Chicken Tortilla Soup Hands On Time: 5 minutes Slow Cooker Time: 4-8 hours Pressure Cooker Time: 25 minutes 32 oz. chicken broth 2 cans diced tomatoes 1 can diced tomatoes with green chilies 6 oz. tomato paste 2 cups frozen corn 2 cups cooked, diced chicken 1 tsp. garlic powder ½ tsp. cumin 1/8 tsp. chili powder 10 corn tortillas Cheddar cheese, for serving Mix all ingredients together in the slow cooker, except tortillas and cheese. Cook on high for 4-5 hours or on low for 7-8. For the tortilla strips, cut the stack of tortillas in half, then slice them into 1/4 slices. Fry in hot oil in a skillet and drain on paper towels. Serve the soup topped with tortilla strips and shredded cheese. Pressure Cooker Version Mix all ingredients together in the pressure cooker pot, except tortillas and cheese. Set cook time to 25 minutes. Do a quick pressure release. Serving Suggestion: Breadsticks, Salad

African Pulled Beef Sandwiches Yield: 8-10 Servings Slow Cooker Time: 5-8 hours Pressure Cooker Time: 45 minutes African Pulled Beef Ingredients: 2-3 lb. chuck roast 3-5 cloves garlic, 1 whole and peeled, others crushed 1 tsp. cumin ½ tsp. ground red pepper (cayenne) ¼ tsp. allspice 1 onion, diced 1 jalapeno, seeds removed and diced 15 oz. can petite diced tomatoes Yogurt Sauce Ingredients: 10 oz. Greek yogurt 1 large cucumber, peeled and diced ½ tsp. dried mint Pita bread Cut one garlic clove in half and rub roast all over with it. Place roast and whole garlic clove in slow cooker. Add remaining pulled beef ingredients to the slow cooker, sprinkling spices directly on meat. Cover and cook on high 5-6 hours or low 7-8 hours. Remove meat from crock and shred with a fork. Return meat to the crock and stir to combine with juices from cooking the meat. For the yogurt sauce, stir yogurt, cucumber and mint together. Serve meat in pita bread with yogurt sauce. Pressure Cooker Version In addition to all ingredients listed for slow cooker, add 1/2 cup beef broth. Add all ingredients to the pressure cooker pot. Set for 45 minutes cook time. Do a quick pressure release. Remove meat from crock and shred with a fork. Return meat to the cooker and stir to combine with juices from cooking the meat. Serving Suggestion: Grapes, Veggies and Dip

Ham Steak with Hashbrown Casserole Slow Cooker Time: 5-8 hours 1 bag frozen, shredded hash brown potatoes 8 oz. sour cream 1 can cream of chicken soup ½ cup butter, melted Onion, chopped fine (about ½ a small onion) 1 cup shredded cheddar cheese (or a bit more if you like) 2 large ham steaks Mix all ingredients in the slow cooker, except ham steaks. Wrap ham in foil and place on top. Cook on high for 5-6 hours or on low for 7-8 hours. Serving Suggestion: Easy Peachy Fruit Salad Notes: Don t want to use cream of chicken soup? Melt 4 tablespoons of butter in a pan. Whisk in 4 tablespoons of flour and cook, whisking constantly, for a minute or two until golden. Slowly whisk in ¾ cup milk and ¾ cup broth and bring to a boil, stirring frequently. Use this in place of the cream of chicken soup in the recipe. Remaining onion can be used as a salad topper. Easy Peachy Fruit Salad Hands On Time: 5 minutes + chilling 21 oz. can peach pie filling 15 oz. can mandarin oranges 15 oz. can pineapple chunks 1 banana, coin sliced Stir everything together and chill until serving.

Tangy Sweet Pork Chops Hands On Time: 5 minutes Slow Cooker Time: 5-8 hours Pressure Cooker Time: 8 minutes 2-3 lbs. pork chops 14 oz. can jellied cranberry sauce 12 oz. chili sauce Place pork chops in slow cooker. Empty cranberry sauce into a bowl. Microwave 20 seconds at a time to melt it enough to combine with chili sauce. Stir the cranberry sauce and chili sauce together. Pour over pork chops. Cook on high for 5-6 hours or on low for 7-8 hours. Pressure Cooker Version Place pork in the pressure cooker pot. Empty cranberry sauce into a bowl. Microwave 20 seconds at a time to melt it enough to combine with chili sauce. Stir the cranberry sauce and chili sauce together. Pour over the pork. Set cook time for 8 minutes. Do a quick pressure release. Serving Suggestion: Easy Mashed Sweet Potatoes, Green Beans Easy Mashed Sweet Potatoes Cook Time: 1 ½ hours ½ - 1 sweet potato per person 2-3 Tbsp. brown sugar ¼ - ½ stick butter Salt and pepper, to taste Scrub the sweet potatoes. Place in a foil lined baking pan and stick potatoes with a fork several times each. Cover with more foil. Bake at 350F degrees for 1 ½ hours or until very tender. Slice potatoes in half, scoop out the middle and place in a bowl with brown sugar and butter. Smash and stir until well combined.

Sausage Jambalaya Hands On Time: 15 minutes Slow Cooker Time: 7-8 hours 1 large yellow onion, diced 2 cloves garlic, minced 2 celery stalks, diced 1 large red bell pepper, diced 4 cups crushed tomatoes 3 cups chicken broth 2 tsp. chili powder 2 tsp. Cajun seasoning 1½ cups uncooked brown rice 2 lbs. pre-cooked Andouille sausage, coin sliced In the slow cooker, stir together the onion, garlic, celery, red pepper and spices. Stir in tomatoes and broth. Stir in brown rice until thoroughly combined. Fold in sausage. Cook on low for 7-8 hours. Serving Suggestion: Roasted Broccoli and Red Peppers Roasted Broccoli and Red Peppers Cook Time: 20-25 minutes 2-3 bunches fresh broccoli, cut into florets 2 red bell peppers, cut into strips Olive oil Kosher salt Black pepper This is more method than recipe. Use the amounts you need for your family. Toss the broccoli and red peppers with a drizzle of olive oil. You want the veggies to be lightly coated with oil. It doesn t take very much oil. Sprinkle with seasonings and toss again. Place on a rimmed cookie sheet and put it in the oven at 350 degrees for about 20-25 minutes.

Chicken Curry Slow Cooker Time: 4-8 hours Pressure Cooker Time: 12 minutes 3-4 lbs. chicken thighs 1 medium onion, chopped 1 cup salsa 3 Tbs. curry powder 1 can coconut milk, unsweetened 2 cups rice, cooked Salt and pepper, to taste Put the chicken thighs at the bottom of the slow cooker. Mix the chopped onion, salsa, curry, salt and pepper. Pour the sauce mixture over the top and cook for 4 hours on high or 8 hours on low. Remove chicken to a platter and add the coconut milk to the slow cooker and mix well. Pour sauce over the chicken. Serve over rice. Pressure Cooker Version Place chicken, onion, salsa and curry powder in pressure cooker. Set cook time for 12 minutes. Do a quick pressure release. Remove chicken to a platter and add the coconut milk to the pot and mix well. Pour sauce over the chicken. Serving Suggestion: Peas, Naan

Mandarin Cheesecake Dessert Time: 20 minutes hands on + chilling 2 boxes cheesecake instant pudding and pie filling + milk to make pudding 1 can mandarin oranges drained well 1 pack fudge stripe cookies you won't need the whole pack Make the pudding according to the package directions. After pudding sets up in refrigerator, assemble in a round or square pan. Place layer of cookies on bottom. Add half of pudding. Top with oranges. Repeat layers.
