DAY 1 SMALLER FAMILY- BBQ TATER TOT CASSEROLE M A I N D I S H Serves: 4-6 Prep Time: 10 Minutes Cook Time: 35 Minutes 3/4 pounds ground beef Salt & pepper (to taste) 1/2 onion (diced) 1/4 red bell pepper (diced) 1/4 green bell pepper (diced) 1/2 (15.25 ounce) can corn (drained) 1 (16 ounce) can Bold Manwich Sauce 1 cup shredded Monterey Jack cheese (divided) 1/2 (32 ounce) bag frozen tater tots 1. Brown ground beef, salt & pepper, onion, red pepper, & green pepper together until the hamburger is cooked through. 2. Drain grease well. 3. Add in the drained corn and Manwich sauce and mix until combined. Heat through. 4. Pour into a lightly greased 9 x 9 inch pan. 5. Sprinkle 1/2 cup of grated cheese over the top of the hamburger mixture. 6. Place tater tots over all and then cover with the remaining 1/2 cup of cheese. 7. Bake for 25 minutes in oven heated to 400 degrees F.
SMALLER FAMILY- PECAN PIE CHEX PARTY MIX D E S S E R T Serves: 8 Prep Time: 10 Minutes Cook Time: 5 Minutes 8 cups Rice Chex 2 cups chopped pecans 1 cup brown sugar 1/2 cup butter 1/3 cup light corn syrup 1/2 teaspoon baking soda 2 teaspoons vegetable oil 2 cups white chocolate chips 1. Combine Rice Chex and chopped pecans in a large mixing bowl. 2. Combine brown sugar, butter and corn syrup in a microwave-safe bowl and microwave on high for 2 minutes, stirring after 1 minute. 3. Remove from microwave and whisk in baking soda. 4. Pour over cereal mixture and gently toss until cereal and pecans are evenly coated. 5. Spread mixture onto a baking sheet lined with waxed paper; let cool. 6. In a microwave-safe bowl, combine vegetable oil and white chocolate chips. Cook on high for 2-3 minutes, stirring every minute until smooth. 7. Drizzle melted white chocolate over cereal mixture and refrigerate until set. 8. Break into pieces and serve. 9. Store in an airtight container.
DAY 2 SMALLER FAMILY- HAM AND SWISS CHICKEN WITH RASPBERRY GLAZE M A I N D I S H Serves: 4 Prep Time: 15 Minutes Cook Time: 30 Minutes 4 boneless skinless chicken breasts 8 pieces deli sliced ham 4 slices swiss cheese 1 (6 ounce) package of raspberries 2 teaspoons baslsamic vinegar Salt and Pepper (to taste) 1. Grill or bake your chicken breasts, season with salt and pepper. 2. Top each piece of cooked chicken with two slices of ham, and one slice of swiss cheese. 3. Broil on 500 degrees for 5-7 minutes, or until cheese becomes completely melted. 4. In a food processor or blender, blend raspberries and vinegar. 5. Over medium heat, bring raspberry and vinegar mixture to a boil and let boil for 5 minutes, stirring constantly. 6. Drizzle sauce over chicken breasts, and enjoy!
SMALLER FAMILY- BALSAMIC ASPARAGUS S I D E D I S H Serves: 4 Prep Time: 10 Minutes Cook Time: 5 Minutes 2 cups water 1 bunch fresh asparagus (trimmed) 2 Tablespoons balsamic vinegar 1 Tablespoon butter (melted) 1/2 teaspoon minced garlic 1/4 teaspoon salt 1/4 teaspoon pepper 1. In a large pan, bring water to a boil. 2. Add asparagus, and boil uncovered for 4-5 minutes or until tender. 3. In a small bowl, whisk together vinegar, butter, garlic, salt and pepper. 4. Drain asparagus and drizzle with balsamic mixture.
DAY 3 SMALLER FAMILY- MINI PIZZA BAGELS M A I N D I S H Serves: 4 Prep Time: 10 Minutes Cook Time: 5 Minutes 8 mini bagels (halved) 1/2 cup pizza sauce 1/2 cup shredded mozzarella cheese Pizza toppings: mini pepperonis pineapple tidbits ham pieces any additional desired pizza toppings 1. Preheat oven to 425 degrees F. 2. Arrange bagels on a cookie sheet, with the cut side up. Top with a spoonful of pizza sauce, a sprinkle of cheese, and favorite pizza toppings. 3. Bake for 4-6 minutes, until cheese is melted and bagels are slightly browned.
SMALLER FAMILY- PUMPKIN BUTTERSCOTCH MUFFINS D E S S E R T Serves: 18 Prep Time: 10 Minutes Cook Time: 15 Minutes 1 3/4 cups all-purpose flour 1/2 cup brown sugar 1/2 cup white sugar 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/2 teaspoon ground nutmeg 1 teaspoon baking soda 1/4 teaspoon baking powder 1/2 teaspoon salt 2 eggs 1/2 cup butter (melted) 1 cup canned pumpkin 1 (11 ounce) package butterscotch chips (divided) 1. Preheat oven to 350 degrees F. 2. In a large bowl, sift together flour, sugars, cinnamon, ginger, nutmeg, baking soda, baking powder, and salt. 3. In a second bowl, mix together eggs, butter, and pumpkin. Slowly add the pumpkin mixture to the dry ingredients. Add in 1 1/2 cups butterscotch chips. 4. Spray a muffin tin (or use muffin tin liners) with cooking spray. Pour batter into the muffin tins, so they're about 2/3 full. Sprinkle remaining butterscotch chips on top. 5. Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
DAY 4 SMALLER FAMILY- SLOW COOKER TURKEY BREAST M A I N D I S H Serves: 4 Prep Time: 10 Minutes Cook Time: 5 Hours 1 (2-3 pound) boneless turkey breast 1/2 Tablespoon olive oil 1/2 teaspoon dried minced garlic 1/2 teaspoon seasoned salt 1/2 teaspoon paprika 1/2 teaspoon Italian seasoning 1/2 teaspoon pepper 1/3 cup water 1. Brush turkey with oil. 2. In a small bowl, combine the garlic, seasoned salt, paprika, Italian seasoning and pepper; rub over turkey. 3. Transfer to a 6 quart slow cooker; add water in the bottom of the slow cooker. Cover and cook on low for 4-5 hours or until tender.
SMALLER FAMILY- HONEY ROASTED CARROTS S I D E D I S H Serves: 4 Prep Time: 10 Minutes Cook Time: 30 Minutes 1 pound baby carrots 3 tablespoons olive oil 3 tablespoons honey salt and pepper (to taste) 1. Preheat oven to 400 degrees F. 2. Line a baking sheet with foil and spray lightly with non-stick cooking spray. 3. In a bowl, mix together carrots and olive oil until carrots are all covered. 4. Spread the carrots in a single layer on the baking sheet. Drizzle the honey over the carrots and sprinkle salt and pepper on top. 5. Bake uncovered, turning once, until tender, about 25-30 minutes.
DAY 5 SMALLER FAMILY- PERFECT FRIED PORK CHOPS M A I N D I S H Serves: 4 Prep Time: 15 Minutes Cook Time: 6 Minutes 4 bone-in pork chops 1/4 cup flour 1/2 teaspoon seasoned salt 1/2 teaspoon black pepper 1/2 teaspoon steak seasoning Salt and pepper (to taste) 1/4 cup canola oil 1/2 Tablespoon butter 1. Rinse pork chops and pat dry with paper towels, making sure to remove all excess moisture. 2. In a medium bowl, combine flour, seasoned salt, black pepper, steak seasoning and salt and pepper as desired. 3. Dip each side of the pork chops into the seasoning mixture, then set aside on a plate. 4. Heat canola oil over medium-high heat in a large skillet and once it is hot (between 325-375 degrees F), add butter to the skillet. 5. When the butter is melted, cook pork chops 2 to 3 minutes on the first side; 1 to 2 minutes on the other side. 6. Remove fried pork chop to a plate and repeat with remaining porch chops.
DAY 7 SMALLER FAMILY- SZECHUAN CHICKEN AND NOODLES M A I N D I S H Serves: 3-4 Prep Time: 10 Minutes Cook Time: 30 Minutes 1/2 (13.25 ounce) package linguine noodles 1 Tablespoon butter 2 boneless skinless chicken breasts (cut into bite-size pieces) 1 Tablespoon olive oil 1/2 yellow onion (chopped) 1 green bell pepper (diced) 1 cup Teriyaki Sauce 1 teaspoon minced garlic 1/2 teaspoon paprika 1 cup broccoli florets (steamed) 1. Cook the linguine noodles according to the directions on the package. 2. In a large skillet over medium-high heat, melt butter. Add the chicken and cook until chicken turns white and is no longer pink on the inside (takes about 8-10 minutes). 3. Remove the chicken onto a plate. 4. In the same skillet, add olive oil over medium heat. Add the onion and bell pepper and saute until soft (about 8 minutes). 5. Once the vegetables are done, add the cooked chicken back to the skillet. 6. Add in the sauce, minced garlic and paprika. Stir well. Reduce heat to medium-low and continue to cook for 5-8 more minutes, or until marinade is thoroughly heated and slightly thickened. 7. Add in the cooked broccoli last. 8. When linguine is done cooking drain the water and then add noodles into the chicken/sauce mixture. 9. Stir to combine and serve.
