complete range of advice, products and services for regions and countries producing still and sparkling wine.
