Low fat blueberry muffins Ingredients 1-3/4 cups cake flour 1/3 cup sugar 2-1/2 tsp baking powder ½ tsp salt 1 cup fresh blueberries rinsed and drained ¾ cup skim milk ¼ cup egg substitute 1/3 cup applesauce 2 eggs whites whipped to soft peaks How to make Preheat oven to 400 degrees F. 1. Banana muffins Lemon muffins. 150g of plain flour, 2x5ml spoon baking powder, 25g of caster sugar, 1 and a half-teaspoon of salt, 1 standard egg, beaten 125ml of milk, 4x15ml of spoon corn oil, 2 bananas 1 tablespoon of brown sugar Cooking time: 25 minuets Oven: 200 digress, 400digress, gas mark 6 How to make them: Grease 14 16 deep patty tins, sieve together the flour, baking powder, sugar and salt. Add the egg, milk and corn oil and beat to a smooth batter separately, mash the 2 bananas and add one tablespoon of brown sugar. Add this to the mixture and then spoon the mixture into the grease patty tins so that they are 2 thirds full. Bake in a moderately hot oven for 25 minuets or until they are golden brown. Allow to cool for about five minuets, then split and serve warm, with butter. Heat in oven to 400 degrees F (250 degrees C). Grease bottom only of 12 muffin cups or line with baking cups. 2. In a medium bowl, combine flour, sugar, baking powder, lemon zest and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.) 3. Fill cups 2/3 full. In a separate bowl, stir together milk, egg and butter. Stir egg mixture into flour mixture just until combined. Fold in chopped apples. Spoon batter into prepared muffin cups.

2 kiwi fruit 16 small washed strawberries A vegetable peeler A few cocktail sticks 8 canned apricot halves in natural juice, drained and halved 16 pieces of pineapple, fresh or canned in natural juice Dip: 220g/8oz low fat natural from formage frais 1tsp of almond essence Method: 1) Peel the kiwi fruit using a vegetable peeler and cut into 8 equal pieces 2) Tread 1 piece of each fruit onto 16 cocktail sticks or small skewers. 3) For the dip, mix together the fromage frais and almond essence and serve with the mini kebabs. Ingredients 2 hamburger buns, 30g butter, melted, ¼ cup tomato ketchup, 12 thin slices of salami or ham, 8 thin slices of cheese (about 5x2cm), 1 teaspoon dried oregano. Method: 1. Cut the hamburger buns in half. 2. Brush the 4 halves with melted butter. 3. Toast lightly under the grill. 4. When you take the halves out of the grill leave it on. 5. Brush toasted halves with tomato ketchup. Top each half with 3 slices of salami or ham. 6. Put 2 slices of cheese on top of salami/ham. 7. Sprinkle a little oregano on top. 8. Baked Spanish Omelette Ingredients 1/2 cup of tomato sauce 1/4 shredded mozzarella Cheese 1 small onion, sliced into Rings 1 green bell pepper, chopped 1 sliced pepperoni sausage 1. Margarine for greasing 2. 1 onion 3. 2 medium-sized potatoes 4. 2 tablespoons of olive oil 5. 1 clove of garlic 6. 100g (4oz) frozen peas, thawed 7. 150ml (1\4 pint) milk 8. Salt and ground black pepper 9. A shallow 20cm (8 in) ovenproof dish. Instructions 1. Spread bottom half of bagel with tomato sauce; add cheese, onion, bell pepper and pepperoni. Place the other half of bagel on top. 2. Preheat toaster oven to 425 degrees. 3. Place bagel in preheated toaster oven and toast for about 10 minutes, or until the bagel is brown. 1. Turn your oven on to 180oC, 350Of, and gas mark 4. Dip a paper towel in some margarine, and then rub it over the inside of the dish. 2. Peel the onion and cut it finely. Peel the potatoes and cut them in half. Cut them in 1cm slices. Cut the slices into cubes. 3. Heat the oil in a frying pan over a medium heat. Add the onion and potato and cook for four minutes until they begin to soften.
4. Peel and crush the garlic. Add it to the pan and cook for two more minutes until the onion and potatoes begin to brown. 5. Take the pan off the heat. Spoon the onion and potato into the bottom of the dish spreading it out evenly. Add the peas too. 6. Break the egg into a small bowl. Beat them with a fork, and then add the milk and a little salt and black pepper. 7. Pour the beaten egg over the vegetables in the dish. Bake the omelette in the oven for forty five minutes until it has set. 8. To check that it is cooked, push a knife into the middle of the omelette. If lots of liquid seeps out cook it for a few more minutes. 9. Run a knife around the edge of the dish to loosen the omelette. Then cut it into quarters. Use a spatula or fish slice to serve it. Summer Fruit Sizzle Preparation time: 5min Cooking Time: 5 Min Ingredients ½ teaspoon butter ½ cup Blueberries ¼ cup maple syrup Dash of nutmeg Method 1) In a small Skillet, melt the butter over a medium heat.
