Dissolve sugar and yeast in 1 1/4 cups lukewarm milk. Let stand until yeast rises to the top of the liquid. 2. Beat together margarine and eggs, add yeast and other 1 cup lukewarm milk. 3. Sift salt and lemon rind with flour. Add to other ingredients slowly, beating well after each addition. Beat very well. Dough should be very soft. Do not add too much flour. 4. Let rise until double in bulk. 5. Drop the dough by teaspoons onto floured surface. Flatten and tip with 1 teaspoon of filling. Fold dough up around the filling and twist to secure, sealing dges well. Lay on buttered cookie sheets, sealed edges down. Let rise for 15 minutes. 6. Make an indentation into the top of each and fill with 1 tablespoon crumb, with prune,apricot or poppy seed topping, cheese filling or any very thick jam. Brush edges with melted margarine. 7. Bake for 20-25 minutes at 400 degrees. Makes about 5 dozen. Crumb topping: 1 stick margarine 1 1/2 cups flour 1 1/2 cups brown sugar 1/4 to 1/8 tsp cinnamon Cream margarine and flour well. Add brown sugar and cinnamon and mixt until the mixture forms soft crumbs. Use as topping for Kolacky. 4908 I like an apple filling. Cook several cut up apples until soft and then mash them up. Also, you can just use some cream cheese, softened and "mashed" as a filling. After they're done baking, drizzle a mixture of powdered sugar and milk over pasteries. (add enough milk to powdered sugar till it's slightly thicken)

Bake in hot oven - 400 degrees F. about 15 minutes. 4908 The Milk Mixture: Heat milk in a small saucepan until it is scalded; that is until small bubbles form around the edge of the pan. Remove it from the heat and stir in sugar, salt and margarine until dissolved. Then let it cool to lukewarm. To test, drop a few drops on the inside of your wrist. They should feel neither warm nor cold.

Place the 3 strips on a large greased baking sheet; form into a braid. Brush top of braid with melted margarine. Divide 2/3 of the second piece into 3 equal strips about 12 inches long. Form into a second braid and place on top of first braid. Brush tip with melted margarine. With remaining dough from second piece make a third braid about 10 inches long and place on top of second braid. Form second bread with reserved dough. Cover; let rise in warm place, free from draft, until double in bulk, about 1 hour. Beat 1 egg and 1 tablespoon of water together until well blended. Brush braided loaves with egg mixture. Decorate with whole blanched almonds. Bake in moderate oven, 375 degrees about 40 minutes; loaves will be well browned.

Preheat oven to 350 degrees F. (Used for ambient heat to allow dough to rise) 2. Measure warm water (105-115 degrees F) into pyrex measuring cup. (Typically the hottest water out of the tap is perfect.) 3. Stir yeast into warm water until dissolved. Add a pinch of sugar into the yeast water. Wait for the yeast to activate (it will start bubbling and expanding - takes about 10 minutes). 4. Scald milk in small saucepan then stir sugar, salt and margarine into it. Cool to lukewarm. 5. In a large warm bowl, stir luke-warm milk mixture into yeast water. 6. Add 2 eggs and 3 cups flour and beat until smooth. 7. Stir in enough additional flour to make a soft dough. Turn out onto lightly floured board. 8. Knead until smooth and elastic, about 10 minutes. 9. Place in greased bowl, turning to grease top. 10. Cover and let rise in warm place, free from draft until double in bulk (about 50 minutes) - put on back of stove top and cover with towel. The ambient heat from the oven is perfect for rising. Stage 2 - Prep the citron, raisins, and almonds (during 1st rise) 11. Chop the citron, raisins, and almonds (¼ cup each). 12. Blanch the almonds. Stage 3 - Braiding the Loaves (after 1st rise) 13. Punch dough down and turn out onto lightly floured board. 14. Knead in citron, raisins and chopped almonds until well distributed. 15. Divide into four equal pieces and set two aside. Once done with the first loaf, repeat directions for the second. 16. Divide the first piece into 3 equal strips about 14 inches long. 17. Braid the strips and place on greased baking sheet.

(In 8 or 9 inch square baking pan or 10 inch ovenproof skillet, melt shortening in oven; tilt pan to coat bottom evenly.)* Combine dry ingredients. Add oil (or melted shortening), milk and egg; mix just until blended. Pour into pan. Bake 20 to 25 minutes or until golden brown and wooden toothpick comes out clean. Makes 9 to 10 servings. 4908 I usually just use cooking oil and I don't mess with melting the shortening in the oven bit. I just spray the pan or skillet with cooking spray. You can also use muffin tins or corn stick pans - baking time for these is 15 to 20 minutes or until goden brown.

Stir until well coated. Press mixture evenly into greased 13x8x2 inch pan. Cool completely. Yield: 24 squares, 2x2" 4908 You can also do this in the micowave. I use a large glass bowl (pyrex mixing bowl). Melt the margarine and marshmallows, stirring occasionally. Then add in cereal and put into pan.
