THE VINEYARDS Vigna delle Forche Müller Thurgau Trentino Doc, Cancòr Riesling Trentino Doc, Camín Chardonnay Trentino Doc, Valtini Sauvignon Trentino Doc, Vigna di Saosent Pinot Nero Trentino Doc, Valvalé Schiava Vigneti delle Dolomiti Igt

VIGNA DELLE FORCHE MÜLLER THURGAU Trentino Doc Vigna delle Forche represents the ideal combination of territory and vine; over the years this vineyard (872 m ASL) has become the symbol of the Müller Thurgau grape variety in Cembra. Thanks to the characteristics of the soil shallow, sandy, stony, originating from the crumbling of superficial porphyric rocks, the grapes harvested in this Cru produce a unique and highly distinctive wine with peculiar mineral notes evoking flintstone and chalybeate water. Fresh and well-balanced on the palate, it presents itself with a straw-yellow colour with pastel green hues. yard location Exposure and altitude Soil composition Planting density Harvest date Vinification process Müller Thurgau vine (clones: massal selection; rootstock: Kober 5BB) Cembra, Forche vineyard (TN) South; 872 m ASL Silty-sandy, loose, stony, originated from Traditional; simple Trentino pergola 5,500 vines/hectare Mid September Manual harvesting; soft pressing in controlled atmosphere; static decantation of the must; fermentation at controlled temperature in stainless steel tanks; ageing on the lees for about 200 days; bottling; stocking in the wine-cellar for 60 days approx. before commercialization.

CANCòR RIESLING Trentino Doc Caressed by the warm Ora del Garda breeze, the Cancòr vineyard (Cembra, 480 m ASL) is the ideal zone for the cultivation of the Rhine Riesling grape variety. The soil, originating from lateral moraine deposits, porphyric, deep, rich in silt and clay, provides the substratum par excellence for the growth of healthy, productive vines. The grapes are cleverly exposed to the sun by careful green pruning in late summer so that they reach the optimal level of ripening, thus favouring the accumulation of its characteristic aromaticity. The distinctive aroma of Cancòr 2011 is a harmonious blend of primary and complex flavours, evoking pistachio, eucalyptus and musk. Its typical sapidity fades into a sensation of dried and candied fruits. yard location Exposure and altitude Soil composition Planting density Harvest date Vinification process 85% Rhine Riesling vine (clone: 198/16 Gm), 15% Manzoni bianco (clone: SMA- ISV 222); rootstock: Kober 5BB) Cembra, Cancòr vineyard (TN) South, South-West; 480 m ASL Silty, originated from porphyric fluvioglacial deposits; deep soil: fine-grained, acid lava cooled about 270 million years ago Guyot 7,000 vines/hectare Early October Manual harvesting; soft pressing in controlled atmosphere; static decantation of the must; fermentation at controlled temperature in stainless steel tanks; ageing on the lees for about 210 days; bottling; stocking in the wine-cellar for 60 days approx. before commercialization.

CAMÍN CHARDONNAY Trentino Doc Located on the slopes of Doss Caslir, in the Municipality of Cembra, the Camìn vineyard is set in the ideal zone for the cultivation of the Chardonnay grape. In this vineyard, situated equidistant from both valley sides, the level of exposure to light is constant from dawn to sunset, thus facilitating an optimal ripening and the production of still wines with distinctive freshness and aroma. The pedogenetic substratum fluvioglacial gravel and sand of porphyric origin and the climate, particularly favourable to vine vegetative development, are the most influential elements in determining the organoleptic properties of the product. Of a strawyellow colour with green hues, Camìn Chardonnay has an intense aroma with notes of tropical fruits, pineapple and orange peel. Particularly sweet, rounded, notexcessively tannic on the palate. yard location Exposure and altitude Soil composition Planting density Harvest date Vinification process Chardonnay vine (clones: SMA 130, SMA 123 and SMA 108; rootstock: SO4 and Kober 5BB) Cembra, Camìn vineyard (TN) South; 540 m ASL Silty-sandy, on mainly porphyric fluvioglacial sediments Guyot; simple Trentino pergola 4,500 vines/hectare Late September Manual harvesting; whole cluster pressing; static decantation of the must; fermentation at controlled temperature in stainless steel tanks; ageing on the lees for about 240 days; bottling; stocking in the wine-cellar for 60 days approx. before commercialization.

VALTINI SAUVIGNON Trentino Doc The Valtini vineyard is located just below the small village of Palù di Giovo, near to the demarcation line of the Werfenian age sandstones and the red porphyry. At an altitude of 480 m ASL and thanks to its pedo-climatic features, this vineyard is the ideal zone for the cultivation of the Sauvignon blanc grape variety. The silty-sandy soil, originating from porphyric fluvioglacial deposits, imparts the unmistakable and distinctive traits of Valtini Sauvignon. The light straw-yellow colour marries perfectly with the intense and long-lasting aroma from which emerges a peculiar sensation of elderflowers. Distinctively persistent and harmonious on the palate. yard location Exposure and altitude Soil composition Planting density Harvest date Vinification process Sauvignon blanc vine (clones: massal selection, ENTAV 159, Lb 36 and Lb 50; rootstock: SO4) Giovo, at Valtini locality (TN) South; 480 m ASL Silty-sandy, on mainly porphyric fluvioglacial sediments; deep soil: fine-grained acid porphyry of Lower Permian age (270 million years ago) Guyot 6,000 vines/hectare Late September Manual harvesting; soft pressing in controlled atmosphere; static decantation of the must; fermentation at controlled temperature in stainless steel tanks; ageing on the lees for about 210 days; bottling; stocking in the wine-cellar for 60 days approx. before commercialization.

VIGNA DI SAOSENT PINOT NERO Trentino Doc Vigna Saosent (560 m ASL), locality just a short distance from the village of Cembra, has been considered for over 15 years as an excellent Cru location for the cultivation of the Pinot Nero grape variety. This site is particularly appropriate for this cultivation not only because of its optimal exposure towards south, but also for its soil: silty-sandy, originating from moraine sediments with porphyric lithology. Of a garnet red colour, the aroma of forest fruits such as strawberry and raspberry fades into spicy flavours of vanilla and chocolate. On the palate the soft and velvety tannin blends with the rich sapidity and right amount of acidity. yard location Exposure and altitude Soil composition Planting density Harvest date Vinification process Pinot Nero vine (clones: ENTAV 777, SMA185 and SMA 201; rootstock: SO4) Cembra, Saosent vineyard (TN) South; 560 m ASL Silty-sandy, originated from fluvioglacial porphyric deposits Guyot 5,500 vines/hectare Early October Manual harvesting; fermentation at controlled temperature in stainless steel tanks; ageing and refining in French oak tonneaux for 12/18 months; bottling; stocking in the wine-cellar for 60 days approx. before commercialization.

VALVALé SCHIAVA Vigneti delle Dolomiti Igt The Valvalè locality has always been regarded as the ideal zone for the cultivation of the Schiava grape variety: terraced vineyards with typical porphyry walls, it is set in a natural amphitheatre facing south. The particular characteristics of exposure and orography interact to make Valvalè the warmest vineyard in the Municipality of Cembra (660 m ASL). Besides the highly particular climate, the soils - deep, siltysandy, porphyric, rich in minerals, impart distinctive features to the Valvalè Schiava wine. The long-standing winemaking tradition of this area favours Schiava grapes that have a light red colour, a delicate fruity aroma evoking cherry and toasted almond, are lightly sapid and have the right amount of acidity. yard location Exposure and altitude Soil composition Planting density Harvest date Vinification process Schiava vine (different variations: Schiava grossa, Schiava gentile, Schiava grigia, Schiava Meranese) Cembra, Valvalè vineyard (TN) South, South-East, South-West; 550 m ASL Silty-sandy, loose, originated from fluvioglacial deposits; deep soil: basic effusive fine-grained porphyry from the Cembra formation (270 million years ago) Traditional; simple Trentino pergola 5,000 vines/hectare Early October Manual harvesting; prefermentation at controlled temperature for 36/48 hours; pressing; static decantation of the must; fermentation at controlled temperature in stainless steel tanks; ageing in fibre-glass reinforced concrete tanks for about 6 months; bottling; stocking in the wine-cellar for 60 days approx. before commercialization.

Valle di Cembra - Cembra and Faver. THE CLASSICS

THE CLASSICS Chardonnay Trentino Doc, Müller Thurgau Trentino Doc, Sauvignon Trentino Doc, Pinot Nero Trentino Doc, Schiava Vigneti delle Dolomiti Igt

CHARDONNAY Trentino Doc müller thurgau Trentino Doc The Chardonnay grape variety has been cultivated in Trentino from the beginning of the 20th century. Its almost 100-year-long presence on the terraced vineyards of Valle di Cembra makes this vine an integral part of the local viniculture. The Cembra Chardonnay has a bright straw-yellow colour, and an elegant aroma with a delicate sensation of citrus fruits. Balanced and fresh on the palate, with a long-lasting sapid finish. Of a light straw-yellow colour with pastel green hues, Cembra Müller Thurgau has an intense, flowery-fruity aroma with notes evoking peach, rose and sage. Characteristically fresh and harmonious, this wine is best drunk young, the year following the grape harvest. yard location Chardonnay Valle di Cembra (TN) Exposure and altitude East, South, West; 500-700m ASL Soil composition Silty-sandy, of porphyric origin, mainly originated from fluvioglacial deposits Guyot; simple Trentino split pergola Planting density 5,500 vines/hectare Vinification process Manual harvesting in mid September; whole cluster pressing; static decantation of the must; fermentation at controlled temperature in stainless steel tanks; ageing on the lees for about 4/5 months before bottling. yard location Müller Thurgau Valle di Cembra (TN) Exposure and altitude East, South, West; 550-700m ASL Soil composition Silty-sandy, loose, mainly of porphyric origin Guyot; simple Trentino split pergola Planting density 5.000 ceppi/ha Vinification process Manual harvesting in late September; soft pressing in inert atmosphere; static decantation of the must; fermentation at controlled temperature in stainless steel tanks; ageing on the lees for about 4/5 months before bottling.

sauvignon Trentino Doc pinot nero Trentino Doc The Sauvignon Blanc grape variety is cultivated in Valle di Cembra in specific micro-zones where the sharp fluctuations in temperature preserve and enhance the characteristically delicate aromas. Of a straw-yellow colour with green hues, this wine has a variegated aroma which blends spicy notes evoking nettle leaves, boxwood, gooseberry and grapefruit. On the palate it is fresh with a pleasurable sensation of sapidity and a long-lasting soft and velvety finish. The Pinot Nero grape variety, originating from Burgundy, flourishes best in territories characterised by sharp fluctuations in temperature during the grape ripening period. The Valle di Cembra climate with its characteristically chilly currents rising up off the nearby alpine mountain chains favours and enhances the typical aromas of this grape variety. Cembra Pinot Nero, of a ruby-red colour, has a delicate aroma evoking forest fruits and cherry. On the palate it is soft, with a full, pleasant sapid sensation which emphasizes its persistency. yard location Sauvignon blanc Valle di Cembra (TN) Exposure and altitude East, South, West; 300-600m ASL Soil composition Loose, of porphyric origin, mainly originated from fluvioglacial deposits Guyot; simple Trentino split pergola Planting density 5,500 vines/hectare Vinification process Manual harvesting in late September; soft pressing in inert atmosphere; static decantation of the must; fermentation at controlled temperature in stainless steel tanks; ageing on the lees for about 4/5 months before bottling. yard location Pinot Nero Valle di Cembra (TN) Exposure and altitude East, South, West; 500-700m ASL Soil composition Silty-sandy, loose, of porphyric origin Guyot; simple Trentino split pergola Planting density Vinification process 5,500 vines/hectare Manual harvesting in late September; fermentation at controlled temperature in steel tanks; ageing in barriques for about 6/7 months before bottling.

schiava vigneti delle dolomiti igt Schiava, a Trentino autochthonous grape variety, has always been cultivated on the typical terraced vineyards in Valle di Cembra. Of a light red colour, Cembra Schiava has an elegant aroma evoking fresh red forest fruits. Soft and well-balanced on the palate, it has a slightly acidic note which marries well with traditional local dishes. yard location Schiava (different varieties): Schiava Grigia, Schiava Grossa, Schiava Gentile, Schiava Meranese) Valle di Cembra (TN) Exposure and altitude East, South, West; 500-700m ASL Soil composition Silty-sandy, of porphyric origin Traditional; simple Trentino split pergola Planting density 4,500 vines/hectare Vinification process Manual harvesting in early October; pre-fermentation for 36/48 hours; pressing; static decantation of the must; fermentation at controlled temperature in stainless steel tanks; ageing in fibre-glass reinforced tanks for about 4/5 months before bottling.

OROROSSO TRENTODOC Dosaggio Zero, Extra Brut DOSS24 TRENTODOC Brut, Brut Rosé

'Oro rosso' ('red gold') is the name given in Valle di Cembra to porphyry, the volcanic rock typical of the region, which is an important economic resource for this mountainous area. OROROSSO Dosaggio Zero Trento doc OROROSSO Dosaggio Zero is a Reserve made exclusively from Chardonnay grapes ripened in the most ideal vineyards located in the typical zone of Valle di Cembra. The altitude of the vineyards, over 550m ASL, and the silty-sandy, deep soil of porphyric origin, impart to this wine a distinctive elegance and longevity. OROROSSO Dosaggio Zero perfectly embodies the defining characteristics of this territory, where the porphyry, a hard and tough volcanic rock, is not only the engine of the local economy, but is also the distinctive element in the lithological composition of the soil, which indelibly defines the characteristics of this wine. Of a deep straw-yellow colour, OROROSSO Dosaggio Zero has a refined and elegant aroma of ripe fruits which slowly fades into a more balsamic and spicy tone. The full-bodied and voluminous nature is underlined by the dense perlage. OROROSSO Extra Brut Trento doc OROROSSO Extra brut is the 48-month Reserva made in Cembra mountain wine-cellar. Produced from high quality Chardonnay and Pinot Nero grapes cultivated on the steep slopes of Valle di Cembra at altitudes over 550m ASL, OROROSSO is a true reflection of the unique and distinctive characteristics of its territory of origin. Of a deep straw-yellow colour, it has a refined and elegant aroma of ripe fruits, with a sensation of bread crust. The dense and persistent perlage results from a long and correctly implemented ageing on the lees. Type Extra Brut 80% Chardonnay vine; 20% Pinot Nero vine yard location High Valle di Cembra (TN) Exposure and altitude South-East, South; 550-700m ASL Soil composition Silty-sandy, loose, of porphyric origin Guyot; simple Trentino pergola Planting density 5,500 vines/hectare Vinification process Manual harvesting in early September; whole cluster soft pressing; static decantation of the must; fermentation at controlled temperature in stainless steel tanks; ageing on the lees in stainless steel tanks for about 6/7 months; secondary fermentation in the bottle; resting on the lees for 48 months.

The name DOSS24 comes from the local dialect word meaning hillock or small hill, with 24 being the number of months the sparkling wine needs to mature. Brut TRENTO DOC Brut Rosé TRENTODOC With its unique and distinctive climate, characterised by sharp fluctuations in temperature during the grape ripening periods, Valle di Cembra is the ideal zone for the production of sparkling wines. To pay tribute to this very special land, the Cembra mountain winecellar makes DOSS24 classic method. Produced from high quality Chardonnay and Pinot Nero grapes that ripen at an altitude of 600 m ASL on silty-sandy porphyric soil. Of a straw-yellow colour with pastel green hues, DOSS24 has a fresh aroma with ample notes of Golden Delicious apple, and a full, mineral, almost sapid taste. DOSS24 Rosé is produced from the best selections of Chardonnay and Pinot Nero grape harvested in the renowned area of high-lying Valle di Cembra. The silty-sandy, deep, stony soil and the sharp fluctuations in temperature characteristic of this elevated locality impart to this wine its distinctive features. Elegant and refined, DOSS24 Rosé is the ideal sparkling wine for enjoying light-hearted, entertaining evenings. Although conceived for younger consumers, it also fully meets the expectations of sector-experts and connoisseurs.
