Combine the batter ingredients together. 2. Deep fry until cooked and golden. SALSA 1. Boil corn and remove the kernels from the cob with a sharp knife. Combine with the green onion, tomato, oil, Knorr Lime Seasoning and salt. Refrigerate for use. TOBACCO ONIONS 1. Fry onions in deep fryer at 160ºC until golden and crispy. Chipotle Mayonnaise 1. Combine the Hellmann s Real Mayonnaise and Knorr Hickory BBQ Sauce and chipotle pure together and refrigerate for use. TO ASSEMBLE: Place cooked dawgs into warmed hot dog rolls and add salsa, 9

It just works. buffalo wings Teriyaki Chipotle Buffalo Wings Wings 3 kg Chicken wings 100 g Knorr Hickory BBQ Sauce 400 g Knorr Teriyaki Sauce 30 g Chipotle, paste 30 g Coriander 300 g Celery sticks Ranch Dressing 220 g Hellmann s Real Mayonnaise 250 g Labneh 1 g Parsley, dried 1 g Garlic, paste 5 ml Worcestershire Sauce 3 ml Vinegar Ranch Dressing 1. Add all ingredients into a mixing bowl and whisk together to combine. WINGS 1. Combine the wings, Knorr Hickory BBQ Sauce and Knorr Teriyaki Sauce, & the chipotle pure together and marinade overnight. 2. Bake in an oven tray at 180 C until cooked. 3. Serve with coriander, celery and Ranch dressing. TIP If you are looking to deep fry the wings, toss them in the sauce right after frying! 10

BBQ Beef ribs done right; the traditional American way. This recipe will make your ribs so tender and juicy, that you will never prepare ribs any other way! Smokey BBQ American Beef Ribs RIBS 2 kg Beef short ribs, cut into 5 cm pieces 3 g Smoked paprika 100 g Hellmann's Real Ketchup THE GLAZE 300 g Knorr Hickory BBQ Sauce 10 g Garlic, paste Coriander, garnish Coleslaw, to serve RIBS: 1. Combine ingredients and rub over ribs, marinate overnight. 2. Place ribs in roasting pan, roast in oven for 2-3 hours or until tender. Hickory GLAZE: 1. In a pot combine some pan juices from the ribs with Knorr Hickory BBQ 2. Sauce and garlic paste reduce over medium heat. 3. Brush glaze over ribs and place back in oven for 15 minutes or until caramelised Serve with slaw. 11

Season Steak, Cook over the flat top grill and thinly slice it. ROLL Cheese Sauce: 1. In a pot, sweat the white onion in butter. 2. Add 100 ml of warm water and Knorr Brown Gravy Base, mix. 3. Add all the grated. 4. Once the cheese melts, add the sliced steak back to the pan to warm through. 5. Fill warm bun with steak and sauce, top with sliced jalapenos and extra sauce and extra cheese. 13

Maple BBQ Ribs Sub RIB BURNT ENDS HOAGIE 3kg American rib, whole, deboned BRAISING LIQUID 1.2l Cola 10ml Liquid smoke 250g Brown sugar 100ml Apple cider vinegar 100ml Knorr Hickory BBQ Sauce 20 g Knorr Chicken Stock Powder 40 ml Knorr Concentrated Chicken Bouillon Mayo BBQ Sauce 200 g Knorr Tomato Pronto (6x2kg) 100 ml Maple syrup 20 g Chilli, paste 120 g Dark brown sugar 10 pc Long rolls 80 g Knorr Hickory BBQ Sauce RIBS: 1. Place the ribs in a large oven dish, combine with the braising liquid, cover and cook in a preheated oven for 4 hours at 140 C. 2. Remove and place in a new tray and allow to cool, dice into 3cm pieces and place back in the oven, remove once the meat starts to crisp up. 3. Place the diced beef into the maple BBQ sauce to coat and heat through. 4. Serve in long rolls with salad and fries. Maple BBQ Sauce: 1. Combine all ingredients together, blend well and simmer for 10 15 minutes until thickened. 2. Serve with the cooked ribs. 3. Serve with a side of fries and salad. TIP Use bagel & some fried egg for a breakfast option. 14

ROM COMBI O SMOKER Want to create succulent, smoky Southern brisket, like a boss, but don't have a YODA smoker sitting out the back? There s more than one way to skin a cat y all, and all it takes is a little ingenuity. One of the easiest ways to infuse your kitchen with the sweet aroma of Texas is to simply throw down some foil on the bottom of a large pot and toss in some pre-soaked wood chips, turn the heat up to max and get them chips smoking! Remove from heat when the smoke is doin' its thing, throw in your combi or conventional oven on about 150ºC. 1. 2. 3. You can create that beautiful in pretty much anything! Even a gutted out old fridge can do the job if you re a champion meat smoking machine! Lay your food out on the highest rack and close the door and let her smoke, baby, smoke! Your oven gets a slight smoky tan? It s worth it. Anyway, if you have a good combi, don t cry like a baby cause they clean themselves ready for you to do it all over again. You re gonna need to, 'cause your customers will be bashing down the door for more!

The secret to the Chipotle Chilli Beef Bowl is the meat cut. We recommend using beef chuck because of its versatility. BeefChipotle Chilli Beef Bowl CHILLI 50 ml Knorr Corn Oil 150 g Brown onion, chopped 2.50 kg Beef chuck, minced 50 g Chipotle, paste 50 g Knorr Hickory BBQ Sauce 100 g Garlic, puree 5 g Cumin, ground 200 ml Water 700 g Knorr Tomato Pronto 100 g Black beans Corn cobs, grilled LOW + SLOW CHILLI 1. Fry off the onions in the oil until soft, add the beef and brown slightly. 2. Add the chipotle paste, Knorr Hickory BBQ Sauce, garlic pure and cumin and cook for a further five minutes. 3. Add the water, Knorr Tomato Pronto and cook for two hours until the meat starts to become tender. Drain and rinse the beans and add, cook for an additional 30 minutes. 4. Serve with grilled corn. 17

There is a restaurant in the USA Deep South that sells over 500 serves a day of this dish but they use catfish. Unfortunately, we don t have catfish so use seabass instead and be happy! Louisiana Fish and Fries 1500 g White fish filet 200 g Plain flour 8 pc Eggs 20 ml Knorr Concentrated Chicken Bouillon 500 g Corn meal or polenta, fine To Serve 1500 g French fries 1500 g Coleslaw, salad LOUISIANA FISHH 1. 2. Knorr Concentrated Chicken Bouillon, then corn meal. Deep fry until cooked through and golden. 3. 18

This is simple fried chicken at its best, however the key to its success is in the process. We guarantee if you put this on your menu it will be one of your best sellers! hot fried chicken 4 kg Chicken Wings 400 g Yogurt 20 g Chilli, paste 10 g Knorr Chicken Stock Powder 50 g Knorr Thai Sweet Chilli Sauce FLOUR MIX Flour 300 g Smoked paprika 70 g Blue Cheese Dressing 60 g Blue Cheese 250 g Labneh 1 g Parsley, dried 1 g Garlic, paste 5 ml Worcestershire Sauce 3 ml Vinegar SLAW 150 g Red Cabbage, shredded 150 g White Cabbage, Shredded 50 g Red onion, sliced 330 g Hellmann s Real Mayonnaise 400 g Pickles, chopped Hot Fried Chicken, Slaw and Blue Cheese Dressing BLUE CHEESE DRESSING: 1. Add all ingredients into a mixing bowl and whisk together to combine. Chicken: 1. Combine the chicken wings, yogurt, milk, chili paste, Knorr Chicken Stock Powder and Knorr Thai Sweet Chilli Sauce together and marinade overnight. FLOUR MIX: 1. Mix flour, smoked paprika and the salt together, divide into two. Strain the milk marinade off the chicken and mix with one of the divided flour mixes to form a light batter. 2. Dip in the marinated chicken into the other divided flour mix then into the batter mix. Shake off excess batter and fry in hot oil 160 C for 10 minutes. Transfer to a plate, lined with paper towel. BLUE CHEESE DRESSING: 1. Combine all ingredients together and blend until smooth. SLAW: 1. Mix all ingredients and serve with the chicken wings and blue cheese dressing. 19

The Chicken Schnitzel is a timeless Classic that deserves a spot on your menu. SOUTHERN Southern Fried Chicken Schnitzel CHICKEN 10 pc Chicken breast 500 ml Full Fat Milk 200 g Yogurt 15 g Knorr Chicken Stock Powder BATTER 250 g Flour 5 g Paprika 5 g Garlic, powder 3 g Mustard, powder 2 g Black pepper, powder 4 pc Eggs, whisked COMEBACK SAUCE 250 g Hellmann s Real Mayonnaise 30 g Chilli, paste CHICKEN: 1. Add chicken to the milk, yogurt and Knorr Chicken Stock Powder and marinate for 3 hours. SCHNITZEL Batter: 1. Combine flour and spices in a bowl. Drain chicken from the marinade and place into flour mix, then into egg mix and back into flour. 2. Deep fry until cooked. 3. Serve and chips and comeback sauce.. Comeback Sauce: 1. Mix Hellman s Real Mayonnaise & chilli paste together. TIP Add smoky paprika to the batter for another level of flavour on this southern fried chicken recipe! 20

MAPLE COLA BRAISING LIQUID 200 ml Cola 100 ml Maple syrup 150 g Knorr Hickory BBQ Sauce 50 g Chipotle, paste 500 ml Water 4 pc Star anise 1. Combine all ingredients together, add to brisket. 2. Roast covered for 5 hours at 140ºC. Uncover for the last 30 minutes of cooking. DARK SUGAR PEPPER RUB 60g Dark brown sugar 5g Black pepper, coarsely ground 150g Knorr Demi Glace 1. Combine all ingredients together. 2. Rub over rump cap, roast covered for 3 hours at 140ºC. Uncover for the last 30 minutes of cooking. HONEY MUSTARD RUB 70 g Honey 70 g Wholegrain Mustard 200 g Colman's Dijon Mustard 40 ml Knorr Concentrated Chicken Bouillon 50 ml Oil 22 1. Combine all ingredients together. 2. Rub over deboned chickens then roast at 160ºC for 45 minutes or until cooked through.

Moisten with it, splash it, guzzle it, smother it, swim in it, but don t forget it, any meal is incomplete without a killer sauce! SAUCE BY THE LOVIN' SPOONFUL Sauce can be the crowning glory of a dish but get it wrong and they ll be serious consequences. Well, hopefully we can help you out here with a couple of recipes, so you can find inspiration for extraordinary sauces.

Chipotle BBQ Sauce 300 g Knorr Hickory BBQ Sauce 50 g Chipotle, paste 500 g Knorr Tomato Pronto 100 ml Apple cider vinegar Brown sugar 1. Combine all ingredients together, blend well then simmer for 10 15 minutes until thickened. 2. Serve with cooked beef short rib. Teriyaki Chipotle Marinade 200 g Knorr Hickory BBQ Sauce 20 g Chipotle, paste 600 g Knorr Teriyaki Sauce 1. Combine all ingredients together. 2. Marinate beef ribs for 24 hours then roast for 2 hours at 150 C. 3. Don t forget to baste every 15 minutes. 24
