Thanksgiving Day in Canada has been a holiday on the second Monday of October since 1957. It is a chance for people to give thanks for a good harvest and other fortunes in the past year. The native peoples of the Americas held ceremonies and festivals to celebrate the completion and bounty of the harvest long before European explorers and settlers arrived in what is now Canada. Early European thanksgivings were held to give thanks for some special fortune. An early example is the ceremony the explorer Martin Frobisher held in 1578 after he had survived the long journey in his quest to find a northern passage from Europe to Asia. Thanksgiving Day in Canada is linked to the European tradition of harvest festivals. A common image seen at this time of year is a cornucopia, or horn, filled with seasonal fruit and vegetables. The cornucopia, which means "Horn of Plenty" in Latin, was a symbol of bounty and plenty in ancient Greece. Turkeys, pumpkins, ears of corn and large displays of food are also used to symbolize Thanksgiving Day. Perfect Pumpkin Pie SIMPLE OVEN-BAKED STUFFING Ingredients ½ cup (125 ml) butter 2 cups (500 ml) diced yellow onions 1 ½ cups (375 ml) diced carrots 1 ½ cups (375 ml) diced celery 2 Tbsp (30 ml) poultry seasoning 2 tsp (10 ml) dried rosemary (or 2 tbsp/30 ml chopped fresh rosemary) 1 tsp (5 ml) salt ¼ tsp (1 ml) black pepper 18 cups (4.5 L) white or brown sandwich bread, cubed (no need to dry it out first) 1 ½ cups (375 ml) chicken or turkey stock Directions 1. Preheat the oven to 350 F (180 C). 2. Melt butter in large soup pot or stock pot over mediumhigh heat. Add onions, carrots and celery and cook for 8 to 10 minutes, or until beginning to soften. 3. Stir in poultry seasoning, rosemary, salt and pepper. Continue cooking 2 minutes more. Remove from heat. 4. In two batches, add bread cubes to pot, stirring to evenly distribute seasonings and veggies. Pour in stock and stir. Transfer to large baking dish, such as lasagna pan. Cover with foil. 5. Bake for 30 minutes. Remove foil and bake another 10 minutes. Serve immediately or, if making ahead, cool, cover and refrigerate. Reheat before serving. Recipe By: Eagle brand Ingredients 1 (15 ounce) can pumpkin 1 (14 ounce) can EAGLE BRAND(R) Sweetened Condensed Milk 2 large eggs 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/2 teaspoon ground nutmeg 1/2 teaspoon salt 1 (9 inch) unbaked pie crust Directions 1. Preheat oven to 425 degrees F. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes. 2. Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. On October 2nd the Residential Day Programs headed to Llyod's Roller Rink for some roller skating and celebrating! There was great music, and fun and games for all who came out to participate. If you are interested in trying out some roller skating at Llyod's you better book your next trip soon, as Llyod's is closing their doors in February 2018!
