Favalisious Banana Muffins 2 ripened bananas, mashed 6 tbsp grapeseed or melted coconut oil 1/4 cup maple syrup 1/4 tsp salt 1 tbsp ground chia + 1 4 cup applesauce (replaces 1 egg) 1 tsp vanilla 1 cup Fava Flour 1 2 cup brown rice flour 1 tsp baking soda 1 tsp baking powder 1 2 cup dark (non-dairy) chocolate chips Add oil, maple syrup, and salt to mashed banana and beat until well mixed. Add chia and applesauce mixture, vanilla and mix well. Add remaining dry ingredients. Mix until just blended. Pour into greased muffin tins. Bake for 20 minutes at 350 F.
Hummus with Fava Flour 2 1 2 cups water 3 4 cup fava flour 3 cloves of garlic, minced 1 4 cup tahini (ground sesame paste) 1 4 cup lemon juice 1 4 tsp Tabasco sauce 1 4 cup vegetable broth 1 2 tsp ground cumin 1 4 cup olive oil salt and pepper to taste Bring 2 1 2 cups of water to boil on medium heat. Whisk the Fava Flour into the boiling water. Cook for one minute, stirring constantly. Turn the heat down to medium low and continue cooking for five minutes. Let cool. In the meantime, purée the garlic, tahini, lemon juice, Tabasco sauce and vegetable broth in a food processor until smooth. Fold the puréed mixture into the cooled mixture. Add the ground cumin, salt and pepper before stirring in the olive oil. Pour into dipping bowls and serve at room temperature.
Pizza Crust 1 tbsp quick-rising yeast 1 cup warm milk 2 tsp sugar 2/3 cup fava bean flour 1/2 cup tapioca flour 2 tsp xanthan gum 1/2 tsp table salt 1 tsp Italian seasoning 1 tbsp canola oil Rice flour for dusting Sauce and toppings are your choice Place racks in bottom and middle positions of oven. Preheat oven to 400 degrees. Dissolve yeast and sugar in warm milk for 5 minutes. Generously grease 12 inch nonstick metal pizza pan. In a medium bowl, whisk together fava flour, tapioca flour, xanthan gum, salt and Italian seasoning. Add yeast- milk mixture and oil and beat with an electric mixer on medium low until thoroughly blended. Dough will be very soft and sticky. Place the dough on the pan and liberally sprinkle with rice flour. Place the dough on the pan with hands, continuing to dust the dough with flour to prevent sticking. Make edges thicker to contain toppings. Bake pizza crust for 10 minutes on the bottom rack. Remove from oven and add sauce and toppings. Bake another 15 20 minutes on the middle rack or until top is nicely browned. Cut in 6 wedges and enjoy some yummy pizza!
