Dear Possum Fest Cook, As this event has grown over the past 17 years, the organizers have struggled to meet the demands of patrons who visit and are disappointed that they were not able to taste, by way of purchase, the various foods being cooked. We empathize because as organizers we usually have a connection and are able to sample your fabulous creations The Real Taste of Possum Fest will grant our patrons their wish and at the same time provide you the opportunity to make a little extra money! The items you make available are your choice. Cook up some extra chili, beans, brisket, ribs, whatever. Hot dogs, sausage-on-a-stick, frito pie, cobbler, that s OK to!! You are responsible for containers for serving. SELL OF ALCOHOIC BEVERAGES ARE STRICKLY PROHIBITED! On both Friday and Saturday patrons will be asked to make a $1.00 donation per ticket(s) that will be sold at a central location in Possum Gulch. You will set your own prices for items you choose to exchange the coupon for (in $1.00 increments). You should make a menu board available. Your cook spot will be identified and numbered as a participant in the Real Taste of Possum Fest by the Possum Kingdom Chamber of Commerce. At the conclusion of the event you will turn your tickets into the Chamber office where they will be counted and your percentage of 50% will be presented to you in cash. POSSUM FEST 2011 RULES & REGULATIONS Please read and keep these rules and regulations!!!!! 1. COOKED ON SITE & OPEN FIRES - No dug pits will be allowed. Any and all meat or meats that are to be judged will be cooked from scratch within the constraints of the event. Pre-cooking will not be allowed either on or off cook-off site prior to start of the cook-off. 2. MULTIPLE ENTRIES PER PIT - The judging committee recognizes that there may be times where more than one cook will cook on a given pit. Multiple entries in the same category by the same cook shall not be allowed. Multiple entries from the same piece of meat shall not be allowed. It will be the responsibility of the head judge to monitor and handle this in a professional manner. 3. SANITATION - Cooks are to prepare and cook in as sanitary manner as possible. Cooking conditions are subject to inspection by the judging committee. 4. TURN IN REQUIREMENTS Pick up entry container(s) at 10:00am, Saturday from the Chamber kitchen. Make sure there is a ticket on the bottom of your container(s) and keep your half of the ticket stub. Turn in all entries at the Chamber kitchen for judging. See back page for turn in times. No marking or garnishing containers allowed. 5. CATEGORIES - Please recognize the quantities to be turned in. BRISKET - Turn in eight (8) slices PORK BUTT - Turn in eight (8) pieces RIBS - Pork (baby back, spare, etc.) Turn in (8) ribs, cut apart MEAT ENTRIES - You may cook with sauce but DO NOT add sauce, marinade, sop or juice to meat or container once the meat is prepared for turn-in. No garnishing, markers or sauce is allowed in the container with the meat entries. BEANS - Dry pinto beans. No garnishing is allowed in the container with the bean entry. Prepared & cooked on site. CHILI - Any meat that is USDA inspected. No garnishing is allowed in the container with the chili entry. Prepared & cooked on site. BLOODY MARY - No decorative items will be allowed in the drink container. No plastic, decorative items, i.e.; plastic ice cubes, umbrellas, etc. will be allowed in drink containers. You may garnish with vegetables, fruit or any type of food product. Prepared on site. SALSA - No garnishing allowed. Prepared on site. COBBLER Any type of fruit. No garnishing allowed. Prepared & cooked on site. CHICKEN CHALLENGE Enter your favorite chicken dish cooked on site. Skewered, fried, grilled, appetizers, soup, pasta we don t care. Judging will be done at your site by volunteers from the crowd, prepare for as many as ten. MARGARITA CHALLENGE Self explanatory, mix up what you think is the best. Judging will be done at your site by volunteers from the crowd, prepare for as many as ten. 6. Cooks spaces will be allotted on a FIRST-COME FIRST-SERVE BASIS. You must be entered as a cook to take a space. 7. All RV hook-up electrical boxes will be locked. There are a LIMITED NUMBER OF ELECTRICAL HOOK-UPS AVAILABLE @ $15 PER DAY which will be monitored. NO ELECTRICAL PREPAYS. Check in at the Chamber office to pay electric and have the electric box opened. Locks tampered with will incur a $50 fine. 8. Entries and entry fees must be in by Monday, September 26, 2011. The cooking area is located at the Chamber of Commerce Visitors Center 362 N. FM 2353, Graford, TX 76449 (next to the East Side Volunteer Fire Dept. & EMS building).
