MANZANILLA - Palomino Fino Average age under flor and in Solera 5-7 years. A variety of fino, aged entirely under a veil of flor and produced in the sea side town of Sanlúcar de Barrameda. Manzanilla means chamomile because of its resemblance to tea but is made the exact same way as fino. Predominantly enjoyed as an aperitif, it also pairs well with food. VALDESPINO Manzanilla deliciosa en rama. 15% alc 375ml The Valdespino Family has been involved in sherry since 1430, making them the oldest sherry bodega still in production. This limited edition release is bottled in the spring when the flor is at its thickest; it is unfiltered resulting in a manzanilla with much more flavour. Concentrated notes of yeast, almonds and apple. LA GUITA Hijos De Rainera Pérez Marin. 15% alc 750ml Founded in 1852 by Domingo Pérez Marín, this winery is dedicated to the ageing and production of this single-genre wine, La Guita. It is the most consumed manzanilla within Spain and rightly so. Light, crisp and refreshing. PAPIRUSA Solera Reserva, Lustau. 15% alc 750ml Named after Mr Emilio and the Lustau Family s favorite Opera (Zarzuela) this is a classic-style of Manzanilla, showcasing dry carbon, sea breeze, salinity minerals and granite, hints of green apple, nutmeg, lemon pith with a wonderful long, dry finish. PASADA PASTRANA Javier Hidalgo. 15.5% alc 750ml Unique manzanilla made with grapes from the Hildago family-owned single vineyard dating back to the 1700s. Aged in American Oak barrels for around 12 years, which is 6-8 years more than usual. Very special, waves of nuttiness and hint of green olives, deeper than a classic manzanilla. EQUIPO NAVAZOS, La Bota de Manzanilla 42. 15% alc 750ml Re-interpreting what we know as sherry, the Equipo team hand-selected sherry butts that have been sitting in various bodegas throughout Jerez and Sanlucar untouched, harnessing the personality of the wines with limited filtration and careful handling, they have produced limited editions of new age sherry that has the wine world very excited. This is the sixth release of the same solera, from Miguel Sanchez Ayala in Sanlucar de Barrameda. Delicate, aromatic, salty, and intense with a touch of smoke. FINO - Palomino Average age under flor and in solera 3-6years Fino meaning fine in Spanish is the driest and palest of all the styles, perhaps the most recognized but certainly one of the most popular. Fino is fortified to 15% with an aim to develop the flor. The flor is what gives fino its characteristics and uniqueness in sherries and what separates it from other wine. The 3 towns fino is produced in are Jerez, El Puerto de Santa Maria and Sanlúcar de Barrameda. TÍO MATEO, Marques del Real Tesoro. 15% alc 750ml Real Tesoro has been an iconic winemaker for the past 200 years. Bought in 1985 by the group Estevez. Fresh and light with a saline touch and bitter almonds on the palate. TÍO PEPE FINO en rama Gonzalez Byass. 15% alc 750ml en rama bottled unfiltered in the third week of April, when the flor was at its thickest. The en rama brings us as close as possible to tasting the wine directly from the cask. Aromas of bread yeast, hints of iodine and peat, long and wonderfully crisp finish. EL MAESTRO SIERRA, Jerez De la Frontera. 15 % alc 375ml A master carpenter who built sherry barrels for the noble sherry houses, Jose Antonio Sierra turned his hand to sherry production and in 1832 established the house. After constant struggles with the Noble houses domination he established his business as a leading high quality producer. Now managed by 3 dedicated ladies, El Maestro has re-entered the sherry world and are once again a leading boutique producer. Yeasty with salty notes, the palate is dense with bright fruits. Bottle 338 Bottle 490 Bottle 520 PALMAS RANGE Gonzalez Byass. 15% alc 500ml The Palmas range consists of four sherries of different ages, from casks with abundant growth of flor, the bloom of yeast bacteria that covers the surface of fino sherries in cask and protect the wine from over oxidation. The name refers to the palma chalk mark made by a cellar master on a fino cask to indicate those casks - highly prized for their flavour - in which the Flor grew particularly well. It is rare to find a good covering of flor in wines more than 10 years old. All bottled without filtration or clarification. UNA PALMA 6 year-old, dry sherry carefully selected from just four casks of Fino still maintaining a good layer of flor. Savoury with almond, brioche and honey on the nose. Dry, salty and oaky and a long finish on the palate. Bottle 575 DOS PALMAS 8 year-old, dry sherry carefully selected from just two casks of Fino still ageing under a layer of flor. Deeper and more complex on the nose. Stone fruits minerality and smoky lapsang souchong nuances. Bottle 610 TRES PALMAS A fine and rare 10 year-old sherry, a single cask was selected that still retains a thin veil of flor after a decade in the cellar. Roasted hazelnuts and smoky notes. Rich, preserved lemon and cinnamon on the palate. Bottle 999 7

EMILIO HIDALGO La Panesa Especial. 15% alc 750ml A unique aged fino that spent its time under flor for an average age of 15 years. This fino is one of the rarest and most wonderful of wines. Constant attention towards the care of and replenishment of nutrients for the flor show true artisanship and dedication towards producing truly great Sherry. Very dry, has weight and nuttiness with a crisp mineral finish. FINO - AMONTILLADO CUATRO PALMAS Fino Cuatro Palmas is an extremely rare, 46 year-old sherry, now technically a fine, old amontillado. Known as the Museo Solera, Cuatro Palmas, the fourth and rarest wine, is around 40-47 years old and was drawn from one of five unique barrels in the Gonzalez Byass bodega. With one cask bottled each year, there remain only three future releases of this exceptional sherry. Butterscotch, coffee, figs and Christmas spices with citrus peel. Bottle 1750 Bottle 1850 AMONTILLADO - Palomino Aged in solera Begins its life as a fino, where if a layer of flor does not develop during the solera maturation it becomes amontillado, fortified between 16 and 22% so that it does not oxidize too quickly. The style is in between a fino and an oloroso. It is fuller and darker than fino (amber colour) with a smooth texture on the palate, hazelnuts and nuances of sea salt. DON JOSE Very Old Amontillado, Jose de Soto. 20% alc 750ml Founded in 1771 in Jerez de la Frontera. In 1988, de Soto Joined the William Garvey Group, another important and old established sherry producer. All their sherries are aged in American oak barrels. Full, toasted hazelnuts, dried fruits, walnuts and some sweetness. Los Arcos Dry Amontillado, Lustau. 18.5% alc 750ml Amber in colour, Nutty aroma on the nose, Light, soft and round on the palate, with a long aftertaste. ALMACENISTA Amontillado Del Puerto Gonzalez Obregon 1/10, Lustau. 18.5% alc 500ml Almacenista are sherries from small bodegas that decided to sell to other producers, Lustau decided to keep them untreated and then bottle them. They keep the name of the original owner on each one they buy. This one is matured in a small solera of 21 barrels. Start as a manzanilla and then put into another solera which is aged into the amontillado, creating a kind of double-solera system. Aged in a small solera of 10 barrels situated in El Puerto de Santa Maria. Just off dry-style, toffee, apple and roasted nuts notes on the palate, savory and soft texture. LA CIGARRERA. 17% alc 750ml Established in 1758 in Sanlucar de Barrameda. They use to sell to the famous sherry houses but bottling their own since 1997. La Cigarrera, the name of the bodega refers to the cigarettes that the women use to sell on the sidewalks in Sanlucar. From a solera aged for 6 years in American oak cask of which 4 years under flor. It has a light caramel colour. Fresh, nutty and salty character. Wellbalanced. Amazing value for money. Bottle 550 Bottle 605 Bottle 680 Bottle 700 8

DEL DUQUE 30 years solera, Gonzalez Byass. 21.5% alc 750ml Del Duque solera started in 1835 with 16 butts bought by the Duke of Medinaceli. With more than 30 years of aging in oak, this aged amontillado is concentrated with notes of delicate dried fruits and spices. AMONTILLADO 37, Equipo Navazos. 18.5% alc 750ml All started in 2005, when a group of sherry lovers discovered several dozen butts of an exceptional fine old amontillado that has gone by 20 years unsold. The wines are bottled in limited series, in successive numbered editions of dated releases, with the date of each withdrawal stated on the label. This enables a following of their evolution. With only 3000 bottles made, this amontillado 37 is an average of 18 years. Tresillo 1874 (Viejo), Emilio Hidalgo. 20% alc 750ml Emilio Hidalgo was founded in Jerez in 1874 and is still managed by the fifth family generation. This 50 years of age amontillado, is a very small production of 4000 bottles per year. Full and very elegant with hazelnuts, earthy and smoky overtones, a citrus peel acidity and creamy texture. Bottle 1150 Bottle 1850 Bottle 2400 OLOROSO - Palomino Aged in Solera Shows from the very beginning that it will be destined to a more oxidative style. It is fortified initially at 17% and up to 22% to prevent any development of the flor and for the wine to age slower in constant contact with oxygen as it goes through the solera system. The darker the wine the longer it has been aged. Warm, round and powerful. Nutty character with balsamic, tobacco and leather notes. EL MAESTRO SIERRA, Jerez De la Frontera. 15yrs 19% alc 375ml Founded in 1832 in Jerez, a small producer that has been buying its grapes from the same producers for decades. The soleras at the winery are easily over 60 years old and some close to 100 years old. Rich texture, nutty with exotic spices. FARAON, Javier Hidalgo.18% alc 500ml Since 1792, family own in Sanlucar de Barrameda and use grapes from their own vineyards. Now the sixth generation Javier Hidalgo. This oloroso is matured in American oak for 12 years. Walnuts and woody aromas with a hint of sweetness. Ripe and elegant on the palate. DON JOSE MARIA very old Oloroso, Jose de Soto. 20% alc 750ml Old, established sherry producer, part of the William Garvey Group. Aged between 10 to 15 years. Full-bodied it has an amontillado character but the weight of an oloroso. Slightly savoury, dried fruits and ripe on the palate, with elegance. Bottle 550 Bottle 500 Bottle 640 9

ALMACENISTA, Pata de Gallina Garcia Jarana 1/38, Lustau. 20% alc 500ml From a solera of 38 barrels of the small bodega Juan Garcia Jarana in Jerez de la Fontera. Bottled and sold by the negociant house Emilio Lustau. Aged about 20 years in solera. Aromas of tobacco, toasted almonds with a caramel finish. VILLAPANES, Emilio Hidalgo. 20% alc 750ml A family-own bodega since 1874, located in Jerez de la Frontera. Aged for 20 years. Elegant with toffee, fig and orange peel characters. Concentrated and spicy with a long finish. VORS 30 YEARS OLD, Lustau. 20.5% alc 500ml One of the most awarded bodegas in Spain. This is a result of a selection of the best cask out of 10 which are aged in a solera founded in the 1920. The wine is under V.O.R.S. (very old rare sherry) category. Intense with aromas of nougat, apricot and plums. VORS 1/14, El maestro Sierra. 22% alc 750ml Only abour 400 bottles made V.O.R.S. (very old rare sherry). From 14 butts that have spent a minimum of 50 years in solera system. Earthy character, mandarin, roasted walnuts and eastern spices. Bottle 660 Bottle 1550 Bottle 1990 Bottle 2500 PALO CORTADO - Palomino Aged under flor and in solera Initially aged under flor to become fino or amontillado. It then loses its flor and begins aging oxidatively as an oloroso. Fortified between 17% to 22%, It results of a wine with the richness of an oloroso and the delicate bouquet of the amontillado. It s actually a very rare sherry. Has citric notes of bitter orange and lactic notes suggestive of fermented butter. Smooth, delicate and aromatic notes on the palate. 22nd SHIP, The Lost Ship, Gonzalez Byass. 20% alc 750ml Our own label for our sister restaurant 22 Ships, usually called Leonor. It has been aged for 12 years and has delicate aromas of vanilla, hints of orange and toasted hazelnuts. Smooth on the palate with spices and a long finish. ANTIQUE, Fernando de Castilla. 20% alc 500ml Located in Jerez, famous for making brandies using only alambic distillate of selected white wines. Started in 1972, independent sherry house with the aim of producing the best brandy in Spain some years later the line of sherry was added. They have 2 range of sherries, the Classic which is the authentic-style and the very old and limited production is the Antique. The amount of sugar is at list 212g/L and typically between 300 to 500g/L, it means the fermentation will only be partial. The wines usually display flavours of chocolate, coffee and spices and has a syrupy texture.
