However, teriyaki refers to more than just sauce; it s a Japanese cooking technique. Teriyaki involves broiling or grilling a protein that has been marinated in a mixture of mirin (a rice wine), sugar, and soy sauce. In Japan, they use this cooking style mostly with fish; but in the U.S., it s most often used with meat. DID YOU KNO? The word teriyaki combines two other Japanese words: teri, which refers to the shine provided by the sauce, and yaki, which refers to the cooking method of grilling or broiling.

The dish contains "the trinity," which refers to the combination of onion, celery, and green pepper. The trinity is commonly used as a base for flavor in Creole cooking.
