Employee of the Month July 2015 Gustavo Gonzalez Our Employee of the Month for July 2015 is Gustavo Gonzalez. Gustavo has worked at the Athenaeum for 17 years and he has been honored as Employee of Month several times in the past. Gustavo is a valued member of the stewards team. He also lends a hand to other departments as needed. His primary responsibilities include setting up event buffets and maintaining and polishing silverware. Gustavo also acted as both landscaper and builder during the Athenaeum herb garden re-design in 2011. Gustavo s precision and diligence make him the best choice for our Employee of the Month. Gustavo and his wife, Lourdes, have been married for 22 years and live in Pasadena with their five children. The Gonzalez family enjoys going to Dodger stadium to take in the beautiful view and enjoy Dodger dogs. Congratulations, Gustavo, on a job well done! (Marisu s Message Corner) September is the last full month that the Rath al Fresco remains open. In late July, plans for the Rath al Fresco Pavilion and Gardens were unveiled after the Board of Trustees Building & Grounds Committee approved the project and the architects conceptual renderings of the new building. The plan involves the construction of the Rath al Fresco Pavilion which will house the al Fresco kitchen. The addition will augment the functionality and space of the existing 1930 s kitchen which was last renovated in the 1960 s. Frederick Fisher & Partners, who designed the Annenberg Center on campus, are the architects. The surrounding space will be landscaped to accommodate al fresco seating. The $3.5M project is scheduled to be completed during the 2016 summer season. The architects renderings are featured below. On its fifth year, the Seafood and Crab Crack scheduled on Friday, September 18 has now become a favorite among members. Phelps Wood, a long-time member of the club, tells me that this is one of his favorite club events since it provides such a wide offering and array of freshly prepared cold and hot seafood entrees. He and his wife, Beverly, had the entire family last year with a separate table for the young grandkids. They intend to do the same this year. Make your reservations early as this event usually sells out. Go online to make your reservation at any time by logging into the member portal at: www.athenaeumcaltech.com. Last month, I met members Daniel and Susan Hayes as they were leaving the Main Dining Room after dinner. They lived in Pasadena some years back but moved outside of the area when they decided to retire early. Mr. Hayes shared some of his fond memories of Caltech and The Athenaeum. It was such a pleasure to hear all the delightful tales. So, as always, I look forward to seeing you all at The Athenaeum. Please drop by my office when you are next at the club. Executive Chef Kevin s Recipe Corner Butternut Squash Risotto Ingredients ½ cup extra-virgin olive oil 1 cup finely chopped onion 1 Tablespoon chopped garlic 2 cups Arborio rice 1 cup dry white wine 6 cups hot chicken or vegetable stock 1 butternut squash, one half baked in the oven and then puréed; the other half, peeled, cut into small dice, and sauteéd in a little oil and butter until tender ½ cup grated Parmesan 4 Tablespoons unsalted butter, cut into small pieces Directions 1. In a medium-size heavy saucepan, heat the olive oil over medium-high heat. Add the onion and garlic and sauté, stirring continuously, just until softened, 3 to 4 minutes. Add the rice and continue to stir, using a wooden spoon, to coat the rice with the oil. 2. Add the white wine and continue cooking, stirring often, until it has been absorbed by the rice. Pour in enough chicken stock to cover the rice completely, about 3 cups, and continue to cook, stirring often, until all the liquid is absorbed. 3. Pour in 1 cup more of the remaining stock and stir and cook until it has been absorbed. Repeat with 1 more cup. Add the remaining cup and cook, stirring, until the rice is al dente, tender but still very chewy, and most of the liquid has been absorbed. 4. Stir in the butternut squash purée, diced butternut and reduce the heat to very low so that the risotto doesn't simmer anymore. Stir in the Parmesan and butter to give the risotto a nice, creamy finish. Spoon it immediately into heated shallow serving bowls. Enjoy Cooking!
