DAY 1 SMALLER FAMILY - SKINNY BEAN AND TURKEY STIR FRY M A I N D I S H Serves: 4 Prep Time: 10 Minutes Cook Time: 20 Minutes 1/3 cup rice vinegar 1/3 cup hoisin sauce 1/4 cup low sodium soy sauce 1/3 cup brown sugar 1 lb ground turkey 1 teaspoon minced garlic 1 teaspoon garlic salt 1 teaspoon black pepper 1/2 teaspoon onion salt 1 lb fresh cut green beans 1 cup sliced portobello mushrooms 1 tablespoon olive oil 1. Heat a large skillet or frying pan over medium high heat. 2. In a small bowl, mix the rice vinegar, hoisin sauce, soy sauce, and brown sugar until well combined. 3. Grease the pan with non-stick cooking spray and place the ground turkey and minced garlic in the pan. 4. Sprinkle the garlic salt, black pepper, and onion salt over the meat. 5. Add half of the liquid soy sauce mixture to the pan so the juices cook in with the meat. 6. Cook the meat about 15 minutes or until it is fully cooked and there is no pink. 7. Set the meat aside, and place the green beans and mushrooms into the pan and drizzle the olive oil over it. 8. Cook until the mushrooms are a shiny brown, and the green beans soften. 9. Add the meat back into the pan and pour the rest of the liquid mixture over the meat, mushrooms and beans. 10. Cook and stir for three more minutes. 11. Remove from heat and enjoy.
SMALLER FAMILY CHEESY GARLIC TEXAS TOAST S I D E D I S H Serves: 4 Prep Time: 10 Minutes Cook Time: 2 Minutes 1/4 cup unsalted butter (softened) 1/2 teaspoon garlic powder Salt and pepper (to taste) 4 slices white bread (cut 1-inch thick) 1/2 cup shredded mozzarella cheese 1/2 teaspoon Italian seasoning 1. Preheat broiler setting on oven. 2. Mix together butter and garlic powder in a small bowl. 3. Add salt and pepper, to taste. 4. Brush both sides of each slice of bread with butter mixture and place on an ungreased baking sheet. 5. Broil bread for 1 minute on each side, or until light golden brown. 6. Sprinkle one side of bread with cheese and Italian seasoning and broil until cheese is melted. 7. Watch closely to avoid burning.
DAY 2 SMALLER FAMILY- HAM AND PINE BAKE M A I N D I S H Serves: 3-4 Prep Time: 20 Minutes Cook Time: 40 Minutes 2 pounds cooked sliced ham 1/2 can pineapple rings (juice reserved) 1/4 cup brown sugar 1/4 cup honey 1 Tablespoon water 1/4 teaspoon cinnamon 1/8 teaspoon nutmeg 1. Preheat oven to 350 degrees. 2. Carve the ham into pieces as you would when you normally carve your ham. 3. Cut the pineapple slices in half. 4. Spray a 9x9 inch pan with non stick cooking spray 5. Place the ham and pineapple slices in a row, in the pan. I did 1 slice of pineapple to every 2 or 3 slices of ham. 6. In a bowl, mix the brown sugar, honey, water, cinnamon, nutmeg and pineapple juice until fully combined. 7. Pour the mixture over the ham and pineapple. 8. Cover the pan with foil, place in oven and bake for 35-40 minutes or until ham and pineapple are hot.
SMALLER FAMILY 5 MINUTE PISTACHIO SALA S I D E D I S H Serves: 3-4 Prep Time: 5 Minutes Cook Time: 1 (20 oz) can pineapple tidbits (juice reserved) 3/4 (3.4 oz) box of Pistachio Instant Pudding 3/4 (8 oz) container of Cool-Whip 1 1/2 bananas (sliced) 1 1/2 cups mini-marshmallows 1. Drain pineapple, pour pineapple juice into large bowl. 2. Pour pudding into the juice and mix well. 3. Fold the Cool-Whip into the pudding. 4. Add pineapple and marshmallows and stir together gently.
DAY 3 SMALLER FAMILY SPINACH AND MUSHROOM PASTA CASSEROLE M A I N D I S H Serves: 4 Prep Time: 15 Minutes Cook Time: 30 Minutes 1/2 (8 ounce) package uncooked penne pasta 1 Tablespoon vegetable oil 1/2 cup sliced portobello mushrooms 1/4 cup butter 1/8 cup all-purpose flour 1/2 teaspoon minced garlic 1/4 teaspoon dried basil 2 cups milk 1 cup mozzarella cheese 1/2 (10 ounce) package frozen spinach (thawed and drained) 1/8 cup soy sauce 1. Preheat oven to 350 degrees F. 2. Lightly grease a 9x13-inch baking dish. 3. Cook pasta according to al dente package directions and drain. 4. Heat oil in saucepan over medium heat for 30 seconds. Add mushrooms and saute for 1 minute and set them aside. 5. Melt butter in the saucepan. Whisk in flour, garlic and basil. Gradually mix in milk until thickened. 6. Stir in one cup cheese until melted. Remove saucepan from heat and stir in cooked pasta, mushrooms, spinach and soy sauce. 7. Transfer to prepared baking dish and top with remaining cheese. 8. Bake for 20 minutes, or until heated through and cheese is melted.
SMALLER FAMILY MELTED SNOWMAN BARK D E S S E R T Serves: 4 Prep Time: 10 Minutes Cook Time: 3 Minutes 1 cup white chocolate chips (or almond bark) 4 mini Reese's Peanut Butter cups (cut in half) 16 candy eyeballs 8 long orange sprinkles 16 round candies (I used Sixlets, but you could also use mini M & M's) 8 pretzel sticks (cracked in half) 1. Melt the white chocolate, according to package directions. 2. Spread the melted white chocolate, out on a prepared cookie sheet, covered with wax paper. 3. While the white chocolate is still melted, press in your peanut butter cups, eyeballs, sprinkle nose, round candies, and pretzel arms. 4. I placed mine in the order of how a melted snowman would look. 5. Let the bark completely dry, and then break into pieces once dry.
DAY 4 SMALLER FAMILY SPICY CHICKEN AND RICE BOWLS M A I N D I S H Serves: 4 Prep Time: 20 Minutes Cook Time: 5 Hours 20 Minutes 2 boneless skinless chicken breasts 1/2 (14.5 ounce) can diced tomatoes with green chiles (Rotel) 1/2 (10 ounce) can mild red enchilada sauce 1/2 green bell pepper (diced) 1/2 red bell pepper (diced) 1/2 onion (diced) 1 garlic clove (diced) 1/2 teaspoon smoked paprika 1/2 teaspoon salt 1/2 teaspoon cumin 1/8 teaspoon cayenne pepper (more or less, depending on how hot you prefer) 2 cups cooked brown rice 1/2 (15 ounce) can black beans (rinsed and drained) 1/2 cup shredded sharp cheddar cheese 1/4 cup sour cream- optional topping 1/4 cup cherry tomatoes (sliced)- optional topping 1 Tablespoons cilantro (chopped)- optional topping 1/4 cup salsa- optional topping 1. Place chicken in the bottom of the slow cooker. 2. In a large bowl, combine tomatoes, enchilada sauce, bell peppers, onion, garlic, smoked paprika, salt, cumin, and cayenne pepper; pour over chicken in slow cooker. 3. Cover and cook on low heat for 5-6 hours (or high heat for about 3 hours) or until chicken is fully cooked and vegetables are tender. 4. Remove chicken from slow cooker and shred using 2 forks. Return chicken to slow cooker. 5. Add cooked rice and beans and stir well. Top with shredded cheese, cover with lid, and let heat through for about 20-30 minutes. 6. Divide into 4 serving bowls and top with garnish of choice (sour cream, chopped tomatoes, cilantro, salsa, etc.).
DAY 5 SMALLER FAMILY- EASY BAKED SWEET AND SOUR PORK M A I N D I S H Serves: 3-4 Prep Time: 25 Minutes Cook Time: 1 Hour 1 cup vegetable oil 1 (1 pound) boneless pork loin roast 1/2 cup cornstarch 1/2 yellow onion (cut into bite-sized pieces) 1/2 green bell pepper (cut into bite-sized pieces) 1/2 (20 ounce) can pineapple chunks (juice reserved) Salt and pepper, to taste 3/4 cups sugar 1/3 cup apple cider vinegar 1/4 cup ketchup 1/2 Tablespoon lite soy sauce 1/2 teaspoon garlic salt 3 cups cooked Jasmine rice 1. Preheat oven to 325 degrees F. 2. Heat vegetable oil in a large pot over medium-high heat. 3. Cut pork roast into 1-inch pieces and place in a gallon sized Ziploc bag. 4. Pour cornstarch into Ziploc bag, zip closed and shake until pork is evenly coated with cornstarch. 5. Carefully add pork a few pieces at a time to hot oil, let cook for 2-3 minutes, remove and place on a plate covered with a paper towel to absorb excess oil. Repeat until all pork has been cooked in oil. 6. Spray a 9x13-inch baking pan with nonstick cooking spray and spread pork in the bottom. 7. Sprinkle on chopped onion, pepper and pineapple chunks. Season with salt and pepper, to taste. 8. Pour pineapple juice from pineapple chunks into a saucepan over medium heat. Whisk in sugar, apple cider vinegar, ketchup, soy sauce and garlic salt. 9. Bring to a boil and pour over the pork, vegetables and pineapple. Gently stir to combine. 10. Place pan in oven for 1 hour, stirring every 15 minutes to continually coat pork in sauce. 11. Remove from oven and serve over rice.
DAY 7 SMALLER FAMILY - SWEET AND TANGY MEATLOAF M A I N D I S H Serves: 4 Prep Time: 15 Minutes Cook Time: 1 Hour 3/4 pound ground beef 3/4 cup plain bread crumbs 1 egg 1/3 teaspoon garlic powder 1/2 teaspoon Worcestershire sauce 1/4 cup ketchup 1/8 cup brown sugar 1/8 cup apricot preserves Glaze: 1/8 cup ketchup 1/8 cup brown sugar 1/8 cup apricot preserves 1. Preheat oven to 350 degrees F. 2. In a large bowl, combine ground beef, breadcrumbs, egg, garlic powder, Worcestershire sauce, ketchup, brown sugar and apricot preserves. 3. Place in a greased 9x5 inch loaf pan. 4. Cook for 40-50 minutes. 5. In a separate bowl combine ketchup, brown sugar and apricot preserves. Remove meatloaf from oven after it has cooked, spread on glaze and cook for an additional 20 minutes.
SMALLER FAMILY- CHEESECAKE CHOCOLATE MOUSSE D E S S E R T Serves: 4 Prep Time: 15 Minutes Cook Time: 1 (8 ounce) package cream cheese 1/2 cup powdered sugar 1 cup chocolate pudding 3/4 (8 oz) container Cool Whip 5 Oreos (for topping) 1. In a bowl, combine the cream cheese and powdered sugar until fully combined and smooth. Use hand mixer to combine. 2. Add the pudding until thoroughly mixed in. 3. Gently fold in the whipped cream to keep the mousse fluffy. 4. Put the mousse into cups and add Oreo's or desired topping. 5. Place in refrigerator until ready to serve.
