Hello A simple fresh salad can be an elevating or miserable affair and I am a firm believer that the dressing makes or breaks a salad. In Elegantly Dressed, I am sharing ten dressings that I hope will make you feel more uplifted about eating more vibrant green stuff. That is to say, that you may choose to serve these dressings with anything you like whether green or otherwise, but they are easy to make and the majority require no more equipment than a measuring spoon and a jam jar. T H E R E CIPE S
Fresh Garden Herb If you are going to eat your salad in the garden in summer, then this is a perfect dressing for the occasion. This is a delicious vinaigrette served simply over leaves and perhaps with some asparagus and curled cucumber. Yield: Makes just over 1 cup over 1 cup Stir in a tablespoon of capers at the end for a more punchy dressing. Time: 5 minutes 4 tbsp lemon juice 2 tbsp fresh parsley, finely chopped 2 tbsp fresh chives, finely chopped 2 tbsp fresh mint, finely chopped ½ clove garlic, finely chopped a pinch of salt a twist of black pepper ¾ cup extra virgin olive oil Whisk together all of the ingredients, adding the olive oil last. Mustard &Herb This dressing has enough substance to work with something robust such as spinach, meaty such as mushrooms or earthy such as beetroot or carrots. Yield: Just over 1 cup Time: 5-10 minutes Try substituting the white wine vinegar with lemon juice 4 tbsp white wine vinegar 2 tbsp fresh flat leaf parsley, finely chopped 1 tbsp wholegrain mustard ¼ tsp dried herbs de Provence a pinch of salt a twist of black pepper ¾ cup extra virgin olive oil Add all the ingredients to a jam jar, except the olive oil. The Marrakech As yet, I have never visited Marrakech, but if I had I imagine that this dressing would be served lavishly over some very strong flavoured baby leaves, shredded carrots and dark olives. Yield: Just over ½ cup Time: 5-10 minutes This dressing works really well as a marinade for mushrooms 2 tbsp balsamic vinegar ½ tsp ground cumin 1 tbsp dried tarragon 1 tsp wholegrain mustard 1 tbsp fresh mint leaves, chopped 1 small fresh clove garlic, crushed and finely chopped A pinch of salt A twist of black pepper 6tbsp extra virgin olive oil Add all the ingredients to a jam jar, except the olive oil. Sweet Mustard I am convinced that if you make this once, you will be finding reasons to use it on all manner of salads. The champagne vinegar provides a subtle sharpness whilst overall the dressing has both mellowness and depth. Yield: Makes just over 1 cup Try substituting champagne vinegar for white wine vinegar Time: 5 minutes 4 tbsp champagne vinegar 2 tbsp wholegrain mustard 2 tbsp agave or raw honey a pinch of salt a twist of black pepper ¾ cup extra virgin olive oil In a blender, whizz all of the ingredients until smooth and creamy. Sweet & Spicy There are a lot of ingredients in this dressing but this is as labour intensive as it is going to get. This is delicious over vegetable or seaweed noodles and also over a simple salad of broccoli and kale. Yield: Makes ¾ cup Add a handful of chopped cashews or almonds for some extra crunch. Time: 5-10 minutes 1 tbsp raw apple cider vinegar 1 tbsp rice wine vinegar 1 tbsp lime juice 1 tbsp agave 1 tbsp fresh coriander (cilantro), chopped 1 tbsp fresh basil, chopped ½ tbsp lime zest ½ red chilli 1 tbsp red onion, finely chopped a pinch of salt a twist of black pepper 1 tbsp sesame oil ¼ cup and 1 tbsp extra virgin olive oil Add all the ingredients to a jam jar, except the sesame oil and olive oil. Parsley & Pomegranate I love the jewelled look that the pomegranate seeds lend to this dressing. Try this spooned over a salad of red oak leaves, ripe pear and rocket (arugula). Yield: Makes ¾ cup Time: 5 minutes Substitute the pomegranate seeds for dried cranberries soaked in orange juice. 2 tbsp balsamic vinegar 1/3 cup pomegranate seeds 2 tbsp flat leaf parsley, finely chopped a pinch of salt a twist of black pepper 6 tbsp extra virgin olive oil Add all the ingredients to a jam jar, except the olive oil. Sherry & Tarragon Vinaigrette The combination of sherry and tarragon is intensely summery. Toss this over any salad combination to spritz it up. Yield: Makes ½ cup Time: 5 minutes If you cannot find sherry vinegar try substituting for red wine vinegar. 1 tbsp balsamic vinegar 1 tbsp sherry vinegar 2 tbsp fresh tarragon A pinch of salt A twist of black pepper 3 tbsp grapeseed oil 3 tbsp extra virgin olive oil Add all the ingredients to a jam jar, except the grapeseed oil and olive oil. Lime, Ginger & Mint The point of a dressing is to be greater than the sum of its parts, and this is certainly the case with this aromatic dressing. Yield: Makes ¾ cup Try this with a simple salad of red cabbage and apples. Time: 5 minutes 2 tbsp lime juice 2 tbsp raw apple cider vinegar ½ inch ginger, grated 1 tbsp mint leaves, finely chopped ½ cup extra virgin olive oil Add all the ingredients to a jam jar, except the olive oil. Lemon Tahini Dressing This is a vague recollection of an Eastern Mediterranean dressing that is delicious over a salad of fresh baby leaves with coriander (cilantro) and parsley...za atar crackers and perhaps a falafel or two. Yield: Makes just under 1 cup Try substituting the sesame seeds for 2 tbsp tahini Time: 5-10 minutes 4 tbsp lemon juice 4 tbsp sesame seeds 1/2 clove garlic 1/2 tbsp agave or honey 1 tbsp lemon zest Pinch salt 8 tbsp grapeseed oil In a blender, whizz all of the ingredients until smooth. Strawberry Balsamic Thousand Island This is one of those simple dressings that is really delicious. It looks a little like a thousand island dressing but it is not how it tastes. Yield: Makes just over ½ cup Time: 5-10 minutes Serve with a salad of herbs, flowers and maybe some strawberries thrown in too. 2 tbsp balsamic vinegar 10 strawberries ¼ tsp sea salt ¼ tsp cracked black pepper 6 tbsp olive oil In a blender, whizz all of the ingredients until smooth and creamy.
