Here are two great side dishes to enjoy during your Thanksgiving celebration: Sweet Potato Crisp 3 large fresh sweet potatoes, cooked until tender. 8 ounces reduced fat cream cheese, softened 1 cup brown sugar, divided 1 teaspoon vanilla 1 tablespoon ground cinnamon Yield: 16, ¾ cup servings 2 medium apples, chopped ½ cup all-purpose flour 2/3 cup quick cooking oats 3 tablespoons butter ¼ cup chopped pecans Preheat oven to 350º F. Lightly spray a 13 x 9 x 2 inch pan with non-stick spray. Mash sweet potatoes. Add cream cheese, 2/3 cup brown sugar, vanilla and cinnamon. Mix until smooth. Spread sweet potato mixture evenly into pan. Top sweet potatoes with chopped apples. In a small bowl, combine flour, oats, and 1/3 cup brown sugar. Cut in butter until mixture resembles coarse crumbles. Stir in pecans. Sprinkle mixture over apples. Bake uncovered for 35-40 minutes or until topping is golden brown and fruit is tender. Nutritional Analysis: 240 calories, 6 g fat, 3 g saturated fat, 5 mg cholesterol, 200 mg sodium, 44 g carbohydrate, 4 g fiber, 20 g sugar, 4 g protein Enjoy the little things in life because one day you ll look back and realize they were the big things. -KURT VONNEGUT Fall Harvest Salad 5 cups torn leaf lettuce 2 ½ cups spinach leaves 1 medium red apple, chopped 1 medium pear, chopped 4 teaspoons lemon juice ¼ cup dried cranberries ¼ cup feta cheese crumbles Yield: 8, 1 cup servings ½ cup chopped walnuts Dressing: 2 ½ tablespoons olive oil 2 tablespoons balsamic vinegar 1 ½ teaspoons Dijon mustard 2 teaspoons Kentucky honey ½ teaspoon salt Combine leaf lettuce and spinach leaves in a large salad bowl. Mix apples and pears with lemon juice in a small bowl and add to lettuce mixture. Prepare dressing by whisking together the olive oil, balsamic vinegar, Dijon mustard, honey and salt; pour over lettuce mixture and toss to coat. Sprinkle salad with cranberries, feta cheese and walnuts. Serve immediately. Nutritional Analysis: 130 calories, 9 g fat, 1.5 g sat fat, 240 mg sodium, 12 g carbohydrates, 3 g fiber, 7 g sugar, 3 g protein ENJOY TIME OF YOUR OWN. Sweet Treats December 1 st Please help with the upcoming Sweet Treats fundraiser. We need cookies and candies made to be sold by the pound. The treats need to be brought to the office either Friday afternoon, Nov. 30th or early Saturday morning. Also we could use volunteers to help sell, weigh the treats, help package and keep the treats replenished on the tables. This is a great opportunity to help the county organization. Mailbox members are encouraged to participate as well. Clubs may also have sales table of craft items. Most of all, encourage friends, family and others to attend this event on Saturday Dec. 1st between the hours of 10am 1pm. Cost $5/lb. Blood Drive, Nov. 12, 11am-5pm Fleming Co.
