BLAKE S RECOMMENDATION BAKED CAMEMBERT CHEESE Preparation time: 5 minutes Cooking time: 20 minutes Serves: 8 as a starter or cheese course Ingredients 2 x 250g Le Rustique Camembert 6 thyme sprigs, plus extra to serve 50g walnut pieces 4 perfectly ripe pears 8 fresh figs 4 tsp Beowulf Honey Method 1. Preheat the oven to 190 C/ fan 170 C /gas mark 5. 2. Score the top of each cheese with a sharp knife and push the thyme into the cheese. 3. Place the cheeses, in their boxes, on a baking sheet and bake for 15 to 20 minutes or until wobbly in the centre. 4. Spread the walnuts out on a baking tray and add to the oven for the last 5 minutes of cooking. 5. Remove the cores from the pears, cut them and the figs into wedges. 6. Scatter the tops of the cheese with the toasted walnuts, some more thyme leaves and a drizzle of honey. 7. Serve with the pears and figs to dip. CHECKETTS RECOMMENDATION MUSTARD CRUSTED RIB OF BEEF WITH PORT AND BLACKBERRY GRAVY Preparation time: 25 minutes, plus resting Cooking time: 3 hours 30 minutes plus resting Serves: 10-12 Ingredients 5.5kg British 28 day dry aged rib of beef supplied by Checketts Butchers. 4 tbsp Tracklements wholegrain mustard 2 tbsp light brown soft sugar 1-2 tbsp flaky sea salt 2 tbsp crushed black peppercorns 3 onions, halved 1 garlic bulb, halved 2 celery stalks, cut into large chunks 2 carrots, cut into large chunks 2 rosemary sprigs For the Gravy 200ml Taylor s ruby port 200ml Checketts beef or chicken stock 150g blackberries 4 juniper berries Method 1. Preheat the oven to 220 C/ fan 200 C/ Gas mark 7 2. Mix the mustard, sugar, salt and pepper, and rub all over the beef. 3. Put the onion, garlic, celery, carrots and rosemary in a large roasting tin and sit the beef on top. Roast for 20 minutes, then lower the heat to 160 C/ fan 140 C / gas mark 3, and roast for another 2 hours 30 minutes-3 hours for medium-rare. A thermometer inserted into the centre should read 55-60 C. 4. Transfer the joint to a carving board and cover with foil; rest for at least 1 hour just enough time to roast your potatoes. We recommend Worcester Produce potatoes perfect for roasting. 5. To make the gravy, pour off the excess fat from the roasting tin, then place on the hob over a medium heat. Pour in the port and stock and simmer for a few minutes, using a wooden spoon to scrape up any sticky bits from the base of the pan. Tip everything into a saucepan with the blackberries and juniper. Simmer briskly for about 20 minutes, then pass through a sieve, pushing gently to extract the juices, and return to the pan. 6. Carve the beef. Add any meat juices to the gravy, simmer again briefly, then pour into a jug to serve with the roast.
