1. Slow Cooker Taco Soup Yield: 4 servings Prep Time: 15 minutes Cook Time: 8 hours in slow cooker Recipe written below to make 1 meal of 4 servings. Shopping List contains ingredients to make 2 meals of 4 servings each. Ingredients for Single Meal 1 lb. ground beef 15 oz. can black beans, drained and rinsed 15 oz. can diced tomatoes, undrained 15 oz. can corn, drained 2 Tbsp chili powder 1 tsp ground cumin 1 tsp garlic powder 1 tsp onion powder 2 to 3 cups chicken broth or equivalent to taste Crushed tortilla chips, optional garnish Shredded cheese, optional garnish Side: veggies Cooking Directions for Single Meal 1. Brown and drain the ground beef. 2. Add all the ingredients to the slow cooker except for the tortilla chips and garnishes. 3. Set slow cooker on low and cook for 8 hours, or high for 6 hours. If cooking from partially frozen, you'll need to cook on low for 8 to 10 hours, depending on how frozen the pack is when you start cooking it. 4. Serve Slow Cooker Taco Soup, with crushed tortilla chips and cheese added just before serving, with a side of veggies. Assembly Prep Directions for 2 Meals/Bags To each gallon-size plastic freezer baggie, add the following ingredients: 1 lb. ground beef, browned and cooled 15 oz. can black beans, drained and rinsed 15 oz. can diced tomatoes, undrained 15 oz. can corn, drained 2 Tbsp chili powder 1 tsp ground cumin 1 tsp garlic powder 1 tsp onion powder 2 to 3 cups chicken broth or equivalent Remove as much air as possible and seal. Add label to baggie and freeze. Freeze & Thaw Instructions: Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours. Special Notes: This soup can also be cooked on the stovetop in heavy saucepan or Dutch oven. Dairy-Free Modifications: Omit cheese as garnish. 2. Classic Spaghetti Sauce Yield: 4 servings Prep Time: 10 minutes Cook Time: 20 minutes Recipe written below to make 1 meal of 4 servings. Shopping List contains ingredients to make 2 meals of 4 servings each. Ingredients for Single Meal 1 lb. ground beef, browned ½ small white onion, chopped 26 oz. jar spaghetti sauce 2 whole carrots, peeled and grated 1 small zucchini, grated to taste Side: 1 lb. pasta noodles Side: veggies Cooking Directions for Single Meal 1. Cook pasta as directed. 2. In a large skillet, brown the ground beef with the chopped onion. Drain and return to the skillet. Stir in the spaghetti sauce, grated carrots and grated zucchini and let simmer on low heat while pasta finishes cooking. Season with salt and pepper to taste. 3. Serve Classic Spaghetti Sauce with pasta and veggies. 4. Beef and Black Bean Oven Nachos Yield: 4 servings Prep Time: 15 minutes Cook Time: 15 minutes Recipe written below to make 1 meal of 4 servings. Shopping List contains ingredients to make 2 meals of 4 servings each. Ingredients for Single Meal 1 lb. ground beef 1/2 small white onion, finely chopped 1 Tbsp taco seasoning (homemade taco seasoning recipe here) 15 oz. can black beans, rinsed and drained to taste Tortilla chips about 1 1/2 cups shredded Mexican blend cheese Sour cream, optional garnish Guacamole, optional garnish Side: fresh fruit Cooking Directions for Single Meal 1. Preheat oven to 400 F. 2. Brown the ground beef with the chopped onions and taco seasoning. Drain and return to the skillet. Mix in the black beans and toss for a minute or two over low heat, then remove from heat. Season mixture with salt and pepper to taste. 3. Add the tortilla chips to the base of a 7 11 or 9 9-inch baking dish. Add the beef-bean mixture over the top and then add the shredded cheese on top. 4. Bake in the preheated oven for 10-15 minutes, or until cheese has melted through. Top with dollops of sour cream, guacamole or other favorite nacho toppings. 5. Serve Beef and Black Bean Oven Nachos with fresh fruit. Assembly Prep Directions for 2 Meals/Bags To each gallon-size plastic freezer baggie, add the following ingredients: 1 lb. ground beef, browned and cooled 1/2 small white onion, finely chopped 1 Tbsp taco seasoning (homemade taco seasoning recipe here) 15 oz. can black beans, rinsed and drained to taste Remove as much air as possible and seal. Add label to baggie and freeze. Freeze & Thaw Instructions: Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the skillet to reheat and then using to assemble nachos as directed. Special Notes: The beef and black beans are prepared and frozen ahead of time so you can make nachos for a quick, easy dinner. Dairy-Free Modifications: Omit the cheese and sour cream garnish. 5. Hawaiian Meatloaf Yield: 8 servings, 2 loaves Prep Time: 15 minutes Cook Time: 1 hour 15 minutes Recipe written below makes 2 loaves of meatloaf, which will be enough for 2 meals of 4 servings. Ingredients for TWO Meals 2 eggs 20 oz. can crushed pineapple, drained well (reserve the juice) 1 cup bread crumbs 1 1/2 tsp salt 1/2 tsp pepper Sauce 1/2 cup pineapple juice from can 2/3 cup ketchup 2/3 cup brown sugar Side: veggies x 2 Side: baked beans x 2 Cooking Directions for TWO Meals 1. Preheat oven to 375 F. 2. In a large mixing bowl, combine the ground beef, eggs, drained crushed pineapple, bread crumbs, salt and pepper. 3. Add half of the mixture to 2-9 5-inch loaf pans, or 2-9x5-inch disposable loaf trays. TIP: In order to keep my regular loaf pans out of the freezer, I line them with foil and press the meatloaf into the foil. Once frozen, you can remove the foil-wrapped meatloaf from the loaf pan and place into a plastic freezer baggie. Put back in same pan to thaw and bake. 4. Bake in the preheated oven for 1 hour. 5. Meanwhile, whisk together 1/2 cup of the reserved pineapple juice with the ketchup and brown sugar. After 1 hour of cooking, pour the sauce over the top of the meatloaf and bake for another 15 minutes, or until completely cooked through. 6. Serve Hawaiian Meatloaf with side of veggies. Assembly Prep Directions for 2 Meals/ Trays In a large mixing bowl, combine the ground beef, eggs, drained crushed pineapple, bread crumbs, salt and pepper. Add half of the mixture to 2 9 5-inch loaf pans, or 2 9x5-inch disposable loaf trays. Cover with foil and freeze. Prepare sauce that goes on top of the meatloaf at the end of cooking. Whisk together 1/2 cup pineapple juice, 2/3 cup ketchup and 2/3 cup brown sugar. Divide into 2 small containers or baggies and freezer separately near the meatloaf. IMPORTANT: Do not add the sauce to the meatloaf before you freeze it. Prepare it and put it in a small plastic container or baggie and freeze in another bag near/with the meatloaves. Thaw it and brush it on top of the meatloaf towards the end of baking, as directed in the recipe. Freeze & Thaw Instructions: Put loaf pans in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight before baking as directed. If cooking from partially thawed, you will need to cover for half of the baking time and cook an additional 30-45 minutes or until completely cooked. Special Notes: None. You can learn more about it here. "Quick Thawing" Your Meals If you forget to pull your bags or trays out of the freezer like I often do, then don't fret! There is a quick and painless way to thaw sauces, soups, and other cooked frozen goodies. Simply, place the frozen item into a large bowl with warm (not crazy hot) water and let it sit for 20 to 30 minutes, maybe longer depending on how thick the largest part of the bag is. I place roundish shaped baggies in a bowl of warm water and I place sauces or meals that I have "flat frozen" into a shallow baking dish with warm water. {Photos here.} Let thaw until you are ready to transfer to slow cooker, baking dish or skillet. IMPORTANT: If you are thawing raw meats using this method, keep the bowl with the warm water in the fridge. Obviously the water will cool, but it will thaw faster than if you just let it thaw on the plate. But it's crucial that you keep the food at a safe temperature to keep it from spoiling. Assembly Prep Instructions (Set Out on the Counter) Print out the Assembly Instructions page and/or Loading Table and set out on the counter. Label your bags/foil with printable labels or sharpie & set them out on the counter. Pull out all the ingredients into a central location or into stations. Pre-Cook & Chop Instructions Brown 8 lbs. of ground beef and let cool. (You will need to check on it and stir it every few minutes until all of it is browned. Add about a cup of water to keep it from burning on the bottom of the pan. It will speed up the process to brown in 2 large saucepans.) Chop the 2 small white onions. Peel and shred the 4 whole carrots for the spaghetti sauce. Shred the 2 small zucchini for the spaghetti sauce. Open all the cans. Drain (*and rinse) the black beans. Drain the crushed pineapple and reserve juices. (*I like to rinse them 1 can at a time, just before adding to the bags.) Line the loaf pans with the meatloaf and smooth out, if needed. Assembly by Recipe (Set Out on the Counter) If you prefer to load your freezer baggies and loaf pans one recipe at a time, you can follow the below instructions. Hawaiian Meatloaf RAW GROUND BEEF: Use 2 lbs. of ground beef to make 2 meatloaves. While the other ground beef finishes browning and cooling off, make the meatloaves. In a large mixing bowl, combine the following: 2 eggs 20 oz. can crushed pineapple, drained well (reserve the juice) 1 cup bread crumbs 1 1/2 tsp salt 1/2 tsp pepper In another small bowl, whisk together to make the sauce: 1/2 cup pineapple juice from can 2/3 cup ketchup 2/3 cup brown sugar Divide the meat mixture evenly into the 2 loaf pans. Do not add the sauce to the meatloaf before freezing. Add the sauce to a small plastic container or baggie and freeze it near the meatloaf. Make a note on the label to thaw the sauce and pour on top of the meatloaf at the end of baking, as directed on the recipe. Note: If using foil and a regular loaf pan, wrap the foil all around the meatloaf. Freeze for an hour, then transfer the foil-wrapped loaf into a plastic freezer baggie. (This is so your loaf pan isn t stuck in your freezer!) COOKED GROUND BEEF: Divide the browned ground beef evenly among the 8 freezer baggies. Add about 1 lb. ground beef to each bag. Slow Cooker Taco Soup (2 meals) Classic Spaghetti Sauce (2 meals) Slow Cooker Beef and Vegetable Soup (2 meals) Beef and Black Bean Mixture for Nachos (2 meals) Slow Cooker Taco Soup To each of the Slow Cooker Taco Soup bags, add the following in with the ground beef: 15 oz. can black beans, drained and rinsed 15 oz. can diced tomatoes, undrained 15 oz. can corn, drained 2 Tbsp chili powder 1 tsp ground cumin 1 tsp garlic powder 1 tsp onion powder 2 to 3 cups chicken broth or equivalent Remove as much air as you can and seal. Freeze up to 6 months in your fridge freezer or 12 months in a deep freezer. Beef and Black Bean Nachos To each of the Beef and Black Bean Nachos bags, add the following in with the ground beef: 1/2 small white onion, finely chopped 1 Tbsp taco seasoning (homemade taco seasoning recipe here) 15 oz. can black beans, rinsed and drained Remove as much air as you can and seal.
