Preheat oven 160ºC 2. Peel and slice potatoes, lay in a greased 18cm x 28cm baking dish 3. Eye Fillet Coated in Potato Crust Serves: 4 Preparation Time: 15mins Cooking Time: 8mins 1 x 35g sachet McCormick Italian Herb Potato 4 x 180g eye fillet steaks 1 cup coarsely crushed toasted breadcrumbs 1 large potato (200g) 1 large onion, peeled 2 eggs 1. Season steaks with McCormick Twist and Taste Grinder Sea Salt and McCormick Twist and Taste Grinder Black Peppercorn and panfry in a hot pan for 3 minutes each side. Allow to cool slightly. 2. Combine breadcrumbs and McCormick Italian Herb Potato Seasoning in a large bowl, then grate in the potato and onion. Add the eggs and press well to combine. 3. Press this coating onto each steak then oven bake at 20C for panfry mushrooms in butter for 5-6 minutes. 4. Serve mushrooms topped with potato crusted steaks and drizzle with balsamic vinegar. Potato Roesti Serves: 4-6 Preparation Time: Cooking Time: 5 medium potatoes, peeled, parboiled and cooled McCormick Produce Partners Italian Herb Potatoes 1 egg 50g soft butter 2 tbsp oil 1. Grate cold parboiled potatoes into a large bowl. 2. Combine with McCormick Produce Partners Italian Herb Potatoes mix and egg, mix well. 3. Press mixture into 6 greased egg rings. Melt butter and oil in heavy based pan, heat 2 minutes. Place egg rings into pan. 4. Cook over medium-low flame until edges are crisp. Turn and cook for a further 5 minutes. 5. Serve with sour cream, chives and smoked salmon.
Grilled Potato Gnocchi Serves: 4 Preparation Time: 15mins Cooking Time: 10mins 3 large potatoes, peeled and diced 5 tbsp plain flour McCormick Produce Partners Sour Cream & Chives Potato Mash Extra plain flour for rolling Sauce 100g blue castello cheese 100g blue cheshire cheese (or gorgonzola) ½ cup light cream 1. Place potatoes in a saucepan of water and boil rapidly until tender. Mash and cool. 2. Whisk together the mashed potato, flour and McCormick Produce Partners Sour Cream & Chives Potato Mash pack contents to a soft dough. 3. Roll dough into small almond shaped balls using extra flour to prevent sticking. 4. Boil gnocchi in a large saucepan of rapidly boiling salted water until gnocchi rises to the surface. Remove and drain well, place gnocchi in a shallow baking dish 5. Whilst pasta is keeping warm melt the cheese with the cream in a small saucepan. 6. Pour sauce over the gnocchi and place under a pre-heated grill. Grill until golden. Serve hot.
Leek, Parsnip and Potato Frittata Serves: 6 Preparation Time: 8mins Cooking Time: 30mins 3 tbsp olive oil 2 parsnips, peeled and sliced 4 potatoes, peeled and diced 1 large leek, washed and sliced McCormick Produce Partners Creamy Scalloped Potato 5 eggs 1 cup light cream ½ cup light tasty cheese, grated 1. Preheat oven 180ºC 2. Heat oil in a large frying pan and sauté the parsnip, potatoes and leek 5 minutes until tender. 3. Remove vegetables from the pan and place in a 24cm square baking tin lined with baking paper. Allow to cool. 4. Beat together the McCormick Produce Partners Creamy Scalloped Potato mix, eggs and cream. 5. Pour egg mixture over the vegetables and sprinkle over the grated cheese. 6. Bake at 180ºC for 30 minutes until frittata is golden brown and firm. 7. Cut into squares and serve warm or cold with garden salad or roasted vegetables.
