The public is invited to attend this event on Friday, February 3rd from 11a.m. 1p.m. During the Tea, a Mini Health Fair with area health care providers. Fleming County Hospital health resources will be presenting: Bone Density; Hand Bath; Cardiac Rehab Information; and Blood Pressure. As always, this event is free to all attendants. Dietician, Hannah Thornton, at Fleming County Hospital will be our Guest Speaker at 11:30 a.m. If you cannot attend, wear red on Friday to support Heart Health. Come learn with us! Understand the difference between yard sales, consignment shops and thrift stores. Identify whether personal items can be sold and determine which outlets would be the best fit in which to sell these personal items. Learn helpful steps in planning and hosting a yard sale. This session will be held at Encore Kids in the Save-A-Lot Shopping Center on Tuesday, February 21 at 10am. Amanda Maynard will assist in teaching this program. FARM AND FAMILY NIGHT Programs for all farmers, spouses & kids of all ages! The 8th annual Farm and Family Night will be held on Tuesday, March 7, 2016 at Maysville Community and Technical College, Maysville Campus. The free event will feature over 30 concurrent sessions on agriculture, cooking, health, conservation, and other related topics and with exhibitors. Dinner begins at 5 pm with the opening session at 6 pm. There is no charge to attend but must have ticket to eat. Tickets can be picked up at the Fleming County Extension Office in February. HOME-BASED MICROPROCESSOR WORKSHOP February 9, 2017, 9:30-3:30-Rowan County Extension Office Morehead March 21, 2017, 9:30-3:30-Menifee County Extension Office Frenchburg April 13, 2017, 9:30-3:30-Lewis County Extension Office Vanceburg This videotaped HBM workshop is required to become a Homebased Microprocessor in Kentucky. It is the first step in a series which includes recipe approval (at a cost of $5 per recipe), verification of an approved water source, and annual certification by the Kentucky Food Safety Branch (with a certification fee of $50 per year). To qualify, farmers must live and farm in Kentucky. The final product must contain a fruit, vegetable, nut or herb grown by the farmer. Products may be sold from the farm, registered farmers markets or certified roadside stands. Once certified, Homebased Microprocessors may sell products such as canned tomatoes and tomato products, pickled fruits and vegetables, salsa, barbecue sauce, pepper or herb jellies, pressure-canned vegetables, and low- or no-sugar jams and jellies. Homebased Processors in Kentucky may sell lower-risk products such as fruit jams, jellies, butters, and syrups; dried fruits, vegetables, nuts, and herbs; baked goods containing a fruit, vegetable, nut, or herb grown by the processor; cut fruits and vegetables; and prepackaged mixed greens. No fee is associated with becoming a Homebased Processor and the HBM workshop is not required. However, processors must register each year with the KY Food Safety Branch. Lunch may be included. Cooperative Extension Service University of Kentucky Fleming County Po Box 192 Flemingsburg KY 41041-0192 NONPROFIT ORG US POSTAGE PAID FLEMINGSBURG KY PERMIT 20 Address Service Requested Official Business Fleming County Building Strong Families FEBRUARY, 2017 NEWSLETTTER FLEMING COUNTY COOPERATIVE EXTENSION SERVICE Tex Mex Spaghetti Squash Casserole 1 small (about 2 pounds) spaghetti squash 1 pound lean ground beef 1/2 cup chopped onion 1/2 cup chopped red bell pepper 1 teaspoon minced garlic 2 teaspoons dried cumin Yield: 9 Servings 1/4 teaspoon ground cayenne pepper 1/2 teaspoon salt 1 cup chopped fresh tomatoes 1 (4 to 5 ounce) can chopped mild green chilies 1 1/2 cups low fat cheddar cheese 1 tablespoon chopped cilantro Preheat oven to 350 degrees F. Prepare the squash by carefully cutting it in half lengthwise with a sharp knife and scooping out the seeds. Place on a lightly greased baking sheet, cut-side down and bake for 30-35 minutes, or until a sharp knife can be easily inserted into the rind. Remove the squash from the oven and cool. Use a fork to scrape out the stringy flesh from the shell and place in a colander. Press out as much liquid as possible. Place squash in a medium bowl and keep warm. In a skillet, cook the ground beef over medium heat until browned. Add the onion, red bell pepper and garlic. Continue to cook until the vegetables are tender. Add the cumin, cayenne pepper and salt. Drain well and set aside. In a small bowl combine the chopped tomatoes and green chilies. Spray a 9-by-13-inch baking pan with non-stick coating. Layer half of the spaghetti squash in the bottom of the pan. Spread half the meat mixture on top of the squash. Layer half of the tomatoes and chilies on top of the meat and top with half of the cheese. Repeat the layers. Bake at 350 degrees F until the casserole is hot all the way through and the cheese is bubbly, 15-20 minutes. Sprinkle with the cilantro and serve. Nutritional Analysis: 140 calories; 4 g fat; 1.5 g saturated fat; 30 mg cholesterol; 400 mg sodium; 11 g carbohydrate; 3 g fiber; 5 g sugars; 17 g protein
