Instructions The pizza stone can be used in a conventional oven for baking bread, biscuits, tortillas, pretzels, bagels, cookies and rolls. Excellent for heating and reheating ready made or frozen pizzas and baked goods. Retains heat to keep food warm for serving. Baking This all-natural stone requires no seasoning or conditioning. Simply wipe with a damp cloth before first use and allow it to dry thoroughly. Most recipes suggest pre-heating the stone for 15-20 minutes for even cooking and to reduce baking time. Preheat the stone by placing the cool stone in a cold oven. Heat the oven to the temperature indicated in the recipes, place the product on the preheated stone as directed. Because the stone always retains heat, always wear oven mitts while handling it. Place it in the serving rack to avoid heat damage to countertops or table surfaces. When cooking a frozen pizza, put the frozen pizza on the stone and allow them to preheat together in the oven. Prepare the pizza or other baked goods on a flat surface such as a cookie sheet or pizza peel. Lightly sprinkle the stone with cornmeal and slide the pizza or dough onto the stone, flour may be used although it can burn on the stone. Use and care The stone is freezer and oven safe. To prevent cracking, avoid going from extreme temperatures such as cold to the direct oven and from the oven direct to cold water. Do not place the stone over an open flame. Do not cut ingredients directly on the stone. Before cleaning allow the stone to cool completely. Then remove baked on foods and clean with damp, soft cloth. To avoid a soapy after taste, do not use soap or detergents. After washing allow the stone to dry thoroughly before using it again. Do not soak the pizza stone in water. The pizza stone will darken gradually and stain with use. This is part of the stones natural seasoning and will not harm the taste of the food. Handle the stone with care to prevent chipping or breaking. 2
Basic Pizza Recipe 1 package of active dry yeast 1 1/2 teaspoons of sugar 3-4 cups of strong white bread flour 1 cup of warm water 2 tablespoons olive oil 1 teaspoon of salt Method Dissolve yeast in water with sugar. Mix 2 cups of flour, salt and oil in a large bowl. Stir in the additional flour until the dough begins to form a ball and is easy to handle. Place the dough on a lightly floured pastry cloth and knead until smooth and elastic (8-10 minutes) Place the dough in a greased bowl, cover and let rise in a warm spot until its doubled in size, approx. 1 hour. Punch it down and knead it again. Allow it to rise for 20-30 minutes and preheat the pizza stone at 450 F/232 C. Roll the dough into a circle allowing 1/4 inches of space around the edges. Bake with toppings on a preheated Pizza Stone which has been sprinkled with cornmeal at 450 F/ 230 C for 25 minutes, or until the crust is golden. Note: Add your own toppings to create your perfect pizza! Gluten Free Pizza Dough 200g gluten-free bread flour 125ml semi-skimmed milk 3.5g dried yeast 1 ¼ tsp caster sugar 1/2tsp xanthan gum 1.2tsp fine sea salt 1 egg 1/4tsp bicarb of soda 1tsp cider vinegar Preheat the oven to 220ºC/425ºF/gas 7 and place the pizza stone in the oven to heat up. Heat the milk in a small pan over a low heat until lukewarm, then place 50ml into a jug with the yeast and sugar. Mix this well and then set it aside for a few minutes until the mixture has started to bubble. After you have set it aside, sieve the flour, xanthan gum and salt into a bowl and make a small hole in the middle of the mixture. In a separate bowl, combine the egg, 3 tablespoons of olive oil and the remaining milk, then pour it into the well, along with the yeast mixture. Bring the mixture together with a fork until it forms a smooth dough. In a small cup, combine the bicarbonate of soda and vinegar, then quickly knead it into the mixture. 3
Place the dough into a lightly oiled bowl, cover with a damp tea towel, then leave to prove in a warm place for around 1 hour, or until doubled in size. Once doubled in size, roll out until roughly 30cm in diameter and 2mm thick. If the mixture is too sticky, add a small amount of dough and roll out the dough repeat until the desired consistency has been reached. Place the pizza bases onto the preheated pizza stone and bake for around 20 minutes or until golden brown. Yeast Free Pizza Dough 350g plain flour 2 3/4 tsp baking powder 1 tsp salt 1 tbsp oil 170-225ml water Preheat the oven to 200c and put the pizza stone in. Mix the flour, baking powder and salt together in a bowl. Add the oil and 3/4 cup (170ml) water then stir until it forms a ball. If dough is stiff, add more water. It should be soft, but not sticky then knead on a floured surface for 3-4 minutes. Roll into the desired shape, add toppings, and bake at 200C for 15-25 minutes.
