The Wine Classroom in the new Hatten Wines building offers an extensive training program ranging from Basic Wine Knowledge, Wine Appreciation, Wine and Food Pairing, Sommelier Programs, Restaurant Management Tools, Wine List Efficiency Management and Development, and an International Certificate in Wine Knowledge from the prestigious WSET (Wine & Spirit Educational Trust) from the UK. These programs are best suited for people with particular interest in wine, professionals working in the food and beverage industry, practitioners in the hospitality industry, students of tourism, hospitality and culinary, as well as entrepreneurs involved in wine distribution and services. Amateur Wine Training Series Syllabus *The program begins with a winery visit to witness the wine making process Basic Series 1 Basic knowledge of wine Basic Series 2 Wine Tasting Unit purpose The purpose of this unit is to assess candidate knowledge and understanding of wine production and give a short brief on wine history. An understanding of the process of the grape growing, the grape structure, major grape varieties, the harvest, the making of wine and the different categories of wine, label information in the bottle are discussed. Learning outcomes The candidate is expected to demonstrate knowledge and understanding of the following: - Short brief of wine history - Better understanding of grape and its growth - Knowing grape variety and its characteristic - Explain the wine making process - Knowing on the different wine categories - Understand proper wine - Read and understand wine labels Method of assessment Simple test with multiple choice and essay questions Practical: reading wine labels Training equipment LCD presentation Unit purpose The purpose of this unit is to assess candidate knowledge and understanding of wine equipment and its function and be able to practically use all wine equipment, such as type of glassware for different wines, decanter, etc. Provide knowledge on wine tasting methods and experience on tasting different kinds of grapes. Learning outcomes The candidate is expected to demonstrate knowledge and understanding of the following: - Identify different kinds of wine glass - Identify wine equipment and its function - Steps of tasting wine - Experience on the identification of different wine grapes Method of assessment Simple test with multiple choice and essay questions Practical: Wine tasting Training equipment LCD presentation All type of glass, decanter, wine opener, wine basket, wine cooler Wine with different kind of grape Sample of wine bottle, different kinds of cork

Basic Series 3 The Art of Serving Wine Unit purpose The purpose of this unit is to assess candidate knowledge and understanding on how to serve wine, understanding all equipment functions for service preparation and how to explain different kinds of wines Learning outcomes The candidate is expected to demonstrate knowledge and understanding of the following: - Identify different kinds of wine serving equipment required - Describe the step by step process of wine service - Open wine and Champagne bottles - Able to serve wine and Champagne with the standard operating procedures, applying the step by step process in accordance to the Court Master Sommelier standard Method of assessment Simple test with multiple choice and essay questions Practical: opening bottles and serving the wine Training equipment LCD presentation All type of glass, decanter, wine opener, wine basket, wine cooler, service tray, and napkin Full set up table for simulation of serving
