Recipe Title: Chicago-Style Pan Pizza Submitted by: Sara Serving size: 1 large slice Thawing required: yes April 2016 Recipes 1 loaf frozen bread dough (1 lb) or 1 frozen pizza dough, thawed 1 lb. bulk Italian sausage 2 cups shredded part-skim mozzarella cheese 1/2 lb sliced fresh mushrooms 3-4 tablespoons oil 1/3 cup dry minced onion 1 tsp garlic powder 1 tbsp dried Italian seasoning 2 teaspoons oregano 1/4 cup tomato paste 1 (28 ounce) can crushed tomatoes (can use tomato sauce in place of crushed tomatoes or use a combination of both if desired) 1 teaspoon salt 1 cup grated Parmesan cheese 1. In a large skillet, cook sausage over medium heat until no longer pink; drain. 2. In a saucepan, heat the olive oil; sauté the mushrooms, onions, Italian seasoning and oregano for about 2-3 minutes, stirring until soft but not brown. Add garlic powder and sauté for 1 more minute 3. Add in the tomato paste; stir and cook 1 minute. 4. Add in the remaining ingredients; cook and simmer on low heat for 1/2 to 3/4 hours, stirring occasionally, adding salt or sugar if needed (the longer you cook this sauce the thicker and richer it will be!) Night before or day of, thaw the pizza dough: *Spray your 9 13 pan with cooking spray, then place frozen dough in pan. Cover with sprayed plastic wrap and thaw overnight OR thaw on the counter for 2-4 hours. *After the dough is thawed, spread it in the bottom of the pan leaving a thick crust along the sides. You probably won t be able to get it to the edge the first time, so let it rest 10-20 minutes, then stretch it again (be sure to patch up any holes that you might tear in the bottom). *Cover the pan once again and let the dough rise while you preheat your oven at 350. *Pre-bake the crust for 5-10 minutes. * Place in the ingredients in the crust in this order: Sprinkle with sausage. Top with mozzarella cheese. Spoon pizza sauce on top Sprinkle with Parmesan cheese. then bake for 20-25 minutes, or until crust is golden brown. Suggested Sides: green salad or fresh veggies 1

Catalina salad dressing 12 oz. jar of apricot preserves 1 pkg. dried golden onion soup mix 2 cups long- grain rice (not instant) Mix the Catalina dressing, apricot preserves, and onion soup mix until well combined. Add chicken 1. Preheat oven to 350 degrees F. 2. Place thawed chicken and sauce in a 13 x 9 baking pan, making sure chicken is well coated. 3. Bake uncovered for 45 minutes or until done. rice: Bring 4 cups water to a boil, stir in rice (2 tsp butter and salt optional), REDUCE HEAT, cover and simmer for 15 minutes. Worcestershire sauce Mix Well, form into football shape. Thaw pork chops and sauce. Spray 3-quart casserole and place pork chops in it. Pour mixture over chops. Bake at 350 degrees for 1 hour. Suggested Sides: Rice and veggies Recipe Title: Cranberry Orange Chicken with Jasmine Rice Submitted by: Andrea 3 cups water for Jasmine Rice (rice included) 4 chicken breasts-butterflied 3/4c craisins 1/4c sugar 1 small red onion 1t orange peel 1/2c orange juice 1/8t cinnamon 1/8t ginger Mix all ingredients and pour over chicken breasts. Freeze. Rice included as a side. Thaw in refrigerator for 1-2 days. Pour in baking dish, cover with foil. Bake at 375 degrees for 1 hour. Cook 1.5 cups Jasmine Rice with 3 cups of water. Stir in onions, peppers, ham, jack cheese 3. Break apart potatoes, gently stir into cheese mixture. 4. Place into freezer bag 5. Measure cheddar cheese, and bag 6. Suggested Sides: Veggies and hot rolls Recipe Title: Tailgate sandwiches Submitted by: Alisha 8 kings Hawaiian buns 18oz thinly sliced ham 6-7 slices Swiss cheese Sauce: 1/2 cup butter 1.5 tsp Worcestershire sauce 1.5 tsp Dijon mustard 1.5 tsp minced onion Prepare the sauce by melting the butter and adding the ingredients. When the mixture is melted, let cool than place in bag. Prepare ham and cheese sandwiches and place in pan. Thaw sandwiches and re melt butter either in microwave or by placing bag in hot water.
