APRIL MAY JUNE JULY Tied N Knots First Settlers Indian Old Fields Kiddville Coach Potato Challenge Thursday, March 22 6:00 pm Extension Office The Couch Potato Challenge is a 12 week walking challenge that is based on the National Heart, Lung, and Blood Institute s walking plan. This program allows you to get started walking at a pace that is comfortable for you! During March, April, and May, the Club decorating the Display Case is also asked to pack backpacks. For more information, contact the Extension Office. It s time to cast your vote for upcoming leader lessons. Enclosed in this newsletter is the 2018-2019 ballot. March 2018 Page 3 Tuesday, April 24 6:00 pm Cost: $12.00 $2.00 goes toward the Clark County Homemaker Scholarship Chicken Salad Plate Fruit Cup, Sweet Bread (See attached list for categories) Will be held prior to the County Meeting on Monday, April 23. All entries must be submitted between 10:00 am and 12:00 noon. Each Club is responsible for a Door Prize and decorating their own table Theme: Downtown * 3/4 cup pepitas (raw pumpkin seed kernels) * Cooking Spray * 1/4 teaspoon ground cayenne pepper * Salt and ground black pepper (to taste) * 1 pound Brussels sprouts, trimmed & thinly sliced * 1/2 pound curly kale, stems removed and thinly sliced * 1/2 pound Napa cabbage, thinly sliced * 1 1/2 cups dried cranberries * 1 (15 oz) can Mandarin oranges, drained * 4 green onions, thinly sliced * 8 strawberries, trimmed & thinly sliced * 1 (16 oz) bottle creamy poppy seed dressing * 1 tablespoon orange zest * juice from 1 orange Place pepitas in a bowl and coat lightly with cooking spray. Sprinkle with cayenne pepper, salt and pepper. Toss to coat. Place in a medium skillet over medium-high heat. Cook over medium heat, stirring often until lightly toasted, about 5 minutes. Remove from heat and allow to cool. Combine Brussels sprouts, kale, cabbage, dried cranberries, Mandarin oranges, green onions, strawberries and toasted pepitas in a large bowl. Dressing: Whisk together the bottled poppy seed dressing, orange zest, and orange juice in a small bowl. Pour over salad about 1/2 cup at a time and toss until salad and dressing are combined. Note: Sunflower seed kernels can be substituted for pepitas. Green or red cabbage can be substituted for Napa cabbage. Yield: 10, 1 1/2 cup servings. Nutritional Analysis: 300 calories, 12g fat, 2g saturated fat, 0mg cholesterol, 430mg sodium, 43g carbohydrate, 5g fiber, 33g sugar, 6g protein.
