Cook on high pressure for 14 minutes. Do a quick pressure release. Serve chicken topped with feta cheese. Serving Suggestion: Roasted Green Beans Roasted Green Beans Yield: 6 Servings Time: 5 minutes hands on, 15-20 minutes cook time 1 lb. green beans Olive oil Seasoned salt Toss green beans with olive oil and sprinkle with seasoned salt. Roast on a baking sheet at 425F degrees for 15-20 minutes.

Pressure Cooker Chicken Curry Time: 10 minutes hands on, 20 minutes cook time 3-4 lbs. of chicken thighs 1 medium onion, chopped 3 Tbsp. curry 1 can of coconut milk, unsweetened 16 oz. of salsa Salt and pepper, to taste Place chicken, onion, salsa and curry powder in pressure cooker. Set cook time for 12 minutes. Do a quick pressure release. Remove the chicken from the pot. Add coconut milk to pressure cooker. Stir into sauce. Return chicken to the pot. Serving Suggestion: Naan, Peas

Pressure Cooker Pork Carnitas Time: 10 minutes hands on, 20 minutes cook time 2 ½ lbs. boneless pork 1 onion, diced 2 cloves garlic, crushed 1 Tbsp. chili powder 1 tsp. cumin 1 cup taco sauce Tortilla, for serving Shredded cheddar, for serving Shredded lettuce, for serving Place all ingredients in the pressure cooker pot. Set cook time for 20 minutes. Do a quick pressure release. Shred meat with a fork. Serve in tortillas with cheese, lettuce and other toppings you like. Serving Suggestion: Corn and Black Bean Salad Corn and Black and Bean Salad Time: 5 minutes hands on 1 can corn, drained 1 can black beans, drained and rinsed 1 can diced tomatoes with green chilies 1-2 Tbsp. cilantro Salt, to taste 1 cup shredded Monterey Jack cheese Mix all ingredients, except cheese, together. Stir in the cheese right before serving.

Pressure Cooker Mel s Diner Chili Time: 20 minutes hands on, 20 minutes cook time 2 lbs. ground beef 1 onion chopped 2 (6 oz.) cans tomato paste 6 tomato paste cans of water 1 clove of garlic, minced 1 can kidney beans, rinsed and drained 2 packages of low-sodium chili seasoning mix 1 can fire roasted tomatoes, undrained Salt and pepper, to taste Hit the sauté button and brown the beef, onion and garlic. Drain as much grease as possible. Add all other ingredients and stir to combine. Set the cook time for 20 minutes. Do a quick pressure release. Serving Suggestion: Salad

Pressure Cooker Beef Teriyaki with Pineapple Time: 5 minutes hands on, 17 minutes cook time 2 lbs. stew beef 15-20 oz. jar teriyaki sauce/glaze 20 oz. pineapple tidbits, drained Add beef and teriyaki sauce to the pressure cooker pot. Set cook time for 15 minutes. Do a quick pressure release. Add pineapple. Set cook time for 2 minutes. Do a quick pressure release. Serving Suggestion: Rice, Broccoli

Pressure Cooker Cranberry Apple Crisp Time: 15 minutes hands on, 8 minutes cook time 6 apples, peeled and diced 1 cup fresh cranberries ¼ cup sugar 2 tsp. cinnamon ½ tsp. nutmeg ½ cup water ½ cup melted butter 1 cup old fashioned oats ¼ cup flour ¼ cup brown sugar Vanilla ice cream, for serving Toss together the diced apples, cranberries, sugar, cinnamon, and nutmeg and place in the pressure cooker pot. Pour water over the apple mixture. In a bowl, mix together the melted butter, oats, flour, and brown sugar. Spread over the top of the apples. Set cook time for 8 minutes. Do a natural pressure release. Serve with vanilla ice cream.
