HISTORY 1896: Eugenio Collavini establishes the Collavini winery He sells his handcrafted wines in the region only 1937: Giovanni, Eugenio's son begins to manage the winery Difficult times are faced during World War I and II 1959: Manlio takes over to manage the company With Manlio s vision, he makes innovative changes to regional wine production and turns Collavini into an internationally recognized brand. 3

FACTS Collavini is a family owned winery with 120 years of producing premium and super premium wines in Friuli. Collavini owns and manages 173 hectares. Collavini produces 1,500,000 bottles of estate grown wine, that is sold in over 40 countries worldwide. Collavini is the largest and oldest sparkling wine facility in the region with over 50 years of experience. Collavini rediscovered Ribolla Gialla, the oldest varietal grown in the region. 5

VINEYARDS AREA: Collio, Colli Orientali del Friuli GRAPES: Pinot Grigio, Pinot Noir, Ribolla Gialla, Chardonnay, Tocai Friulano, Sauvignon, Prosecco, Schioppettino, Refosco dal Peduncolo Rosso, Merlot, Cabernet Sauvignon, Cabernet Franc, Pignolo, Verduzzo, Picolit. TRAINING SYSTEM: Guyot, Cordon Spur, double-arched Cane. PLANTING DENSITY: From 4,000 to 5,000 vines per ha. CROPPING LEVEL: An average of 80 to 90 quintals per ha. 8
THE WINES Pinot Grigio, Canlungo DOC Collio Tasting Notes: Intense straw yellow with interesting copper highlights. The nose offers flowery and characteristic sensations with hints of citrus fruits. In the mouth it is well balanced, silky and savory and elegance is the main feature. T. Friulano DOC Collio Tasting Notes: Straw yellow with greenish highlights when young. A penetrating fragrance of spring flowers introduces the distinct note of almonds typical of the variety, which is echoed on the dry, full-bodied palate with its rounded flavor and long aromatic length. 9
RIBOLLA GIALLA Ribolla Gialla is the most ancient and fascinating indigenous varietal grown in Friuli. Benedictine monks started to grow this varietal in the Rosazzo vineyards in 1272. Ribolla was abandoned by farmers because it was to difficult to grow. 40 years ago Manlio, together with few colleagues rediscovered the varietal and gave new life to this grape. Manlio invented Ribolla Gialla Spumante and the Collavini method. The winery address is Via della Ribolla Gialla. 10
THE WINES Benedete, Ribolla Gialla IGT delle Venezie Tasting Notes: Star-bright straw finishes a fresh, fruit driven nose lifted by citrus notes of lemon verbena and grapefruit. This clean, tangy palate tempts with nicely gauged butter quality and a longlingering finish. Turian, Ribolla Gialla DOC Colli Orientali del Friuli Tasting Notes: Star-bright straw yellow with pale green highlights. Subtly elegant, fruit-led aromatics laced with floral essences of acacia blossom and lemon verbena. Fresh lemon essence perks up the elegant palate. 11
THE WINES Broy, Bianco DOC Collio Tasting Notes: Lustrous straw with pale greenish highlights. Intense, lingering aromas of ripe tropical fruits, acacia honey, orange peel and summer flowers. Powerful, long, soft-textured and warm, nicely balanced by freshness and minerality. Pucino, Refosco DOC Colli Orientali del Friuli Tasting Notes: The vibrantly intense ruby has a distinct purplish rim. Freshness and warm alcohol on the nose mingle with briar fruit and raspberries and subtle hints of licorice to peek through. The balanced palate is braced by a background note of herbaceousness. An outstandingly fresh-tasting wine that partners fish as well as meat. The Collavini family tradition is to bottle this wine in spring. 12
THE WINES Il Grigio Spumante Chardonnay & Pinot Grigio Tasting Notes: Persistent mousse with steady streams of tiny bubbles. Pale, starbright straw shot through with greenish highlights. Fresh, fragrant golden delicious apples, pears and warm crusty bread usher in a harmoniously rounded, faintly and very long length. aromatic palate with a hint of citrus 13
THE DOG Why is the dog on our label? Manlio fell in love with his first dachshund, Ribolla. When she passed away, Manlio made a label in her honor. Rapidly becoming well recognized, she became the winery mascot and part of the Collavini logo. Today Leona, Bepo and Ribolla II are continuing the dachshund saga. 14
