Veg Christmas dinner wouldn t be the same without all of those tasty seasonal veggies. ember is prime time for root veg in particular parsnips, carrots and potatoes. They grow in abundance on the farm so don t worry, we won t run out! AT C R A I G I E S Try roasting your parsnips drizzled with honey for added sweetness, a great side dish on Christmas Day. On Boxing Day you could try a parsnip and carrot mash with your leftovers and the cold turkey. Add some Craigie s homemade chutneys and tuck in! Carve yourself an easy Christmas Dinner Placing your order nice and early is not the only way to a stress free Christmas, we ve pulled together some of our top turkey tips to keep you right 1. Sharpen your tools! Sharpen your knives ahead of Christmas day for easy carving! And of course we can t forget the sprouts! Try one of our oven ready Brussels sprouts side dishes with bacon, cranberry and walnuts. It s deliciously festive and if you think you don t like sprouts this dish will definitely change your mind! 2. On Christmas morning let the turkey come up to room temperature before putting it into the oven. For a Christmas Day starter we ve created a delicious Winter Parsnip and Lentil soup with some of our seasonal veg from the farm. 4. Remember the juices should run clear at the thickest part of the turkey when ready. Don t forget to add some delicious farm veg and sweet treats to your order 3. Don t forget to use your pop-up cooking timer if you have one this should be placed in the centre at the top of the turkey. 5. Don t forget, once cooked, allow to rest in a warm place for 15-30 minutes for a better carving experience. 6. Why not keep the turkey carcass to make some delicious homemade soup! It wouldn t be Christmas without a dessert, or two! Alongside our ever popular chocolate Yuletide logs this year we ll also be making After Eight cheesecakes and lemon and white chocolate roulades. We ll also have traditional Christmas puds, cakes and mince pies in the shop too. Tips, Turkeys & Trimmings WHAT MAKES GARTMORN TURKEYS SO JUICY AND TENDER? Gartmorn has been our turkey supplier of choice for the last 20 years. Why? Quite simply because their light, tender meat never fails to delight our customers. Every turkey is hand-reared on Roger and Sue s farm in the Ochil Hills and enjoys a true free-range environment. Gartmorn turkeys are a slow growing breed which are allowed to grow to full maturity to create a denser, more flavoursome meat. Oh - and did we mention that it s the preferred choice of Gleneagles Hotel! Boneless roasts 225g (1/2lb) raw meat per person Bone-in roasts 450g (1lb) raw meat per person HOW MUCH MEAT TO BUY PER PERSON TURKEY COOKING GUIDELINES Cooking times will vary depending upon whether you stuff your turkey or not and the performance of your oven but here is a rough guide: 1. Pre-heat the oven to 230 C/450 F/Gas 8 (or 210 C for fan ovens). 2. Cook your turkey at this temperature for the first 30 mins & then lower the oven temperature to 190 C/375 F/Gas 5 (or 170 C for fan ovens). Total cooking time will be approximately 30-35 mins per kg. 3. Approximately 30mins before the full cooking time, remove foil & turn the bird over carefully, using poultry forks, so the breast bronzes. 4. Juices should run clear when you pierce the thigh and an internal temperature of 70 C of 165 F / 74 C should be achieved.
