This is my fi rst trip to the country, but I was so busy that I did not have time to learn some information about the country. To make up for this, I tried to learn some quick facts at the airport and hotel. Republica Dominica is located in the Carribean, a neighbor of Haiti, and has a total area of 18,810 square miles. The population is about 10 million and includes 1.5 million people from Haiti. This is an underdeveloped country with rich natural resources and long, beautiful beaches. There are a lot of developers and investers from Canada, USA, France and Russia. They are building resorts, casinos and supermarkets. [continue on page 6]

INGREDIENTS 35 OREO Chocolate Sandwich Cookies 6 Tbsp. butter, melted 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened 1/4 cup sugar 3 cups plus 2 Tbsp. cold milk, divided 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided 2 pkg. (4-serving size each) JELL-O Vanilla Flavor Instant Pudding & Pie Filling 1/3 cup peanut butter TammyS' Recipe INSTRUCTIONS PLACE cookies in food processor; cover. Process to form fi ne crumbs. Transfer to medium bowl. Add butter; mix well. Press fi rmly onto bottom of 13x9-inch dish. Refrigerate 10 min. Meanwhile, beat cream cheese, sugar and 2 Tbsp. milk in separate bowl with electric mixer on medium speed until well blended. Add 1-1/4 cups of the whipped topping; mix well. Spread over crust. POUR remaining 3 cups milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until well blended. Add peanut butter; mix well. Spread evenly over cream cheese layer. Let stand 5 min. or until thickened. Top with remaining whipped topping; cover. REFRIGERATE at least 4 hours before cutting into pieces to serve. Store any leftover dessert in refrigerator.

People in Republica Dominica seem friendly, honest, calm and very relaxed. On my travels, I always saw people sitting in front of their home or hut doing nothing! I wonder what they do for a living? The traditional food is rice with beans, chicken, beef, pork, seafood, vegetables and fruit. I liked the food because some of it was similar to chinese food. I really enjoyed the freshness and variety of the fruit. Republica Dominica is a haven for young people. Please see the picture of two girls riding on their motor bike, each carrying a bottle of beer?!? This was a short business trip. Unfortunately I did not have any time to visit those famous beaches, but I will defi nitely experience them on my next visit. Bob

Sale Ends October 31st Harvest Your Herbs Fall is here and to enjoy the fresh herbs from your garden, harvest some of them. To store them fresh, discard damaged leaves, wash and shake off the excess water. Loosely wrap your herbs in damp paper towels and place in plastic bags. Change the paper towels every few days and keep these herbs in the warmest part of your refrigerator. Most herbs last one week. Another way to preserve your herbs is to wash them and puree them with a little olive oil and then freeze in ice cube trays. Then they are available for fresh fl avor in your soups and sauces as needed. Also you can make bouquets of fresh herbs. Bundles parsley, oregano, basil and thyme and tie sprigs with string and hang near your cooking area for easy usage. In the photo I tied sweet basil, oregano, lemon thyme and cinnamon basil. Donna Growing Bamboo in in continuation of last month s article we want to expand on bamboo history and information. Crystal How It's Grown: Bamboo grows in an invasive manner, with the roots quickly forming an underground network that is mostly self-sustaining. Nutrients from the leaves pass down the culms (visible stems) right down to the rhizomes, so that the grove remains alive even if the bamboos themselves die out. In fact, the effort is often on controlling bamboo growth than propagating it. Bamboo growers either prune the culms or install a physical barrier to keep it from invading adjacent lots. The culms are the parts commonly used in manufacturing. After harvesting, the stems are cut lengthwise, boiled, and milled at the edges to fl atten them out. The strips are then glued together, either edge to edge or face to face. In the former style, they are usually laminated together in three layers to make them thicker and sturdier. Finally, they are given a fi nal pressing and milling to ensure structural bonding, and sometimes carbonized exposed to high temperatures just below burning for a richer, darker fi nish. The natural color is pale yellow to medium brown, and is equally attractive.

Place a small squash or pumpkins in glasses and place near a large gourd or squash with silk leaves for accent on a hutch or table. Use an urn or antique-looking vase as a centerpiece and place pumpkins, gourds and leaves in it for a colorful touch. Make a sculpture of pumpkins and squash to place on your lanai or at the front entry to welcome guests. You could even make a topiary using pumpkins and squash. Placed in a large urn or pot and accented with colorful berries, moss and foliage this would add a nice decorative touch to any home. To have the pumpkins last longer, spray with paint or clear coating spray and keep out of the sun. Take time to enjoy Autumn...
