Our Winemaker Brian Rudin Winemaker Winemaker Brian Rudin fcuses his effrts n the day t day winery management f the Middletn family s Washingtn-based peratins. Brian has wrked clsely with Larry Cherubin during harvest in Western Australia, as well as n blending the Middletn family s Cadaretta and Buried Cane wines. Brian is a certified smmelier and hlds a degree frm the Institute f Enlgy and Viticulture at Walla Walla Cmmunity Cllege. He built his winemaking resume with stints at prestigius Washingtn wineries Zefina and L Ecle N. 41, and his vineyard expertise cmes frm time spent at Alder Ridge Vineyard n the Clumbia River. Washingtn State wine cuntry has warm sunny summers and cld frsty winters. One time-hnred practice t prtect grapevines frm damaging cld is t bury lw-grwing vine canes. These buried canes can be unearthed after winter freezes pass, assuring a grape harvest in the fllwing seasn. Cadaretta is a Walla Walla winery wned and perated by the Middletn family. The Middletn cmmitment t Washingtn State dates back t 1898, when we started the Andersn & Middletn frestry prducts cmpany in Hquiam, Washingtn. Our winery cmbines ur family s agricultural histry with an internatinal style and flair. Cadaretta is a blend f science and sul, tempered with traditin and balance. Buried Cane wines shw remarkable, crisp varietal fruit character in a lively n-r lw-ak winemaking style, with easy-pen Stelvin screwcaps. CADARETTA. +1 509 525-1352. 315 E. Main St.. PROFILE: Richard Middletn, Jr. (Rick), Prprietr Rick Middletn and his family have always grwn things. They started with timber in the late 1800s, and diversified int table and wine grapes in Califrnia in the early 1990s. The Andersn & Middletn Cmpany (A&M) is privately held and based in Hquiam, Washingtn state. Thrughut the early 1900s, A&M harvested and shipped timber frm the Nrthwest dwn the west cast as far as San Francisc. Sme f their timber helped rebuild San Francisc after the 1906 earthquake. In the 1990s the cmpany started Red Cedar Vineyards in Pas Rbles, Califrnia, and the Clayhuse wine brand in 2001. Nt cntent t be away frm his Washingtn hme all f the time, Rick and the Middletn family decided t develp the Suthwind Vineyard and Cadaretta winery prject in Walla Walla. The Cadaretta Winery nw prduces a SBS (Sauvignn Blanc Semilln), Chardnnay, Cabernet Sauvignn, Syrah, and blends including Suthwind, Highclimber and Windthrw. The blended reds are all named after terms frm the family s timber grwing histry. Cadaretta is the name f the family s first timber schner that plied the waters f the west cast frm Tacma t Ls Angeles. Rick has a duble majr in Internatinal Studies and Histry frm the University f Washingtn. He hlds a Masters f Internatinal Management frm Thunderbird in Arizna. He spent time wrking fr the U.S. State Department after graduatin, but returned t the family business fr gd in 1995.

Suthwind Vineyard, F Blck Synpsis Fllwing five years f intensive preparatin, Middletn Family Wines has planted grapevines at an exceptinal and distinctive site within their Suthwind Estate Vineyard in the Walla Walla Valley AVA. Prir t the Middletns invlvement, seventeen millin years f gelgic histry were required t create this unique terrir. Over that perid, the cmbined destructive frces f the fiery Clumbia River Basalts, the grinding uplift alng nearby faults, and the steady tll f wind, water, and sun ver this steep suthwest expsure, have left their histry written n a 7.8 acre swath f land untuched by the Missula Flds. The ptential t plant grapevines in this piece f earth, and t harness the individual expressin f terrir frm such a sil, has prved irresistible t the Middletns. We nw present t yu, the F-Blck at Suthwind Vineyard. Sil type: - Lickskillet very stny lam, 7 t 40 percent slpes. - Wind-blwn less verlaying fractured and weathered basalt - 0 t 3 feet sil depth, well drained - Land capability class: 7s Sil Histry: The Clumbia River Basalts were frmed 17 millin years ag frm successive lava flws riginating near La Grande, OR. The free-flwing lavas frmed beds, redefining the landscape f the Eastern Washingtn and Nrtheastern Oregn. The enrmus weight f the nearly tw-mile thick beds caused buckling and faulting, and uplifted the Vansycle Ridge where Suthwind nw sits. The gelgy f the valley was further transfrmed by the epic destructin caused by the Missula Flds, 10,000 t 12,000 years ag. The ice-age event unleashed a fld f water half the size f Lake Michigan, which scured the Clumbia Valley and ripped ut everything in its path, replacing mst f the ancient basalt sils with a new layer f water-transprted sands, silts, and gravels. The F-Blck, hwever, sits at 1350 feet, just the maximum elevatin f the fldline. The basalt-derived earth was left untuched. Less than 2% f vineyards in the Clumbia Valley are planted in sils that that actually cntain basalt-derived minerals. The Lickskillet frmatin is rarer yet amng thse, due t its degree f weathering and special placement with regards t elevatin and wind expsure. While many basalt sils abve the fldline have been cvered with deep windblwn less, the F-Blck has been cntinuusly stripped f less. It faces suthwest, twards the winds, expsing the basalt t the ravages f time, sun, and wind. The rck has been weathering slwly under these stresses, breaking dwn t release its irn, magnesium, calcium, and silicates. Interspersed alng the expsed basalt were Mima munds, a unique and prly understd landfrm. The munds, dimpled enclaves f silt and sand, are rich in ptassium and sdium: wind-blwn relics f far-away granitic bedrck, grund t dust by glacial activity. The harsh arid envirnment n the slpe slwly cmingled the naked basalt and shallw munds f silt, leaving behind a prfile unlike any ther in the wrld currently planted t winegrapes. Cmpsitin and texture: Mixing the sediment and basalt has resulted in a relatively shallw and rcky sil with mineralgical cmplexity, where fractured and decmpsed basalt bedrck lies within the rting zne f the grapevines. Extensive sil testing at the site shws high levels f basalt-minerals: Irn and Magnesium xides, Calcium, and Zinc. Calcium carbnate levels are much higher than in the Freewater Very Cbbly Lam (aka the Rcks ), due t limited expsure t water at Suthwind. These high levels f calcium carbnate raise the ph f the sil Business Office: P.O.Bx 240, 815 Eighth Street, Hquiam, WA 98550 Tel (360) 533-2410 Fax (360) 533-4811

cnsiderably. There is a shallw layer f highly weathered clays just abve the fractured bedrck. The clays lend an increased dimensin t this sil, as they allw fr much higher catin exchange and make many mre elements available t the plant s rt system. In places, the pale-blnde clay has small chunks f black basalt in it, giving it a ckie-dugh appearance and texture. Alngside the ckie dugh, we have fund reddish-brwn lenses f irn xide clay, sandy lams frm crumbled basalt, and thin layers f silt lam. The sil is highly varied in texture thrughut its shallw prfile. The Vineyard The challenge f farming this site has been daunting. The shallw, rganically-pr sils allw fr very little plant vigr and crrespndingly lw crp yields. The suthwest-expsed site is ht and receives cnstant wind frm the suthwest, further stressing the vines and creating small canpies and small berries. Pardxically, many f these factrs are the same reasns we have decided t plant here: t stress the vines and create the struggle necessary t prduce smaller and mre cncentrated fruit. Befre planting, mst f this blck had never been farmed and, in fact, was deemed unfarmable by its land capability classificatin. T prepare this difficult grund fr planting, the silt and sand f the Mima munds were mixed with the underlying weathered basalt. We did deep sil ripping t break up the rck, incrprate the weathered minerals int the upper sil prfile, and t lsen the sil texture fr the grapevines. Successive plantings and tilling f sudan grass functins as green manure, intrducing rganic material int the prfile. This natural technique increases sil prsity, water hlding capacity, and invites mre bilgic diversity int the sil. Fllwing three rtatins f sudan grass, we planted tw crps f arugula. Its highly bicidic rts deter bth nematdal and fungal activity in sils. In the spring f 2011, we planted 4.3 acres f Syrah and 3.5 acres f Cabernet Sauvignn in the F-Blck. Syrah was planted in the shallwest sils, as it the mre vigrus f the tw varieties. Cabernet was planted in the sils with slightly deeper verlying less. T cmbat the wind, bth varieties are planted in rws leading suthwest alng the slpe fall-line, cutting int the wind. The rw rientatin als maximizes mrning sun n the fruit, while limiting direct afternn sun. Suthwind Vineyard is a Certified Member f VINEA, the Walla Walla Valley Winegrwers Sustainable Trust. By meeting the strict requirements f VINEA, Suthwind als meets the requirements fr three ther sustainable viticulture prgrams: Salmn Safe, IOBC (Internatinal Organizatin fr Bilgical Cntrl), and LIVE (Lw Input Viticulture and Enlgy). Walla Walla Wine Regin: Quick Facts 4 Walla Walla is named fr the Walla Walla peple wh lived alng the shres f the Walla Walla River at its junctin with the Snake River and the Clumbia River. The name Walla Walla means rapid stream r many waters. 4 Lava flws filled the Walla Walla Valley 15 millin years ag. 4 The basalt bedrck that underlies the Valley cmes frm the early lava flws. 4 Between 15,000 and 12,000 years ag the Walla Walla Valley was inundated by fld waters frm melting glaciers. 4 Flding depsited the welldrained sand and silt sils that frm the Valley tday. Vlcanic ash was later depsited n the tp layer f Valley sil. 4 The Valley is lcated n latitude 46, straddling the line between the Burgundy and Brdeaux regins f France. 4 A high latitude means autumn weather cls quickly and daily hurs f sunshine diminish rapidly. This allws the grapes extra hang time n the vine t develp mre intense flavrs. 4 The Blue Muntains frm the eastern bundary f the Walla Walla Valley. Varius drainages cming frm the Blues prvide much f the water in the Walla Walla Valley AVA. 4 Average Rainfall in the Walla Walla Valley is 12.5 inches. 4 Annual average temperatures range frm a lw f 27 degrees t a high f 91 degrees. 4 One f the first varietals planted in the Walla Walla Valley was Black Prince (als knwn as Cinsault). Decendants f the riginal vines still grw tday at Frt Walla Walla Museum. 4 Early Italian immigrants first brught their traditin f wine grwing t the Valley in the mid t late 1800s. 4 1998: 20 wineries in the Walla Walla Valley. 4 There are currently mre than 90 wineries and 1,600 acres f grapes Walla Walla Valley. 4 Walla Walla is hme t Whitman Cllege and Walla Walla University, as well as Walla Walla Cmmunity Cllege s Center fr Enlgy and Viticulture. 1102 Dell Avenue, Suite B Walla Walla, WA 99362 www.cadaretta.cm
